1-1/2 teaspoons salt-free seasoning blend

Steps:

  • Cut potatoes into 1/4-in. slices. Place in a large bowl; drizzle with oil. Sprinkle with seasoning blend and salt; toss to coat., Arrange potatoes in a single layer in an ungreased 15x10x1-in. baking pan. Bake at 450° for 20-25 minutes or until golden brown, turning once.

I created this recipe by accident. After already starting dinner one night I realized I didn't have enough potatoes on hand to make mashed, so I improvised and came up with these baked potato slices. It's quick and easy and they are delicious. Just line your cookie sheet with nonstick foil and clean up is a snap! Enjoy!

4 medium baking potatoes, sliced 1/8-inch thick
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
⅛ teaspoon celery seed
⅛ teaspoon paprika

4 tablespoons olive oil, or more as needed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place potatoes, garlic powder, black pepper, celery seed, paprika, cayenne pepper, and salt into a zip-top bag. Shake to coat evenly.
  • Pour entire contents of bag onto a large baking sheet and spread evenly. Drizzle with olive oil.
  • Bake in the preheated oven until potatoes reach desired crispness, turning frequently to brown evenly, 40 to 45 minutes.
  • Remove from the oven. Let cool slightly and pour into a serving dish.

An easy way to give the bland potato a lot of new flavor ! The light coating of butter and cheese gives the potatoes a crisp outside. These are fun to make, and look delightful ! Oven baked, or microwave. Oven bake time: appx. 1 hour. Microwave bake time 16-20 minutes.

4 medium potatoes
1 teaspoon salt
3 tablespoons melted butter
2 -3 tablespoons chopped fresh herbs, such as parsley, chives, thyme or 2 -3 tablespoons sage
4 tablespoons grated cheddar cheese
1 1/2 tablespoons grated parmesan cheese

Steps:

  • Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
  • Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
  • Put potatoes in a baking dish. Fan them slightly.
  • Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
  • Bake potatoes at 425 degrees for about 50 minutes.
  • Remove from oven. Sprinkle with cheeses.
  • Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
  • To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
  • Sprinkle with melted butter and herbs.
  • Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
  • Let rest for 5 minutes.
  • Sprinkle with grated cheese and Parmesan cheese.
  • Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
  • Sprinkle with salt, and serve.
  • Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
  • After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.

1.2 kg / 2.4 lb starchy potatoes (, large long ones (Note 1))
30g /2 tbsp butter (, unsalted)
2 garlic cloves (, finely minced)
1/2 cup heavy / thickened cream
1 tsp fresh thyme leaves ((or 3/4 tsp dried))
1/2 tsp salt
Black pepper
75g / 2.5 oz gruyere cheese (sliced into 12 squares to fit into muffin tin (or other melting cheese, Note 2))
3/4 cup gruyere cheese ((or other melting cheese), shredded)

Steps:

  • Preheat oven to 350°F/180°C (all oven types).
  • Brush muffin tin with butter: Melt butter in a saucepan over medium heat then use what you need to lightly brush the muffin tin holes with butter. (Remaining butter is for the cream sauce)
  • Cream sauce: Into the remaining butter, add garlic and cook for 20 seconds. Add cream and salt then bring to a simmer. Simmer for 30 seconds, then remove from stove and keep warm.
  • Slice potato: Peel potatoes. Trim base so it stands upright. Then cut into cylinder shapes that fit tge muffi tin. Cut into 2mm/ 1/10" slices using a mandolin or sharp knife.
  • Assemble stacks: Place potato slices into the muffin tin so they go halfway up the muffin tin holes. Try to match by size to make them into neat stacks.
  • Cream: Drizzle each potato stack with 1 tsp of cream mixture - use 1/2 of the mixture.
  • Cheese slice: Top with cheese slice.
  • Top with potato, cream then thyme: Top each stack with remaining potato slices so the height is about 1cm / 1/3" above the rim of the muffin tin (they sink once baked). Drizzle with remaining cream mixture and sprinkle with most of the thyme (reserve some for topping).
  • Baked 40 minutes: Cover loosely with foil and bake for 40 minutes or until potato is cooked through. A small sharp knife should go through without any resistance.
  • Top with cheese, bake 10 minutes: Remove from oven, sprinkle with shredded cheese and bake without foil for 10 minutes or until golden.
  • Garnish with thyme: Sprinkle with remaining thyme.
  • Stand 5 minutes then remove to serve. Use a tablespoon or butter knife to help scope them out. (Note 3)
  • To Serve: Dinner - serve as a side. Finger food - serve warm as is. Breakfast - serve with eggs and bacon.

