Baby Greens and Garlicky White Bean Salad image

This is a very garlicky salad. A nice fast dinner. A slight adaptation from a recipe in "Weight Watchers Miracle Foods" cookbook. Each serving is 3 points as written. Though I suggest a tad more sauce, which would make the points go up a smidge. Red onion is preferred because of the milder taste. If you like the taste of raw onion, then yellow is fine too. The original recipe called for serving it immediately. I like to let it sit a few minutes so the tastes will meld, but it would not keep for more then an hour or 2. If you don't have baby greens, spinach would be excellent.

2 1/4 cups baby greens
1 (15 ounce) can navy beans
1/2 cup sliced onion
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 garlic clove, minced (or more to taste)
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Chop the greens finely.
  • Mix them, the rinsed and drained beans, and the onion in a bowl.
  • In a smaller bowl or shaker combine the vinegar, the oil, and the garlic.
  • Add the salt and pepper and mix it all well.
  • Add the dressing to the greens and toss it together.
  • Let it sit about 5 minutes so the tastes will meld.

4 hard cooked eggs
2 tablespoons honey dijon mustard (or 1 Tbs honey & 2 Tbs mustard)
1/2 teaspoon white pepper
1/2 teaspoon salt
2 tablespoons red wine vinegar
6 tablespoons extra virgin olive oil
3 large butter lettuce or 10 ounces mixed greens

Steps:

  • Peel and chop eggs.
  • Combine next 5 ingredients and process until smooth with a hand held blender (or shake in a jar).
  • Place lettuce in a bowl, add dressing and eggs and toss gently.
  • Serve on a plate or salad bowl.
  • Garnish with chopped parsley.

5 to 7 cloves garlic, peeled, plus 2 cloves garlic, one sliced, one minced
Enough olive oil to cover the bottom of a wide saute pan
4 big handfuls greens (baby mustard, turnip, chard), picked and roughly shredded
Salt and freshly ground black pepper

Steps:

  • Place saute pan over medium heat and then lightly crush 5 to 6 garlic cloves. When the pan is hot, add just enough oil to cover the bottom of the pan and add the garlic. Cook, stirring frequently until golden brown (3 to 5 minutes). Remove from the oil. At this point, the greens can be quickly Sauteed for a mild garlic flavor.
  • If you're looking for something a little stronger, thinly sliver 1 clove and add it to the pan stirring constantly (burned garlic is not Good Eats, nor is anything that touches it). Once the slivers turn golden, add the greens and toss to coat with the hot oil. Season with salt and pepper as soon as the greens start to wilt and plate immediately.
  • If you're looking for even more garlic flavor, finely mince a clove of garlic and toss it into the greens during the last 30 seconds of cooking and toss the greens to distribute. Keep the pan and the greens moving constantly, if you can.
  • Serve as a side dish or toss with pasta and serve as a main course.

I made this salad for a picnic potluck, It was a really big hit. I took everything along in icebox and put it together at the picnic. Easy to increase or decrease the recipe to fit the occasion, nice for a dinner party or a summer meal. I left the tails on the shrimp for looks, this makes a very pretty salad.

1 lb cooked medium-sized shrimp (I left the tails on)
1 (2 ounce) bag baby greens
1 cup red seedless grapes, cut in half (you can use fruit of choice)
1/2 cup walnuts, toasted,chopped
3 tablespoons raspberry vinegar
3 tablespoons sugar-free raspberry fruit spread
3 teaspoons walnut oil
1/2 cup canola oil

Steps:

  • Make salad dressing ahead of time; Mix all ingredients together and blend with a hand blender or put into blender and mix until emulsifed.
  • Put into a container with lid or salad dressing bottle.
  • In Large salad bowl add baby grens, grapes and shrimp.
  • Toss with salad dressing and add walnuts.
  • Enjoy.

2 pounds fresh green beans, rinsed and trimmed
4 cloves garlic, peeled
8 sprigs fresh dill weed
4 teaspoons salt
2 ½ cups white vinegar
2 ½ cups water

Steps:

  • Cut green beans to fit inside pint canning jars.
  • Place green beans in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, for 3 minutes. Plunge beans into ice water. Drain well.
  • Pack the beans into four hot, sterilized pint jars. Place 1 clove garlic and 2 sprigs dill weed in each jar, against the glass. Add 1 teaspoon of salt to each jar.
  • In a large saucepan over high heat, bring vinegar and water to a boil. Pour over beans.
  • Fit the jars with lids and rings and process for 10 minutes in a boiling water bath.

1/2 ripe pear, cored, sliced thin
1/4 cup pecans, toasted, coarse chopped

1 tablespoon rice vinegar
2 tablespoons honey
2 teaspoons Dijon mustard
1 tablespoon walnut oil
salt
pepper

Steps:

  • Place all the dressing ingredients in a small container with a tight fitting lid and shake vigorously to blend.
  • Add salt and pepper to taste.
  • If not serving immediately, place the dressing in refrigerator. Before serving, allow the dressing to sit at room temperature for 30 minutes.
  • Layer chilled salad plates with the baby greens and top with thinly sliced pears.
  • Sprinkle with toasted pecans and cheese, drizzle with dressing as desired.
  • Enjoy!
