ROASTED CARROTS WITH GARLIC PARSLEY BUTTER



Roasted Carrots with Garlic Parsley Butter image

Here we toss perfectly roasted carrots with butter that's been infused with garlic and parsley. Instead of the parsley, consider adding basil, crushed red pepper flakes, dill, cumin, or other favorite flavors. The recipe below is more of a template than a strict recipe. Carrots are perfectly delicious roasted, but so are parsnips, squash, potatoes or other hardy vegetable you find in season. Feel free to switch them out for something else.

Number Of Ingredients 6

1 1/2 pounds carrots, peeled with ends trimmed (8 to 9 carrots)
1 tablespoon extra-virgin olive oil
1/4 teaspoon kosher salt
1 tablespoon butter
1 garlic clove
1/3 cup loosely packed fresh parsley leaves, chopped

Steps:

  • Heat the oven to 425 degrees F and line a baking sheet with aluminum foil. Cut carrots into 2 to 3-inch sticks. (Depending on how wide the thicker ends are, you may need to slice each stick in half, lengthwise). Toss carrots onto the baking sheet with the olive oil and salt. Make sure the carrots are coated then spread out into one layer. Roast carrots, stirring twice, until they are tender with edges that are lightly browned, 25 to 30 minutes.
  • While the carrots roast, melt butter in a small pan over low heat. Use the back of a large knife to gently crush the garlic clove. Remove the skin then add clove to the butter along with the parsley. Wait until the butter bubbles gently then cook for 1 minute. Slide the pan away from the heat and set aside for 10 to 15 minutes. Remove and discard the garlic.
  • Slide the roasted carrots into a bowl with the garlic parsley butter. Toss then season to taste with additional salt as needed.

1 cup chicken broth
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 cups half-and-half cream

Steps:

  • In a large saucepan, bring carrots and broth to a boil. Reduce heat; cover and simmer for 8-10 minutes or until carrots are crisp-tender., Meanwhile, in a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain carrots. Drizzle with cream sauce and toss to coat.

Quick Carrots With Garlic & Basil image

A quick different way with carrots. You can use other herbs if you like in place of the basil. I have used both fresh garlic and crushed from a jar with little difference.

500 g carrots (sliced diagonally)
2 teaspoons olive oil
2 large garlic cloves (sliced thinly or 1 teasp crushed garlic from a jar)
2 tablespoons fresh basil (thinly sliced or chopped)

Steps:

  • Cook carrots in boiling water for for 2 -3 mins until tender but crisp or microwave if desired.
  • Drain and reserve 1/2 cup of liquid.
  • Combine the garlic and oil in a nonstick pan and cook over a moderate heat until fragrant (you can smell the garlic).
  • Add the carrots and stirring, cook until well combined and hot, adding a little of the reserved cooking liquid if necessary.
  • Remove from the heat and stir in the basil.
  • Serve hot.

One of the most requested vegetable accompaniments that I serve in the Auberge; simple & easy to adapt to personal tastes - they are finished off in a flash before serving. If you are not fond of garlic, don't add it......the same with basil, it's just that I find the two work very well together with the sweetnes of the carrots!

Number Of Ingredients 5

1 lb fresh carrot, peeled & sliced on the diagonal
2 tablespoons creme fraiche or 2 tablespoons sour cream
1 teaspoon dried garlic granules or 2 fresh garlic cloves, peeled and crushed
2 teaspoons freshly chopped fresh basil or 1 teaspoon dried basil
salt (optional)

Steps:

  • Peel and slice the carrots on the diagnal - into about 1/2 slices.
  • Boil gently or steam for about 7-10 minutes, until just softening a bit.
  • Leave to carry on cooking in the water with the lid on until you are ready to serve - up to 15 minutes maximum.
  • Drain and add the creme fraiche, garlic & basil to the carrots in the pan.
  • Put the lid on again and gently mix around in the pan by shaking it.
  • Serve hot & make sure you get all the creamy herb juices out & pour them over the carrots!
  • You can garnish them with a bit more chopped basil OR chopped parsley if you wish.
