Home made spicy Andouille sausages. Adjust the seasonings to suit your preferences. Pack any unused sausage casings in a jar with salt.

1 ½ yards of large sausage casing, about 2 to 3 inches wide
4 pounds lean pork meat
2 pounds pork fat
¼ cup minced garlic
2 tablespoons salt
1 teaspoon freshly ground black pepper
1 teaspoon cayenne pepper
¼ teaspoon dried thyme
1 tablespoon ground paprika
¼ teaspoon crushed bay leaf
¼ teaspoon dried sage
5 teaspoons hickory-flavored liquid smoke

Steps:

  • Soak the casing in cold water for about an hour to soften it and loosen the salt in which it is packed. Place the wide end of the sausage stuffer up against the sink faucet and run cold water through the inside of the casing to remove excess salt.
  • Cut the meat and fat into 1/2-inch wide chunks. Pass them once through the coarse blade of a meat grinder. In a large bowl, mix together the ground pork and fat with the garlic, salt, pepper, cayenne, thyme, paprika, bay leaf, sage, and hickory smoke. A wooden spoon works well.
  • Cut the casing into 26 inch lengths and tie a small knot in one end of each. Fit the open end over the tip of the sausage stuffer and slide it on until the tip of the stuffer touches the knot. The casing will look like accordion folds. This keeps excess air from getting into the casings. Fit the stuffer onto the meat grinder or according the directions that come with the stuffer, or hold the wide end of the stuffer against or over the opening by hand.
  • Fill the hopper with the sausage mixture. Turn the machine on if it is electric and feed the stuffing gradually into the hopper; for a manual machine, push the stuffing through with a wooden pestle. The sausage casing will fill and inflate gradually. Stop filling about 1 1/4 inches from the funnel end and slip the casing off the funnel, smoothing out any bumps carefully with your fingers and being careful not to push the stuffing out of the casing. Tie off the open end of the sausage tightly with a piece of string or make a knot in the casing itself.
  • To cook, slice the sausage into half-inch rounds and grill in a hot skillet with no water for about 12 minutes on each side, or until brown and crisp at the edges.

1 pound fully cooked andouille sausage links or smoked kielbasa, cut into 1/4-inch slices
1 package (28 ounces) frozen O'Brien potatoes
1 jar (16 ounces) double-cheddar cheese sauce
3 tablespoons Louisiana-style hot sauce
2 cups shredded sharp cheddar cheese
Thinly sliced green onions, optional

Steps:

  • Preheat oven to 425°. In a large skillet, heat oil over medium heat. Add sausage; cook and stir until sausage is browned, 6-8 minutes; remove with a slotted spoon. In same pan, add potatoes. Cover and cook over medium heat until potatoes are tender, 6-8 minutes, stirring occasionally. In a greased 11x7-in. baking dish, layer sausage and potatoes., In a small bowl, combine cheese sauce and hot sauce; pour over potatoes. Sprinkle with cheese. Bake, uncovered, until bubbly and cheese is golden brown, 30-35 minutes. If desired, sprinkle with green onions. Let stand 10 minutes before serving., Make-Ahead: Refrigerate unbaked hash, covered, several hours or overnight. To use, preheat oven to 425°. Remove hash from refrigerator while oven heats. Bake as directed, increasing time as necessary until golden brown. Let stand 5-10 minutes before serving.

3 tablespoons extra virgin olive oil
1 pound red potatoes (diced into 1 inch cubes)
1/2 sweet onion (chopped)
1/2 teaspoon fine sea salt
1/4 teaspoon black pepper
2 links andouille sausage (sliced into 1/4 inch disks)
4 eggs
1/2 cup sharp cheddar cheese (grated)
1/4 cup flat leaf parsley (coarsely chopped)

Steps:

  • Preheat oven to 400 degrees. Heat olive oil in 10 inch cast iron skillet or other oven proof pan over medium-high.
  • Add potatoes and cook for 3-4 minutes, stirring to make sure they don't stick to the bottom. If they absorb all of the oil and/or stick, add just a little bit more olive oil.
  • Add onion, salt and pepper and continue to stir. Cook for an additional 5 minutes or until onions are soft. Potatoes will start to soften, but won't be fully cooked.
  • Add andouille sausage and cook for another 2 minutes. Using the back of your spoon, form 4 wells. Crack eggs into each well. Transfer pan from the stove top to the oven.
  • Cook for 5 minutes. Remove, top with sharp cheddar cheese and return to the oven. Change oven setting to broil. Watch carefully and remove when cheese is melted and bubbly.
  • Remove and top with fresh parsley. Serve Potato, Andouille Sausage and Egg Skillet piping hot.

