Steps:
- Heat a large Dutch oven with a tight-fitting lid over medium-high heat. Pour in enough oil to fill the pan about 1/4-inch deep. Season the beef generously with salt and pepper, and add to the pan. Saute half the meat, uncovered, stirring only occasionally, until well-browned, about 8 minutes. Using a slotted spoon, transfer the beef to a plate. Repeat with the remaining beef. Discard the oil and wipe out the pan.
- Preheat the oven to 325 degrees F. Return the pot to the stove and melt the butter over medium high heat. Add the onion and cook, stirring, until lightly browned, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until lightly browned, about 1 minute more. Add the reserved beef and scatter the flour over the vegetable and beef mixture (enough to lightly coat) and cook stirring until lightly toasted. Add the water or broth, and bring to a simmer. Tie the parsley, thyme, and bay leaves together with a piece of kitchen twine and add the bundle to the pot. Season with 2 teaspoons salt, or to taste. Cover and transfer to the oven. Cook the meat until just tender, about 1 1/2 hours. (This can also be done on the stove at a low simmer.)
- Remove pot from the oven. Skim the fat from the cooking liquid with a spoon or ladle. Add the potatoes, carrots, celery, and the tomatoes, and bring to a simmer on top of the stove. Cook, uncovered, stirring occasionally, until the liquid thickens and the vegetables are tender, about 1 hour. Remove and discard the herb bundle. Stir in the vinegar and season with salt and pepper, to taste. Divide among bowls and serve immediately.

4 HOUR BEEF STEW
Adopted recipe. The original recipe calls for baking in the oven, but you could also make this in a slow cooker on low if you don't want to tie up your oven for that long. This is a very easy stew to make. There isn't much prep to it, just some rough chopping of the veggies.Make sure you don't lift the foil in the oven b/c the steam helps cook the veggies just right! This would be great with a nice crusty bread on the side.

Steps:
- Season beef with garlic powder, salt, pepper, and italian seasoning. Heat 2 tablespoons oil in a large skillet over medium-high heat. Sear beef in skillet until all edges are brown, about 2 minutes per edge. Then, add red wine to the pan with the beef and scrape until all the brown bits come off. Turn heat to low and simmer. While beef is simmering, heat 2 tablespoons oil in a large pot over medium-high heat. Add mushrooms and cook without turning till browned on one side, about 3 minutes. Add diced onion and cook, stirring, until onion just begins to brown (about 5 minutes). Once onion begins to brown, add garlic. Cook for about 2 minutes, then add celery and bell pepper. Cook for 3-5 more minutes, until celery begins to brown. Turn heat to low. Add beef and liquid to pot with vegetables. Stir in basil, 2 sprigs of thyme, carrots, and add 1 cup of beef stock (or until beef is covered in liquid). Cook on low heat until beef is tender and cooked completely through and the vegetables are tender. Remove the thyme sprigs. Scoop into bowls, garnish with remaining thyme sprigs, and serve hot. NOTE: To punch the flavor up an extra notch, you can start by cooking bacon in the skillet first, removing it, and browning the stew meat in the bacon fat. Then you proceed as planned and add the bacon at the very end, just before serving. This definitely makes it tastier, but the extra fat is probably outside Tim's "lean meat" recommendation ????

ONE HOUR BEEF STEW
Ever come home from work and want the comforting taste of a good old-fashioned stew? You don't have to wait for the weekend. A good quality meat is important so the stew cooks quickly. Of course, it's better when simmered for three hours but even one hour's cooking will produce a satisfying stew when prepared this way.

Steps:
- Fry the onion and celery in 1 tbsp oil over a low heat until they start to soften - about 5 mins. Add the carrots, bay and thyme, fry for 2 mins, stir in the purée and Worcestershire sauce, add 600ml boiling water, stir and tip everything into a slow cooker. Crumble over the stock cubes or add the stock pots and stir, then season with pepper (don't add salt as the stock may be salty).
- Clean out the frying pan and fry the beef in the remaining oil in batches until it is well browned, then tip each batch into the slow cooker. Cook on low for 8-10 hrs, or on high for 4 hrs.
- If you want to thicken the gravy, mix the cornflour with a splash of cold water to make a paste, then stir in 2 tbsp of the liquid from the slow cooker. Tip back into the slow cooker, stir and cook for a further 30 mins on high. Stir in the parsley and season again to taste. Serve with mash, if you like. Leave to cool before freezing.

CLASSIC BEEF STEW IN A CROCK POT
This is the best beef stew I've ever made. It tastes great with a crunchy loaf of bread. I got this recipe from Real Simple (March 2004 edition). You'll need a 4 to 6 quart slow cooker. Browning the beef adds more flavor.
