- Set broiler to high. Slice grapefruit in half and use a paring knife to separate the pieces for easy scooping. Spread 1 tablespoon of brown sugar onto each side. Place fruit in a baking dish that will collect any excess juices that spill over.

BAKED GRAPEFRUIT
Steps:
- Heat oven to 450 degrees F. Remove the ends of the grapefruits to stabilize on the cutting board. Using a sharp knife, remove the skin and bitter pith from the flesh. Over a small bowl, hold grapefruit in 1 hand and carefully remove the segments by sliding the knife between the flesh and the membrane. Toss grapefruit pieces with brown sugar and vanilla and divide among 6 ramekins. In a large bowl, beat egg whites until light and fluffy. Add sugar and beat until meringue is glossy and holds stiff peaks. Top each ramekin with 1/4 cup of ice cream. Cover with meringue and bake until golden brown, about 7 minutes.

A classic at a fancy breakfast or brunch, the best broiled grapefruits have a glossy caramelized topping covering sections of the warm, juicy citrus. This recipe also includes a little cinnamon for a heady fragrance, and a touch of sea salt, which softens the bitterness of the grapefruit peel. It's best served warm from the oven, when the brown sugar is still melted and syrupy. Ruby or pink grapefruits make for the prettiest presentation, but white ones work just as well, and have a livelier, more acidic flavor.

- Move the rack 4 inches away from the broiler, and turn it on.
- Halve the grapefruits through their equators. Using a paring knife or a grapefruit knife, cut the sections away from the membranes and pith so they are easy to spoon up. Place grapefruit halves, cut-side up, on a baking sheet. Sprinkle each grapefruit half with 1 tablespoon brown sugar, then drizzle with melted butter and a little honey. Sprinkle cinnamon over the tops if you like.
- Broil grapefruit until the sugar melts and caramelizes, 2 to 5 minutes. (Broilers vary a lot so watch carefully to make sure they don't burn.) Sprinkle with flaky sea salt, and serve immediately.
ROASTED GRAPEFRUIT
In 2010, Sam Sifton, who was then The New York Times restaurant critic, made a list of the 15 best things he ate in New York City that year. For breakfast, he chose a dish from Pulino's in SoHo, which is now closed. This quick-cooked grapefruit is not so much a dish as a magic trick, the fruit covered with a caramel of muscovado sugar and mint that transforms it into ambrosia.

- Cut the grapefruit in half and thoroughly loosen all sections with a knife. Dry the cut surface with a paper towel.
- Put the sugar in a 10-inch heavy skillet and place over medium-high heat. Add 2 tablespoons water to the pan and swirl it into the sugar. Continue swirling until the sugar melts and darkens slightly, approximately 3 to 5 minutes; do not let it burn. Immediately add the grapefruit halves, cut sides down, and turn off the heat.
- Move the grapefruit in the pan to coat the surface. Using tongs or two spoons, transfer to serving dishes, cut sides up. Sprinkle with mint and serve immediately.

- Preheat your oven's broiler.
- Cut the grapefruits in half, and use a small serrated knife to cut out the sections in the halves. Spoon the sections and juice into a bowl, then scrape out all of the remaining thick skins and pulp. Spoon the sections from the bowl back into the halves. This is best done one half at a time.
- Sprinkle sugar and cinnamon over the top of each grapefruit half, adjusting as you see fit. Dot with butter. Place the halves on a cookie sheet.
- Broil for 3 to 5 minutes, until the butter is melted and sugar is starting to turn brown.

- Halve fruit crosswise and discard any visible seeds. Cut segments free from membranes with a sharp paring knife without removing them.
- Arrange grapefruit halves, cut sides up, on a baking sheet and sprinkle tops evenly with brown sugar.
- Beat egg whites with cream of tartar and a pinch of salt in a bowl with an electric mixer at medium speed until whites just hold soft peaks. Gradually add granulated sugar, beating at high speed until meringue is stiff and glossy.

WATERMELON AND GRAPEFRUIT SALAD WITH TAHINI
This fruit salad is simple to make but thrilling to eat because it hits all the marks of a good salad in surprising ways. The base is crunchy-sweet watermelon and tangy-tart grapefruit. (If you can't eat grapefruit, substitute orange sprinkled with lemon or lime juice.) These two fruits look similar, but taste different, and that is part of the fun of eating them together. Tahini is used like a nuttier, richer oil, and honey mellows the mix. The balance really depends on the quality of your ingredients, though, so adjust to taste until each bite races between sweet, savory, juicy and creamy.

- Cut off the top and bottom inch of the watermelon and set it on one of its flat, cut sides. Follow the curve of the fruit to cut away the rind.
