SWEET BACON-WRAPPED VENISON TENDERLOIN

Sweet Bacon-Wrapped Venison Tenderloin image

The #1 rated deer recipe on RecipeZaar since 2005! It's deer season again, and you know what that means - a lot of 'Zaar chefs trying out THE venison recipe again or for the first time. Thanks for all the reviews. Hands-down, this is the BEST deer meat recipe in America. Even those who don't like wild game meat will fight for a piece of this. **I will warn you, that this creates almost a "candy tenderloin." You can see from the reviews how many people love it, but if you're looking for a gamey dish that brings out the purely meaty taste of your venison, this is not for you.

Provided by TCSmoooth

Categories     Deer

Time 1h20m

Yield 2-3 serving(s)

Number Of Ingredients 5

2 lbs venison tenderloins (a single deer loin or Moose or Elk or Pork or Beef)
1/2 lb bacon (Plain, thin-sliced Bacon is best)
3 cups dark brown sugar
2 cups soy sauce (Regular NOT low-sodium. You'll want the saltiness)
1/4 cup white sugar (Optional for added Sweetness)

Steps:

  • Mix brown Sugar and Soy sauce together in a bowl. They should combine nicely into a soupy soy liquid.
  • Put Deer Loin in a cooking tray and pour Brown Sugar/Soy Sauce mixture over loin. Roll tenderloin over in mixture, completely covering it.
  • Let meat marinate in mixture at least 3 hours or overnight in fridge. It's best to marinate for 8 hours if you have the time. Also GREAT to use a Food Saver or other Vacuum device to Vacuum pack/seal the meat with Marinade. With this method, you can achieve Overnight-level marinade in just a couple hours!
  • Remove loin from tray, and place on a slotted bake sheet with a drip pan or aluminum foil below to catch dripping. Don't throw away marinade.
  • Wrap a piece of bacon around the very end of the tenderloin, securing the bacon strip with a toothpick.
  • Repeat this process until the entire loin is wrapped in ten or so bacon "loops." The tenderloin should look like an arm with a bunch of wrist watches on it, the watches being the bacon strips.
  • Drizzle remaining marinade over deer loin. You can continue to baste the loin with the marinade throughout the cooking process with either a brush or a turkey baster.
  • Place on center rack in oven and bake at 350°F for 30-40* minutes. *This should cook the meat to about Medium. For those of you who prefer rare meat (like me), cut the time to 25-30 minutes and then follow with the "OPTION 2" step below regarding searing.
  • OPTION 1 - with about 10 minutes of cooking time left, you can lightly dust the top of the loin with white sugar. This creates a sweet crust on top of the bacon. Might be too sweet for some. Try doing it on just HALF of the loin to see if you like it!
  • OPTION 2 - For a crispier crust and crispier bacon, remove Loin from oven and place the Loin(s) directly on a Grill over medium-high heat to sear the bacon and outer loin. (Thanks to all of you reviewers who taught me this. It's a great step for those of us who like a cooked crust and a pink center).
  • Remove from oven and place on cutting board. Using a knife, cut the loin between each strip of bacon so that you have many pieces of meat, each with their own toothpick.
  • You can eat these pieces directly from the toothpick or remove the toothpick and eat like steak. You can thank me later.
  • The next day, try the leftovers on a wheat bun with spicy BBQ Saucefor an awesome leftover sandwich.

PERFECT CHEESE SAUCE

Perfect Cheese Sauce image

Provided by James Briscione

Categories     condiment

Time 20m

Yield 1 quart

Number Of Ingredients 7

3 tablespoons unsalted butter
1/4 cup all-purpose flour
1 tablespoon taco seasoning
3 cups milk, heated
4 ounces cream cheese, softened
2 cups grated sharp Cheddar
1/2 cup grated Parmesan

Steps:

  • Melt the butter in a medium saucepot over medium heat. Stir in the flour and cook, stirring often, until a thick paste forms and turns golden brown. Stir in the taco seasoning and cook 30 seconds more.
  • Gradually whisk in the milk, adding 1 cup at a time. Allow the mixture to come to a simmer before adding the next. It will be extremely thick at first and will thin with each addition. When all the milk is added bring the sauce to a simmer and cook 5 more minutes. Whisk in the cream cheese.
  • Remove the sauce from the heat. Add the Cheddar and Parmesan and whisk until smooth. The sauce keeps refrigerated for up to 2 weeks or frozen for 6 months. If using from cold, carefully bring the sauce back to a boil before serving.

