HALVA APPLE PIE BARS
Steps:
- For the crust: Preheat oven to 350 F. Line an 8-by-8-inch square pan with enough parchment paper to have 1-inch wings on 2 sides.
- In a stand mixer fitted with a paddle, combine the butter, sugar, vanilla and salt and beat on medium until pale and fluffy. Reduce to low, add both flours and mix to combine. Press evenly into the pan and bake for 10 minutes. Let cool slightly, about 10 minutes, while you make the filling.
- For the filling: In a large bowl, toss the apples with the lemon juice. Sprinkle in the flour, sugar, cinnamon, cardamom, nutmeg and salt and toss to combine. Arrange evenly on top of the crust.
- For the crumble: In a medium bowl, combine the flour, sugar, cinnamon and salt. Add the butter and mix with your hands until crumbly. Sprinkle all over the apples. Sprinkle on the halva or marzipan and sprinkles, if using. Bake until the crumbles begin to brown, 35 to 40 minutes. Let cool in the pan completely, about 1 hour and then slice into bars. Enjoy!
APPLE PIE BARS
Steps:
- Preheat the oven to 375 degrees.
- For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

- Beat cream cheese, butter, 1/2 cup sugar and 1 tsp. vanilla in large bowl with mixer until blended. Add flour and baking soda; mix well. Spread onto bottom of 13x9-inch pan sprayed with cooking spray. Top with apples; sprinkle with cinnamon.
- Whisk egg, milk and remaining vanilla in medium bowl until blended. Add coconut, nuts and remaining sugar; mix well. Spread over apples.

- In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
- In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. - Mix flour and salt and cut in shortening. Add egg and milk mixture and mix till it forms a ball. Divide dough in half. Roll first half in 17 x 12 inch rectangle. Place in cookie sheet and bring pastry up sides.
- Cover pastry with apples and sprinkle with sugar and cinnamon (homemade chunky applesauce also works well).
- Roll out second half of dough and place on top of apples. Moisten edges with milk and pinch together.
- Beat egg white until stiff and brush on crust. Bake at 400°F for 1 hour.
- Mix glaze ingredients together and brush on crust.
- This square freezes beautifully.

- Mix filling together, set aside.
- Combine flour, icing sugar and baking powder.
- Cut butter into dry mixture.
- Add eggs, egg yolk and sour cream.

- For filling, combine sugar, cornstarch and water in a saucepan. Mix until well blended. Add apples; heat to boiling, stirring constantly. Reduce heat and simmer 5 minutes, stirring occasionally. - Grind bread to fine crumbs in a food processor. Spread in a shallow baking pan and toast in middle of oven, stirring once, until golden, about 5 minutes. Leave oven on.
