Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.

LOW-FAT GRANOLA
Most granola is packed with lots of fat and little nutrition. This version has goodness in every bite and is low in fat. Serve with a dollop of plain yogurt and sliced fresh fruit for a healthy breakfast. The recipe can easily be doubled.

BAKED HOMEMADE GRANOLA (LOWER FAT)
By making your own granola you can reduce the fat and increase the richness of nuts and seeds. This is great alone as a snack or on top of yogurt or anything! For the mixed nuts and seeds you can use all or a mixture of slivered almonds, coarsley chopped walnuts, pumpkin seeds, sunflower seeds and sesame seeds.

Steps:
- Heat oven to 300°F.
- In large bowl combine dry ingredients. Slowly stir in the vanilla, honey and applesauce until combined.
- Spread the mixture evenly on a lightly sprayed baking sheet.
- Bake for 20 minutes. Add in the cranberries, pressing them into the granola. (If you want the cranberries to cook and be a little firm, which the husband and I do, stir them in after 20 minutes. If you're like my brother, leave the cranberries out and add once the granola has cooked completely so they'll stay moist.) Continue cooking for a total of 30 minutes to an hour - stirring every 15 minutes - or until golden brown. If you stir less often, you'll have more clumps in your granola.
- Cool completely and store in an airtight container or divide into individual portions. I divided my batch into 2-ounce servings, 8 servings in all.

HOMEMADE GRANOLA
My husband found this recipe in a mountain bike magazine that we changed just a bit. This granola is really easy to make and very good. You can use oats, but I like to use multi-grain hot cereal that includes oats, barley, rye, and wheat. Enjoy!

Steps:
- Preheat oven to 360 degrees.
- Toast nuts in pan over stove until lightly brown.
- Mix the fruit juice, honey, maple syrup, oil, vanilla, and spices in a large bowl. It's okay to add more honey, maple syrup, cinnamon, or spices - just depends how you like your granola to taste.
- Add oats and nuts into honey mixture and combine together.
- Spread mixture on a baking sheet and bake 30 minutes until golden. Stir occasionally. Use your best judgement when baking. I like mine a little crunchy, so sometimes I bake it 40 minutes.
- Leave on pan to cool.
- If you are using dried fruit stir in once completely cooled.
- Store granola in container with lid (not in refrigerator). It will last about a week or a little longer. Add granola to vanilla yogurt, or with milk, or eat plain.

- Preheat oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside for later.
- Add all ingredients to a large bowl. Using a rubber spatula, fold until clusters form and mixture is well mixed.
- Pour onto the prepared baking sheet. Using the rubber spatula, gently nudge granola into an even layer, making sure to keep clusters intact. Create empty pockets at regular intervals to let air through to crisp up the granola.
- Bake for 15-20 minutes—until granola clusters are just solid enough to flip. Using a heatproof spatula, gently flip granola, making sure to keep clusters intact. Bake for an additional 5-10 minutes, until edges are a deep golden brown and granola is just slightly soft. Mine took a total of 25 minutes. Granola will crisp up while cooling.