1/3 cup pure maple syrup

Steps:

  • Whisk paprika, garlic, salt, black pepper, cayenne, thyme, and red pepper flakes in a large bowl. Add pork and maple syrup. Using your hands, combine well.
  • Form 16 (2"-wide) patties about 1/2" thick with damp hands and arrange on a large parchment-lined rimmed baking sheet.
  • Heat 1 Tbsp. oil in a large cast-iron or nonstick skillet over medium. Cook patties in batches, adding remaining 1 Tbsp. oil to skillet between batches, until golden brown and cooked through, about 2 minutes per side. Drain on paper towels.

A yummy sounding breakfast from the Johnsonville sausage company. While this sounds like a great breakfast, it would make a perfect dinner, too, accompanied by a nice green salad.

8 ounces andouille sausages, sliced into 1/4 inch rounds
6 eggs, beaten
1 teaspoon cajun seasoning
2 tablespoons olive oil
1 red rose potato, 1/4 inch dice
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1/2 cup monterey jack pepper cheese, shredded
Crystal hot sauce (to garnish, or other Louisiana style hot sauce)

Steps:

  • In a medium size bowl whisk together eggs and Cajun spice blend and set aside.
  • In a large non stick skillet over medium-low heat, add olive oil. Allow pan to warm up then add potato and cook stirring frequently for 5 minutes.
  • Adjust the heat to medium; add onion and green pepper and sauté for another 5 minutes, allowing potatoes and onions to brown slightly. Add sliced sausage and stir fry another 2 to 3 minutes. (If the skillet seems dry, add a tablespoon of olive oil before adding eggs).
  • Pour the eggs over the sausage mixture, allow them to sit and cook for a minute. Gently fold over the edges, (bringing the edges to the center) and carefully blend and turn the egg mixture allowing the uncooked eggs to reach the bottom the pan and the ingredients to incorporate into the eggs. After each fold, pause for a few seconds allowing the eggs to cook.
  • After a couple of minutes, and when the eggs look moist and almost done sprinkle the shredded cheese over the eggs and sausage. Fold the egg and sausage mixture over a couple of more times allowing the cheese to melt (less than 1 minute).
  • Divide the scramble between 2 plates top each with your favorite Louisiana-style hot sauce or salsa.

BREAKFAST GUMBO

They take all these amazing things they make for breakfast and put them all together - so I decided to make it myself! Cheesy grits topped with andouille, sausage, scrambled eggs and more! This is perfect for your next weekend breakfast or brunch!

3 1/2 cups water
2 tbsp butter
1 1/2 tsp salt
1/4 tsp pepper
1 cup plus 2 Tbsp yellow grits
1/2 cup shredded cheddar cheese
1/3 cup blue cheese crumbles
1/4 cup chopped cooked bacon (3 slices)
1/4 cup chopped green onion (2 onions)
1/4 cup flour
1/4 cup vegetable oil
6 eggs, beaten
1/4 cup cream cheese, softened
2-3 tbsp butter
4 slices Applewood smoked thick cut bacon, diced into large bite-size pieces
4 links Andouille sausage, sliced
4 sausage patties, diced (I used precooked frozen)
2 green onions, sliced
hot sauce

Steps:

