QUICK BACON-CHEDDAR BISCUITS



Quick Bacon-Cheddar Biscuits image

2 cups flour
1 tablespoon baking powder
Kosher salt
1 teaspoon paprika
1 teaspoon onion powder
1 cup milk
1/2 cup butter, melted
8 strips bacon, cooked until crispy and crumbled
1 cup shredded Cheddar cheese
1 egg

Steps:

  • Heat the oven to 425 degrees F.
  • In a large bowl add the flour, baking powder, 1 teaspoon of salt, paprika, and onion powder. Mix to blend then make a well in the center of the bowl and add the milk, butter, bacon and cheese. Mix gently with a wooden spoon. The dough will be wet and sticky. Using a 1/4 cup measure or ice cream scoop, portion the batter onto a baking sheet, leaving an inch or so around each biscuit.
  • In a small bowl, beat the egg with a splash of water and then brush this mixture on the top of each biscuit. Bake in the oven until the biscuits are golden brown and a toothpick inserted in the center of one comes out clean, 20 to 22 minutes.

Nonstick cooking spray, for the pan
Three 16.3-ounce tubes large biscuits (24 biscuits total)
Twenty-four 1/2-inch cubes Havarti cheese or Gouda
About 8 tablespoons fig preserves
24 small pimiento-stuffed olives
1 cup sliced almonds
1/2 cup chopped fresh Italian parsley
1 1/4 cups finely shredded Cheddar
1 teaspoon paprika
1/2 teaspoon cayenne pepper
6 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Spray a 10-inch tube pan with cooking spray.
  • Cut each biscuit into 2 half moons to make 48 biscuit pieces. Separate the pieces into 2 piles.
  • Working with half of the dough, flatten a piece of biscuit in your hand and stuff it with a cheese cube and about 1/4 teaspoon fig preserves (it is easier to roll if you use the little pieces of fig from the preserves). Gather the dough around it and roll into a ball. Repeat with the remaining dough, cheese and jam to make 24 balls; set aside.
  • With the remaining dough, stuff and roll each piece of biscuit with an olive.
  • Toss the almonds and parsley together in a medium bowl. Toss the Cheddar, paprika and cayenne together in another medium bowl. Put the melted butter in a small bowl.
  • Alternating every so often between the two flavors, dip the cheese and jam balls in butter, then roll them to coat in the almond topping; and dip the olive balls in butter and roll them to coat in the Cheddar topping. Arrange the balls in the tube pan so that the flavors are interspersed.
  • Bake the bread until golden brown all over and the dough is baked through, about 35 minutes. Cool in the pan 10 minutes, then turn out onto a plate and serve warm.

It is from the BBQ Addicts website. 2 lbs thick cut bacon
2 lbs Italian sausage
3/4 cup barbecue sauce (your favorite)
3 tablespoons barbecue seasoning (your favorite rub, recommended Bad Byron's Butt Rub, Rendezvous Famous Seasoning, or Steven Raichlen)

Steps:

  • To kick off the construction of this pork medley you'll need to create a 5x5 bacon weave. If the strips you're using aren't wide enough to span 5x5 inches, then you may need to use a few extra slices to fill out the pattern. Just make sure your weave is tight and that you end up with a nice square shape to work with.
  • The next step is to add some barbecue seasoning on top of your bacon weave. (BBQ Addict recommends Bad Byron's Butt Rub, Rendezvous Famous Seasoning, or Steven Raichlen's All-Purpose Rub).
  • Now that your pork is well seasoned, it's time to add more pork. Take two pounds of Italian sausage and layer it directly on top of your bacon weave. Be sure to press the sausage to the outer edges of the bacon creating a patty that is the same thickness all the way across. Most grocery stores carry loose sausage, so just pick out one you like.
  • Next up is bacon layer number two. Take the remaining bacon slices and fry them up the same way you would for breakfast. If you like soft bacon, make it soft. If you like crunchy bacon, make it crunchy.
  • Since this is a barbecue recipe, we need to add another layer of barbecue flavor. Take your favorite sauce and drizzle it all over the top of the bacon pieces. (BBQ Addict recommends Burnt Finger BBQ's homemade competition sauce). Once you've sauced the bacon, sprinkle on some more of the barbecue seasoning you used on the bacon weave.
  • Very carefully separate the front edge of the sausage layer from the bacon weave and begin rolling backwards. You want to include all layers EXCEPT the bacon weave in your roll. Try and keep the sausage as tight as possible and be sure to release any air pockets that may have formed. Once the sausage is fully rolled up, pinch together the seams and ends to seal all of the bacon goodness inside.
  • At this point we can start to see the final shape of our Bacon Explosion, but we're missing one key item. To complete the construction process, roll the sausage forward completely wrapping it in the bacon weave. Make sure it sits with the seam facing downward to help keep it all sealed up.
  • Sprinkle some barbecue seasoning on the outside of the bacon weave, and now it is ready for the smoker. Cook your Bacon Explosion at 225°F in a constant cloud of hickory smoke until your meat thermometer gives an internal temperature reading of 165°F Normally this will take about 1 hour for each inch of thickness, but that could vary depending on how well you maintain your fire and also how many times you open the smoker to take a peek. BBQ Addict recommends 2.5 hours, for a roll 2.5 inches in diameter.
  • Now that the Bacon Explosion is fully cooked, you need to add some finishing flavors. Remember that barbecue sauce you used for inner flavor? You'll be using that same sauce to glaze the cooked bacon weave. Using a basting brush, coat the entire surface with a thin layer of sauce. Sweet sauces are loaded with sugars, so they'll give your fatty a nice glossy finish. Spicy and vinegar based sauces don't contain as much, so they won't set up as well. If you're dead set on using those sauces, just cut them with a bit of honey and you'll get the same effect.
  • Slice the Bacon Explosion into quarter to half inch rounds to serve. If your roll was good and tight, you should now see a nice bacon pinwheel pattern throughout the sausage.
  • Obviously pork is best served by itself, but if you feel the need to make this meat monster into a sandwich, BBQ Addict recommends placing a couple Bacon Explosion slices on a warm Pillsbury's Grands Biscuit.

