3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1/2 teaspoon pepper
6 bone-in pork loin chops (1-1/2 inches thick and 8 ounces each)
1/4 cup water
1 jar (12 ounces) currant jelly
3 to 4 medium tart apples, thinly sliced

Steps:

  • Preheat oven to 350°. In a shallow bowl, combine flour, salt and pepper. Coat pork chops. Place in a greased 15x10x1-in. baking pan. Add water to pan. Bake, uncovered, until a thermometer reads 145°, about 1 hour. Let stand 5 minutes., In a large skillet, melt the jelly. Add apples. Cook over low heat until apples are tender, 5-7 minutes , turning occasionally. Serve with pork chops.

¼ cup all-purpose flour
1 teaspoon ground cumin
1 tablespoon oil, or as needed
2 apples - peeled, cored, and thinly sliced
1 cup chicken broth
4 tablespoons red wine vinegar
2 tablespoons honey
2 tablespoons ketchup
2 tablespoons finely chopped shallot

Steps:

  • Season pork chops with salt and pepper. Dredge in flour and cumin and shake off excess.
  • Heat oil in a skillet over medium-high heat. Saute pork chops until browned, about 5 minutes per side. Transfer to a plate. Add apples; cook and stir just until tender, about 2 minutes. Transfer to a plate. Add broth, vinegar, honey, ketchup, and shallot to the skillet and cook for 1 minute.
  • Return pork and apples to the skillet, cover, and cook until pork is only slightly pink in the center, about 10 minutes more.

¼ cup kosher salt
1 quart water
4 (8 ounce) thick-cut boneless pork chops
1 pinch coarse-ground black pepper
¼ cup butter
¼ cup olive oil
3 sprigs fresh rosemary
2 apples, cored and quartered

Steps:

  • Stir honey and salt into water in a large bowl until honey and salt are dissolved into the brine. Place pork chops in the brine and let sit in the refrigerator for 2 hours.
  • Remove pork chops from brine, rinse, and pat dry. Place chops on a plate and refrigerate until dry, about 10 minutes. Discard brine.
  • Preheat oven to 350 degrees F (175 degrees C). Sprinkle pepper over the pork chops.
  • Melt butter and olive oil in a cast-iron skillet over medium heat; cook pork chops until browned, 3 to 5 minutes. Flip pork chops and season with rosemary; add apples. Cover skillet.

1 medium turnip, peeled and cut into 1/2-inch pieces
1 red onion, cut into 1/2-inch pieces
2 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh rosemary
Kosher salt and freshly ground pepper
2 small cooking apples (such as Gala), halved and seeded
1/4 cup apricot preserves
1 teaspoon Worcestershire sauce
1 teaspoon chopped fresh sage
4 bone-in pork loin chops (1/2 inch thick; about 1 1/2 pounds total)
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 450 degrees F. Toss the parsnips, turnip and onion with the olive oil, rosemary, 1/2 teaspoon salt and a few grinds of pepper on a rimmed baking sheet. Arrange the apples on top, cut-side up; brush with 2 tablespoons apricot preserves and season with pepper. Roast until the vegetables and apples soften, 20 minutes. Switch the oven to broil; broil until the vegetables are golden brown, 5 minutes.
  • Meanwhile, mix the remaining 2 tablespoons preserves, 1/2 cup water, the Worcestershire sauce and sage in a large bowl; season with pepper. Pierce the pork all over with a fork; add to the bowl. Marinate 10 minutes.

2 tablespoons vegetable oil
½ cup chopped onion
4 raw chop with refuse, 113 g; (blank) 4 ounces (1/2-inch thick) pork chops
½ teaspoon salt
ground black pepper to taste
2 medium (2-3/4" dia) (approx 3 per lb)s apples - peeled, cored and sliced
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cloves
¾ cup hot water

Steps:

4 pork steaks, approx 140g/5oz each, trimmed of excess fat
1 tbsp oil
2 eating apples , cored and cut into eight
1 onion , halved and sliced
small handful sage leaves, torn, or 2 tsp dried
100ml/3½ fl oz chicken or ham stock (from a cube is fine)
2 tsp Dijon mustard or wholegrain mustard

Steps:

  • Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 mins or until the apples have softened.
  • Pour in the stock and spoon in the mustard, then return the pork to the pan and simmer for 10 mins until the sauce has reduced by about a third and the pork is cooked through. Serve with veg and mashed potatoes.

