3 large eggs
3/4 cup sugar
1/4 cup kosher for Passover vegetable oil
3/4 cup matzo meal
2 tablespoon potato starch
6 to 8 cups peeled and sliced fruit, like apples, pears, and strawberries

1/8 cup cinnamon sugar

Steps:

  • Preheat oven to 350 degrees F. Lightly oil a 9 by 9-inch square baking pan.
  • Beat eggs with sugar until well blended. Add the oil, matzo meal, potato starch, salt and blend well.
  • Put all the fruit in the pan and sprinkle with most of the cinnamon sugar, reserving a little for the top. Spoon the batter over the fruit, covering as much of the fruit as you can. Sprinkle with remaining sugar.
  • Bake until the topping is set and just turning tan, about 45 minutes. Serve hot, warm or at room temperature.

4 1/2-5 1/2 cups potato starch (during the year use 4 C. flour)
2 eggs
1 1/2 cups sugar
1 cup oil
1 pinch salt
2 teaspoons vanilla sugar
3 teaspoons baking powder (optional)
8 -10 apples
3/4 cup sugar
1 1/2 teaspoons cinnamon
2 tablespoons lemon juice
1/2 cup water

Steps:

  • Crumble:.
  • Combine all ingridients until crumbs form. DO NOT OVERMIX. Add more potato starch if needed. Refrigerate for 1/2 hour.
  • Filling:.
  • Peel and thinly slice apples. (You can use a food processor or do it by hand.) Add remaining ingredients.
  • Place 2/3 of crumbs on the bottom of 2 round 9 inch pans. Divide filling between both pans. Sprinkle remaining crumbs on top. Bake at 350 for 1 hour or until ready.

2/3 cup sugar
2 cinnamon sticks
1 1/2 cups water
3/4 cup red wine or water
2/3 cup matzo cake meal
1/3 cup sugar
1/4 cup finely chopped almonds
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
3 tablespoon butter or margarine, softened
Sweetened whipped cream, if desired

Steps:

  • In medium saucepan, heat fruit, 2/3 cup sugar, the cinnamon sticks, water and wine to boiling over medium-high heat, stirring occasionally. Reduce heat; simmer uncovered 10 to 15 minutes, stirring occasionally, until fruit is tender. Remove cinnamon sticks; discard.
  • Heat oven to 400°F. In medium bowl, stir cake meal, 1/3 cup sugar, the almonds, cinnamon, ginger and nutmeg until well mixed. Cut in butter, using pastry blender or fork, until mixture looks like fine crumbs. Pour hot fruit mixture into ungreased 1 1/2-quart casserole. Sprinkle evenly with topping.
  • Bake 15 to 20 minutes or until topping is light golden brown. Cool slightly; top with whipped cream.

3/4 cup all-purpose flour
2/3 cup packed brown sugar
1/2 cup large flake oats
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter (, cut into cubes)
6 large apples (, I recommend Granny Smith)
3 tablespoons unsalted butter (, melted)
3 tablespoons all-purpose flour
2 tablespoons water
1/3 cup white sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350F degrees. Grease a 2-quart baking dish.
  • In a medium bowl stir together the flour, brown sugar, oats, cinnamon & salt.
  • Add in the butter and cut it in using a pastry cutter or rub the butter into the dry ingredients using your fingers. At the end it should be crumbly in texture, but no large chunks of butter should remain. Place in the fridge as you make the filling.
  • Peel and slice the apples into thin slices about 1/8 - 1/4 inch thick.
  • Whisk together the melted butter, flour, water, sugar, cinnamon & nutmeg.
  • Pour the mixture over the sliced apples and toss to coat.
  • Spoon the apples into the greased pan, then crumble the oatmeal crumble overtop.
  • Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and you can see the apples bubbling around the edges of the pan.
  • Remove from the oven and cool for at least 10 minutes before serving.
