MICROWAVE ACORN SQUASH
Just microwave! You don't have to use the oven. You can just do one acorn squash instead of two, if you choose. Pricking all over, then putting in the microwave for a few minutes to soften a little, makes it easier to cut.

APPLE-STUFFED ACORN SQUASH MICROWAVE-STYLE!
Only 7 ingredients and made in the microwave, so you can throw this together in a jiffy. Great comfort food for the fall and winter months. Tart, sweet and good for you too. Perfect for those on a low sodium diet. NOTE: I have made the celery optional and I agree it is better without. I also use WAY more butter and cinnamon than what the recipe calls for :)

COCONUT ACORN SQUASH
Save yourself some time in the kitchen and toss the squash in the microwave for a truly quick dish. Sometimes squash can be a bit tasteless. I conquer this by adding a bit of mango chutney and coconut. It really makes the flavor pop. -Deirdre Cox, Kansas City, Missouri