Steps:

  • Peel, core, and slice the apples.
  • Preheat the oven to 350 degrees.
  • Melt the butter in a skillet.
  • Brown the pork chops on both sides in the butter.
  • Grease (or spray) a large baking dish.
  • Put the apple slices in the bottom of the dish.
  • Mix the brown sugar and cinnamon.

Kosher salt
Extra-virgin olive oil
2 onions, thinly sliced
1 pinch crushed red pepper
2 Granny Smith apples, peeled, cored, and sliced
Pinch cinnamon
2 sprigs fresh rosemary, leaves finely chopped
2 cups apple cider

Steps:

  • Preheat the oven to 375 degrees F.
  • Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. Remove the pork from the pan and place on a cookie sheet. Finish the pork in the oven for about 10 to 12 minutes. Remove from the oven and let rest for 10 minutes before serving.
  • Ditch the excess fat from the saute pan. Give a drizzle of fresh olive oil and add the onions and crushed red pepper and season with salt. Cook until the onions become soft and aromatic. Add the apples, cinnamon and rosemary and toss to coat with the oil. Add the cider and cook until the cider has reduced by two-thirds and the onion-apple mixture is very soft and saucy. Serve over the pork chops.

The great thing about this dish is you can either cook it quickly on a high heat or cook it for hours on low.

4 pork chops, good thick ones with lots of fat
salt and freshly ground black pepper
a good glug fruity olive oil
1 large onion, or 2 small ones, peeled, chopped
a couple of eating apples, each cut into 8 wedges, and at least 3 eating apples left whole
a few fresh sage leaves
a few juniper berries, squashed using the back of a knife
a good glass of dry cider

Steps:

  • Preheat the oven to 200C/400F/Gas 6.
  • Season the chops well with salt and freshly ground black pepper. In a large shallow ovenproof pan, heat the olive oil and fry the rind of each chop for a good head start to getting them crisp. Then lightly fry each side for a minute or so to get the outside crusty and golden brown, and remove from the pan. Add the onion to the same pan with the pork juices, and brown a little before adding in the apple wedges and sage leaves (add only a few as sage can overpower the dish) with the juniper berries.
  • Add the chops back into the pan, and nestle them among the apples and onions, along with the remaining whole apples. Pour over the cider, enough to just cover the ingredients, season to taste and place in the oven for about half an hour, or until the pork and apple are cooked.

½ teaspoon garlic powder

1 tablespoon olive oil

⅔ cup apple cider (or as needed, not apple cider vinegar)
2 teaspoons grainy mustard
⅛ teaspoon cinnamon

Steps:

  • Season pork chops with garlic powder, salt and pepper.

1 teaspoon garlic powder, or to taste

1 cup finely crushed cornflake crumbs, or as needed
7 apples - peeled, cored and cut into wedges
1 ½ cups apple juice, or as needed
1 teaspoon ground cinnamon
¾ teaspoon ground allspice, or to taste
1 teaspoon vanilla extract
⅔ cup brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a baking rack into a large, shallow baking sheet with sides.
  • Sprinkle each pork chop with onion powder, garlic powder, and lemon pepper seasoning. Place the cornflake crumbs into a shallow dish, and thoroughly dredge each pork chop in the crumbs, pressing the chops into the crumbs with a fork. Gently brush away any loose crumbs, and place the pork chops onto the baking rack.
  • Bake in the preheated oven until the chops are no longer pink inside and the juices run clear, 30 to 45 minutes. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 160 degrees F (70 degrees C).

Mix in the cinnamon, allspice, vanilla extract, and brown sugar. Bring to a boil, reduce heat to a simmer, and cook until apples are soft when pierced with a fork, about 30 minutes.

