Mexican Rice image

This recipe is a zippy, flavorful south-of-the-border side dish. My family always requests this rice when I'm making a Mexican dinner.-Pattie Hess, Grabill, Indiana

Number Of Ingredients 4

1-1/2 cups water
1 cup salsa
2 chicken bouillon cubes
2 cups uncooked instant rice

Steps:

  • In a saucepan over medium heat, bring water, salsa and bouillon to a boil. Stir in rice; remove from the heat. Cover and salt stand 6-8 minutes or until liquid is absorbed. Fluff with a fork.

1 cup uncooked rice
1 tablespoon vegetable oil
1/2 cup onion, chopped
2 cloves garlic, smashed
1 3/4 cups beef broth
1 teaspoon ground cumin
1 tablespoon tomato paste
1/2 cup frozen green pea, thawed
1/2 cup cooked carrot, diced

Steps:

  • Cook rice in hot oil in 2 to 3 litre saucepan over medium heat, stirring constantly, about 2 minutes.
  • Stir in onion and garlic; cook, stirring about 1 minute.
  • Add broth and cumin.
  • Heat to boiling; stir once or twice.
  • Lower heat to simmer; Cover with tight fitting lid.
  • Cook 15 minutes or until rice is tender and liquid is absorbed.
  • Combine tomato paste and 1 tablespoon water.
  • Stir tomato mixture, peas and carrots into rice; fluff with a fork.

4 (about 1 lb/500 g) boneless, skinless chicken breasts, cut into strips
1 can (284 ml) CAMPBELL'S® Condensed Low Fat Cream of Chicken Soup
1 ½ cup (375 mL) water
2 tsp (10 mL) paprika (optional)
2 cup (500 mL) fresh (cut up, cooked) or frozen vegetable mixture, thawed (e.g. peas, corn, carrots)
1 ½ cup (375 mL) dry instant rice

Steps:

  • Brown chicken in heated oil at medium-high heat in large skillet, stirring often.
  • Combine soup, water, and paprika in skillet. Stir in vegetables. Heat to a boil, stirring often
  • Stir in rice and chicken. Cover and simmer over medium-low heat until chicken is cooked through and rice is tender - about 5 minutes.

I wanted a quick Spanish Rice side dish one night, to go along side a spicy chicken I was making, so I came up with this simple yummy dish.

Number Of Ingredients 6

2 cups chicken stock
1 cup long grain rice, uncooked
1 (1 1/4 ounce) packet taco seasoning
1/3 cup salsa
1/3 cup corn kernel
1/3 cup black beans

Steps:

  • Boil the chicken stock and taco seasoning in a medium pot.
  • Once mixture comes to a boil add the rice, salsa, corn and beans (or peas if you prefer; stir a bit.
  • Turn heat to low and cover pot.
  • Allow to cook on low, undisturbed, for 20 minutes.
  • After 20 minutes are up, toss the rice a bit, and serve!
