BAHAMA MAMA
This is a great summer drink from Dale Degroff (The Essential Cocktail) that will go by the pitcher! This recipe is by the glass, though, for sipping on the patio. If you don't have all four rums, you can improvise by doubling up (I would recommend making sure to use dark rum and coconut rum, however). Angostura bitters really make the drink, but could be left out if you don't have them (usually found in the tropical drink section at a supermarket or liquor store).

Steps:
- Combine rums, juices, grenadine and bitters in a glass with ice. Shake well, or stir if you do not have a shaker (two glasses top-to-top work well as a shaker, just make sure they seal tightly).
- Pour into a large glass and garnish with the cherry and orange slice, if desired.
BAHAMA MAMA ( NON ALCOHOLIC PUNCH )
A nice blend of tropical flavors that will keep you cool. A taste of the Bahamas! This makes a large batch but can easily be scaled down. From Recipes from Friends. Ingredients in parenthises are scaled down to 1/4 of the recipe to make a smaller batch.

- Conch Fritters. You can’t visit the Bahamas without trying every variation of conch. The pink sea snail is native to the Caribbean and is a culinary staple throughout Nassau and the outer islands.
- Rum Cake. Rum cake is a specialty in the Bahamas and Virgin Islands, and enjoying authentic Bahamian rum cake while visiting the islands is a treat that can’t be missed.
- Guava Duff. Our next suggestion is another Bahamian sweet: guava duff, a pastry made from one of the few indigenous fruits that preceded the arrival of Christopher Columbus in 1492.
- Johnnycakes. From one baked Bahamian pastry to another, this breaded tradition is best enjoyed at the Bahamian Cookin’ Restaurant & Bar in downtown Nassau.
- Baked Macaroni and Cheese. For another traditional side course, consider ordering the baked macaroni and cheese on the menu at any restaurant serving authentic Caribbean cuisine.
- Rock Lobster. This spiny Caribbean lobster is very different from what you’re used to enjoying up North. Unlike the Maine variety, Rock Lobster is clawless and often served broiled, or as an ingredient in fresh island salads.
- Conch Salad. Much like ceviche in Latin American countries, the conch salad prepared in the Bahamas is stripped down to its rawest (and most favorable) form.
- Boiled Fish. A staple selection on the Tru Bahamian Food Tours, boiled fish is known also merely as “Boil,” and is a flavorful serving of flaky white fish, served with potatoes and spices.

- Cracked conch. A conch is usually known to us as a wind instrument or a souvenir to grace our showcase. What most of us don’t know is that it can also be a delicious dish.
- Pigeon peas and rice. Pigeon peas and rice, as the name suggests, is a Bahamian dish made from pigeon peas, a type of peas found in Latin America and the Carribean, and rice.
- Red, yellow or hog snapper. Snapper is a common fish found in the Bahamas where the red is the most common but yellow snapper and hogfish are also available in large amounts.
- Bahamian hot patty. Editor's Note: There's no photo available at the time of writing. The Bahamian hot patty is a famous snack across the greater Caribbean area.
- Guava duff. Editor's Note: There's no photo available at the time of writing. The guava duff is a dessert where you take guava, cover it with pastry dough and then boil it.
- The Yellow Bird. Editor's Note: There's no photo available at the time of writing. On looking at the name, one would think of a dish made of the meat of probably a yellow colored bird found locally.
- Rum cake. Rum is the national beverage of the Bahamas and so it comes as no surprise that rum cake is the ubiquitous item across restaurants there. Rum cake has a generous amount of rum in it, both in the cake and the sauce that is drizzled over it.
- Johnnycake. Johnnycake is the staple and unofficial bread in Bahamian cuisine. It is similar to cornbread found in the Southern cuisine of America. This bread is made with milk, flour, butter and sugar, and the concoction is cooked in a pan and not an oven.
- Goombay marmalade. Editor's Note: There's no photo available at the time of writing. Bahamian cuisine is mainly known for its fresh and spicy seafood dishes but one cannot justify Bahamian food without the mention of Goombay.
- Fried or seared grouper with grits. Grouper is another popular fish in the Bahamas and with it, the locals make an amazing dish that comes with grits.