1 1/2 teaspoons crumbled dried sage
1 tablespoon vegetable oil
3 granny smith apples (or other tart variety, sliced 1/4 inch thick)

3 tablespoons all-purpose flour
2 cups chicken broth
1 tablespoon vinegar

6 boneless pork chops
3 large apples, peeled, cored, and sliced (I use Granny Smith)
1/4 cup brown sugar, packed
1/2 teaspoon ground cinnamon
2 tablespoons butter
salt, to taste
pepper, to taste
1/2 cup cranberry juice

Steps:

  • Sear pork chops, 2 minutes per side. Reserve.
  • Preheat oven to 350 degrees F.
  • Arrange apple slices in the bottom of a prepared 9x12 baking dish. Sprinkle with brown sugar and cinnamon. Dot with butter.
  • Top apples with seared pork chops. Season with salt and pepper to taste.
  • Pour cranberry juice over all and cover.
  • Bake for 1 hour (or until tender). Make sure pork reaches an internal temperature of 160 degrees F.

6 bone-in pork loin chops (3/4 inch thick and 7 ounces each)
1/2 teaspoon salt
1 tablespoon vegetable oil
2 medium tart apples, peeled and sliced
1/4 cup raisins
4 tablespoons brown sugar, divided
1/4 to 1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 tablespoon lemon juice
1/4 cup apple juice
1/4 cup orange juice

Steps:

  • Sprinkle pork chops with salt. In a large skillet, brown chops in oil; set aside. Place apples and raisins in a greased 13-in. x 9-in. baking dish. Combine 2 tablespoons brown sugar, cinnamon and cloves; sprinkle over apples. Drizzle with lemon juice. Arrange pork chops on top. , Bake, uncovered, at 325° for 40-45 minutes or until chops are tender and juices run clear. , In a small saucepan, combine the apple juice, orange juice and remaining brown sugar; bring to a boil. Reduce heat and simmer for 10 minutes. Serve with pork chops just before serving.

The tastes of Autumn in this recipe are enough to warm any winter day. It's not necessary to thicken the liquid, but it does help make a better sauce. It can be made ahead up to a certain point in the recipe, refrigerated and finished later. See directions.

4 pork chops, 1 inch thick and with bone
2 medium onions, sliced
3 granny smith apples, peeled and sliced
2 tablespoons butter
1 tablespoon oil
1 cup apple cider
1 teaspoon cinnamon, ground
1 teaspoon sage, dried
1/2 teaspoon salt
1 teaspoon pepper, freshly ground
1 teaspoon cornstarch
1 tablespoon water

Steps:

  • Preheat the oven to 350°F.
  • Heat 1 tbsp of butter with the oil in a large frying pan. Sauté the onions on medium high until golden. Layer in the bottom of a 9x13 baking dish.
  • Peel, core and slice the apples, the same size as if for a pie. Heat the remaining tbsp of butter in the same pan. Sauté the apples until they begin to soften and brown slightly. Remove and add to the onions.
  • Season both sides of the chops with salt and pepper. In the same pan, sear the pork chops on each side on high heat, two at a time. Use a little more oil if necessary. They should have a slightly browned crust but are not cooked through. Remove and arrange on top of the onions and apple slices.
  • If making ahead, stop at this point, cover the pan with foil and refrigerate.
  • Mix the cornstarch and water. Mix the apple cider, cinnamon and sage together, add the cornstarch, and pour over the chops. If desired, add more pepper and salt at this time.
  • Cover with foil and bake in the centre of the oven for 30 minutes.

1 tablespoon butter

2 Granny Smith apples (cored, peel left on, sliced into thin wedges)
1/2 teaspoon cinnamon (ground)
3 tablespoons brown sugar (packed)
1/4 cup apple juice (cider, apple brandy, or white wine)

Steps:

  • Gather the ingredients. Heat the oven to 350 F.
  • Arrange the apple slices in a buttered 13 x 9-inch baking dish . Sprinkle with the cinnamon and brown sugar.
  • Melt the butter in a skillet over medium heat. Sprinkle the pork chops with salt and pepper, then brown on both sides in the butter. Transfer the pork chops to the prepared baking dish, arranging over the apples.
  • Add the apple juice, cider, brandy, or wine to the hot pan; swirl and scrape up any browned bits. Pour over the chops.
  • Cover the baking dish tightly with foil and bake for 35 to 45 minutes, or until pork chops register at least 145 F-the minimum safe temperature for pork -on an instant-read thermometer inserted into the thickest part of a pork chop.