  • grease 9x9x3pan
  • in saucepan combine the water, butter, salt and pepper bring to a boil
  • gradually stir in the grits and continue to stir until all the water is absorbed and the grits become thick but are still smooth, about 5 min
  • add the cheeses, bacon and green onion
  • stir until thoroughly mixed
  • while hot pour the grits into the prepared pan
  • refrigerate to cool and allow the grits to set up (at least a few hours)
  • heat fry pan to medium and add bacon - cook for 3-5 minutes just until it starts to get done - do not let it get crispy
  • remove bacon from pan and set on paper towel to absorb excess oil
  • pour bacon fat except for 1 tbsp out of pan
  • add andouille and sausage patties to pan and heat through for 3-4 minutes
  • remove sausage from pan and set aside in bowl
  • in a fresh pan, heat butter to melting - keep pan and medium low
  • in a bowl, beat together eggs and cream cheese
  • add eggs to hot pan and slowly fold and stir until eggs are cooked through - do not overcook - should remain a little "juicy"
  • remove eggs from pan and place in bowl and set aside
  • just before serving, cut the grits into four squares
  • coat both sides of each cake in flour
  • preheat the veg oil in a non-stick skillet over medium high heat
  • pan fry the grits cake until golden brown and hot - about 3 min per side
  • place one grits cake in a shallow bowl and cover with eggs, bacon, sausage, diced green onions and sprinkle with hot sauce

4 tablespoons (1/2 stick) butter
8 ounces andouille sausage or hot links, cut into small cubes
3 3/4 cups (or more) low-salt chicken broth
1 cup instant grits

Steps:

  • Melt 1 tablespoon butter in heavy large saucepan over medium-high heat. Add sausage and sauté until brown, about 3 minutes. Add 3 3/4 cups broth and bring to boil. Gradually whisk in grits. Reduce heat to medium and simmer until mixture is thick, stirring occasionally, about 8 minutes. Mix in more broth by 1/4 cupfuls to thin, if desired. Stir in remaining 3 tablespoons butter. Season grits to taste with salt and pepper and serve.

2 1/2 pounds boneless pork butt, 1/2-inch pieces
1/2 pound pork fat, cut into pieces
1/4 cup Essence, recipe follows
2 tablespoons paprika
1 tablespoon minced garlic
1 1/2 teaspoons freshly ground black pepper
1 teaspoon salt
3/4 teaspoon file powder
3/4 teaspoon chili powder
3/4 teaspoon crushed red pepper
1/2 teaspoon ground cumin
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Combine the pork, pork fat, Essence, paprika, garlic, black pepper, salt, file, chili powder, red pepper, and cumin in a large bowl and mix well. Pass through a food grinder fitted with a coarse die. (Alternately, transfer in 2 batches to a food processor and process until finely ground.) Transfer to a large bowl, cover tightly with plastic wrap, and refrigerate overnight.
  • To test the seasoning, heat 1 teaspoon oil in a small skillet, and cook about 2 teaspoons of the mixture. Adjust seasoning, to taste.
  • Using the sausage attachment on a mixer, stuff the meat into the casings, if being used. Twist and tie off to make 4-inch sausages. Alternately, shape into patties.
  • Preheat a home smoker to 250 degrees F. Smoke the sausage for 1 1/2 hours. Remove from the smoker and use as desired.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

Fold sides and ends over filling and roll up. If desired, serve with taco sauce.

  • Heat the lard or peanut oil in a small saute pan and cook the onions over medium heat until they are soft, translucent and slightly browned on the edges. Remove from the pan and let cool.
  • While the onions are cooking, take about 10 to 15 feet of casings (typically three lengths) and submerge them in warm water.
  • Make sure you remove as much silverskin as possible from your meat. Cut the meat and fat into 1 to 2 inch chunks and toss with the salt, Instacure, dry milk, garlic, cayenne, paprika, clove, allspice, thyme and powdered mustard. You need the Instacure No. 1 as a safety measure when you smoke the links; if you don't plan on smoking them, you need not use this. You need the dry milk to help the links hold onto their moisture: If you skip this, they will still taste good, but they will shrivel up when you chill them.   • Grind the onions, meat and fat through the coarse die. (If you are using the KitchenAid Food Grinder set the mixer on the No. 4 speed) Andouille is most typically a country-style, coarse sausage. If you want, you can even hand-mince the meat yourself. TIP: Hand-mince 1/4 of the meat and fat mixture to get a more interesting texture for your sausage.