BACON-ONION JAM

Bacon-Onion Jam image

Here is a shockingly good accompaniment to chicken-liver pâté that came to The Times from the kitchen of the Fort Defiance in Brooklyn. But don't think that is its only use. Bacon-onion jam is also a terrific sandwich condiment. Paired with crumbled blue cheese, it's a fantastic topping for a serious, grown-up pizza pie. And because the recipe makes a lot of jam, all three options are possible. One note: Take your time. The point is to cook the mixture until it has achieved full jamminess. The onions should really caramelize. Covered, it will keep in the refrigerator for a week or so.

Provided by Sam Sifton

Categories     dips and spreads, appetizer

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 6

3/4 pound slab bacon, diced into cubes
4 medium-size white or Spanish onions, peeled and diced
1 1/2 teaspoons mustard seed
2 1/2 tablespoons dark brown sugar
1/4 cup balsamic vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Set a Dutch oven or heavy pot over medium heat, and add the bacon. Cook, stirring occasionally, until the fat is completely rendered and the bacon has started to crisp, approximately 12 to 15 minutes.
  • Drain all but 1 tablespoon of the fat from the pot, and add the onions, mustard seed, brown sugar, vinegar and 3 tablespoons of water. Stir to combine, then cover the pot, lower the heat and allow the mixture to cook undisturbed for 15 or 20 minutes. Remove the top, stir again and then partly cover the pot. Allow the mixture to cook until most of the liquid is gone and the onions have achieved a dark brown jamminess, approximately 60 to 70 minutes. (Add a little more water as needed.)
  • Taste the jam, and add salt and pepper if necessary.
  • Remove mixture from heat, and allow to cool slightly. Spoon the jam into a jar or bowl, then allow to cool completely. Store, covered, in the refrigerator for up to a week.

  • Bacon Wrapped Venison Tenderloin with Garlic Cream Sauce. Of course, I had to start off with something wrapped in bacon. I doubt my household is the only one in which bacon disappears before it’s even in the refrigerator, and whenever I prepare a meat dish wrapped in bacon the plates will be cleared entirely.
  • Venison Medallions with Gin and Juniper. My mom loves a good gin and tonic so I can imagine this going down exceptionally well in her books. According to the recipe, these Venison Medallions with Gin and Juniper are a modernized version of a classic Belgian recipe, and it looks simply scrumptious.
  • Venison Tenderloin with Blackberry Sauce. Venison Tenderloin is one of those recipes which both looks and sounds impressive but isn’t at all difficult to make yourself.

  • Venison Tenderloin with a Balsamic Reduction. A balsamic reduction always goes well with red meat, in fact, it is one of the first things I thought of when considering what venison dishes I would like to try out.
  • Spice Rubbed Venison Tenderloin with Red Wine Sauce. The venison in this recipe is coated with various delicious spices, from thyme to black pepper. It’s cooked rare which is exactly how I like it as it’s beautifully tender and slices like butter, but if you’d instead prepare it for longer, you could easily do so.
  • Sweet and Savory Bacon-Wrapped Venison Tenderloin. Mixing sweet and savory flavors is something I am getting into a lot more recently; I love how much you can elevate a dish by playing around with different tastes.
  • Grilled Venison Tenderloin. As well as being the go-to man for the Sunday roast, my dad is also chief in charge of the barbeque in our family. Whether it’s blazingly hot or there’s a sudden downpour, you can bet my dad will be out there with his top of the range tools whipping up the best BBQ for us.
  • Venison Wellington. Beef Wellington is a British classic, and this Venison Wellington is a similar idea but with a couple of tweaks. I love taking classic recipes and making them unique, whether I do that by following a recipe or being creative in the kitchen myself.