3 tablespoons butter-flavored shortening
2 tubes (6 ounces each) small refrigerated flaky biscuits (5 count)

Steps:

  • Preheat oven to 400°. In a small saucepan, melt cheese spread and shortening, stirring to blend. Pour into a well-greased 10-in. fluted tube pan. Cut each biscuit into quarters; place over cheese mixture., Bake until golden brown, 12-14 minutes. Invert immediately onto a serving plate. Top with bacon and parsley. Serve warm.

2 tablespoons unsalted butter
1 medium onion, sliced (1 cup)
2 Gala apples, cored and sliced
2 sprigs fresh thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (2-lb) piece Canadian bacon

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Boil cider in a 1-quart saucepan until reduced to about 1/2 cup, 10 to 12 minutes.
  • Heat butter in a 1 1/2- to 2-quart flameproof casserole over moderate heat until foam subsides. Add onion, apples, thyme, salt, and pepper and cook, stirring, until onion is softened, about 5 minutes. Nestle bacon in apple mixture.
  • Pour cider over bacon and roast, uncovered, until heated through and beginning to brown, about 20 minutes.

Steps:

  • If using a top-down broiler, arrange rack on second-to-top rung. Heat broiler on high.
  • Arrange bacon, fat side up, in 2 layers in a 13x9" metal baking dish. Pour oil over; bacon should be mostly submerged. Broil, checking often and watching carefully, until fat is partially rendered and edges start to crisp on top layer, 15-20 minutes. Transfer dish to a wire rack.
  • Heat a griddle or large skillet over medium. Working in batches, remove bacon from oil, letting oil drip back into dish, and cook until crisp, about 2 minutes on each side.
  • Bacon can be broiled 5 days ahead. Cool submerged bacon completely in dish, then cover and chill.

THE GREAT BRITISH BACON BUTTY - BACON SANDWICH

The news is out - scientists at my old university, (Leeds University in West Yorkshire) have discovered the PERFECT way to make a "Bacon Butty", that quintessential British sandwich, and they have devised a mathematical formula for it!! The bacon butty is one of my FAVOURITE sandwiches of all times.......especially when doused in HP Sauce or Worcestershire Sauce! Here is my method - it's hardly a recipe, more of an idea and an assembly job! I have posted their mathematical formula at the end of the recipe - my formula is: Eat your bacon butty whilst it's still hot and crispy!! Please increase the quantities as needed. I like to use smoked bacon, but any good quality dry cure bacon will be fine.

2 -3 slices back bacon, per person
2 slices of farmhouse bread, 1cm to 2cm thick, per person, OR
1 crusty roll, per person

  • Cook the bacon under a preheated oven grill for seven minutes at about 240C/475F - turning half way through the cooking time.
  • Cook until crispy, but not burnt or too dry.
  • (You can also fry the bacon in a pan if you wish).
  • Butter the two slices of bread and place the grilled or fried bacon inside the two slices of bread to make a sandwich.
  • Add sauces to taste.
  • Enjoy!
  • The bread can also be toasted if you wish! And, you can make this sandwich with a crusty bread roll.

  • Four researchers at the Department of Food Science at Leeds University in the UK spent more than 1,000 hours testing 700 variations on the traditional bacon sandwich.
  • They tried different types and cuts of bacon, cooking techniques, types of oil and a range of cooking times at different temperatures.
  • A shortlist was then tested with computers to measure the texture of each sandwich.
  • Fifty volunteers also judged each sandwich according to its taste, texture and flavour.
  • The formula is: N = C + {fb (cm) . fb (tc)} + fb (Ts) + fc . ta, where N=force in Newtons required to break the cooked bacon, fb=function of the bacon type, fc=function of the condiment/filling effect, Ts=serving temperature, tc=cooking time, ta=time or duration of application of condiment/filling, cm=cooking method, C=Newtons required to break uncooked bacon.

1 egg yolk
2 ounces cheddar cheese, grated
2/3 cup flour
1 pinch salt
2 ounces cheese, grated, extra

Steps:

  • Remove rind from bacon, fry until golden on both sides, chop finely.
  • Beat butter until creamy, add egg yolk, mix well.
  • Add grated cheese, mix well.
  • Add sifted flour and salt, mix to a firm dough; wrap in plastic wrap and refrigerate 30 minutes.
  • Roll dough out on a lightly floured surface to 1/8 inch thick.
  • Cut into rounds with a 1 1/2 inch fluted cutter.
  • Put rounds on greased oven trays, sprinkle with bacon and extra cheese. Bake in moderate oven 10 - 12 minutes or until golden.
  • Allow to cool on a wire rack.
