Almond Joy Brownies are gooey fudge brownies filled with plenty of chocolate, almonds, and coconut - traditional and gluten-free recipes included.

1/4 cup butter
1 cup semi-sweet chocolate chips (plus 3/4 cup reserved)
1/2 cup light brown sugar
1 teaspoon vanilla
1 teaspoon almond extract
2 eggs
1/2 cup all-purpose flour *
1/4 teaspoon kosher salt
1 cup sweetened coconut flakes (plus 1/4 cup reserved)
1/2 cup sliced almonds (plus 2 tablespoons reserved)
1/3 cup brown rice flour
3 tablespoons tapioca starch

Steps:

  • Preheat the oven to 325°F. Line an 8 or 9-inch square pan with foil and grease it very well with butter or baking spray.
  • Melt the butter in a large saucepan, over medium heat. When the butter has melted, add 1 cup chocolate chips and stir until they have melted. Remove from the heat, add the sugar and stir to combine.
  • Add the vanilla extract, the almond extract, and the eggs. Whisk or stir until smooth and shiny. Add the flour and salt and stir to combine. Stir in 1 cup coconut, 1/2 cup almonds, and 1/2 cup chocolate chips.
  • Spread the mixture into the bottom of the prepared pan and then sprinkle the top with the remaining coconut, almonds, and chocolate chips.
  • Bake for 28-30 minutes, just until an inserted toothpick shows moist crumbs. Let the bars cool completely before slicing. Enjoy!

If you like Almond Joy candy bars, brownies and a rich sinful dessert, try this one! Taking a brownie mix and adding almond extract to the batter and combining marshmellow cream, condensed milk and coconut making the creamy part and topped with toasted almond slivers. Oh YUM!!!

1 (18 1/3 ounce) package fudge brownie mix
2 eggs
2/3 cup vegetable oil
1/4 cup water
1 teaspoon almond extract
1 (14 ounce) bag sweetened flaked coconut
14 ounces sweetened condensed milk (only using 1/2 can)
7 ounces marshmallow cream
1/2 cup milk chocolate chips
1/2 cup chopped almonds, toasted if desired

Steps:

  • Preheat oven to 350. Spray 9X13X2 pan with nonstick cooking spray.
  • Prepare Brownies as indicated on the box but add 1 tsp almond extract the same time you add the eggs. Cool. When the brownies are cool, poke holes all over the brownie's surface with a fork. (Keep the oven on).
  • Put the condensed milk into a small medium sized saucepan and bring to a low boil over medium heat. Stir often so it doesn't turn the milk into caramel. Add the marshmallow cream and continue mixing until combined. Add the coconut and mix well. Spoon the coconut mixture over the cooled brownies and put it back in the oven for 8 minutes. Cool. (Turn off oven).
  • In small bowl, melt chocolate chips in the microwave for a minute at a time and mix well. Continue until completely melted. Drizzle over bars. While the chocolate is still soft and unset, scatter almonds over the bars too. Cover lightly and store in the refrigerator until ready to serve.
  • Cut brownies 3 lines lengthwise with a sharp knife, then 5 lines across. You'll have 18 beautiful almond-joy-ee brownies!

This is a Pillsbury Bake-Off recipe from the 50s. The Almond Joys are melted and mixed into the recipe. I expected a more chocolately brownie when I discovered this recipe and was surprised to end up with a "blonde" coconut brownie with only a hint of chocolate taste. Very good.

4 ounces almond joy candy bars (4 whole regular sized candy bars or 8 miniature candy bars)
1/2 cup butter (I prefer butter, but original recipe called for shortening) or 1/2 cup shortening (I prefer butter, but original recipe called for shortening)
1 cup sugar
1 teaspoon vanilla
2 eggs
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup chopped almonds

Steps:

  • Heat oven to 350°F.
  • Grease 9-inch square pan.
  • In medium saucepan over low heat, melt candy bars and shortening, stirring occasionally until chocolate and shortening are melted.
  • Add sugar and vanilla; blend well.
  • Add eggs 1 at a time, beating well after each addition.
  • Stir in flour, salt and chopped almonds; mix well.
  • Spread in greased pan.
  • Bake for 25 to 30 minutes or until top springs back when touched lightly in center.
  • Cool completely; cut into bars.

1 teaspoon vanilla extract
2 1/2 cup all-purpose flour
pinch of salt
2 1/2 cups sweetened coconut
1 (14 ounce) can sweetened condensed milk
1/3 cup milk chocolate chips (melted)
1/3 cup slivered almonds

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9 x 13 inch baking pan.
  • Melt margarine then stir in cocoa.
  • Mix sugar and eggs into the mixture.
  • Add vanilla, flour, and salt.
  • Bake 25 to 30 minutes, or until cooked through.
  • Let the brownies cool for about 40 minutes.
  • In a separate bowl, combine the coconut and sweetened condensed milk. Stir until well combined.
  • Spread the mixture over the cooled brownies.
  • Drizzle the melted chocolate over the brownies and top with slivered almonds.
  • Let the melted chocolate set, slice the brownies, and serve.