750g even-sized potato , such as Desirée or Maris Piper
750g tomato
4-5 tbsp olive oil

Steps:

  • Heat the oven to 190C/fan 170/gas 5. Thinly slice the potatoes either by hand or in the food processor (no need to peel them). Put in a pan with water to cover, bring to the boil, simmer for 3 mins, then drain well. Slice the tomatoes.
  • Brush oil over the base and sides of a 1.5 litre ovenproof dish. Layer up half the potatoes, seasoning and drizzling with oil as you go, then cover with half the sliced tomatoes. Repeat the layers, finishing with tomatoes.
  • Bake for 45-55 mins, until the top is lightly browned. Serve warm or at room temperature. Can be reheated.

12 tablespoons (1 1/2 sticks) unsalted butter, melted
1 pound russet potatoes
1 pound sweet potatoes
1 tablespoon chopped fresh sage

1 clove garlic, grated
Kosher salt and freshly ground black pepper
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 425 degrees F. Lightly spray a 12-cup muffin tin with cooking spray and set aside.
  • Melt the butter in a microwave or small saucepan over medium-low heat. Set aside.
  • Slice the russets and sweet potatoes 1/16-inch thick using a mandoline and place in a bowl. TWICE BAKED MINI POTATO DAUPHINOISE - POTATO GRATIN MUFFINS



Twice Baked Mini Potato Dauphinoise - Potato Gratin Muffins image

Exactly as the title says, these are cooked in a muffin or Yorkshire pudding tin! They are a brilliant way to use up leftover potatoes & are so good that it's worth baking or boiling up some potatoes specially!! I use these all the time in our Chambres d'Hotes - it's easy to work out the portions and they freeze beautifully. There is also NO burnt mess in your gratin dishes! That's not to say I never make traditional Gratin Dauphinoise, because I do - but these are a great standby, use up leftover potatoes and look very elegant when served!

6 large cooked potatoes, sliced thinly
2 garlic cloves, peeled & crushed
5 fluid ounces creme fraiche or 5 fluid ounces sour cream
2 -4 ounces grated emmenthaler cheese
2 ounces butter
freshly grated nutmeg

Steps:

  • You will need a deep 12 hole Muffin tin or 2 X 4 hole Yorkshire pudding tins.
  • Preheat the oven to 200C, 400F or Gas Mark 6.
  • Using 1 ounce of the butter, grease the muffin or Yorkshire pudding tins well. You can line the base with greaseproof baking paper for ease of removal if you wish.
  • Arrange the potatoes in the tin/s holes in layers - seasoning every other layer or so with the crushed garlic, salt & pepper.
  • Carry on until all the potatoes are used up.
  • Stir the creme fraiche with a wooden spoon to thin it down a bit - and then place a spoon on top of each mini potato gratin.
  • Sprinkle some grated cheese on top and then top each gratin with flecks of the remaining butter.
  • Grate some nutmeg on top and bake in the oven for about 30 to 45 minutes; it depends on which tin you are using - a muffin tin will take less time to bake than a Yorkshire Pudding tin as the holes are smaller!
  • Serve with all types of daubes, casseroles, stews, roast dinners OR as a light lunch with crisp green salad & crusty French bread!
  • To freeze:.
  • Freeze in the tin after assembling them and when frozen, remove and place into zip-lock bags or plastic containers.(It is best to line the base with greasproof paper if you intend to freeze them - they are easier to remove from the tin!).
  • Defrost and bake on a large greased and/or lined baking tray - temperature as before; or place into muffin/Yorkshire pudding tins to help keep their shape. I never need to do this - please see my photos,it's up to you!

4 x 300g / 10oz potatoes ( - Sebago (Aus), Russet (US), Maris Piper / King Edwards (UK) (Note 1))
1 tbsp canola or vegetable oil
1/2 tsp salt
200g / 7oz bacon (streaky) (, chopped into small batons (Note 2))
120g / 8 tbsp unsalted butter
1/3 cup cream ((pure or thickened / heavy))
1 cup cheddar cheese (, shredded (Note 3))
3 green onions (, finely sliced)
1/4 tsp salt
1/4 tsp pepper
1 1/2 tbsp chives (, finely chopped (garnish))
Sour cream ((recommended!))

Steps:

  • Preheat oven to 220°C / 430°F (200°C fan). Place a rack on a tray (recommended but not critical).
  • Prick potatoes: Wash, scrub and dry potatoes well. Prick each potato 8 times with a fork.
  • Oil and salt: Put potatoes in a bowl, pour over oil and rub onto potatoes. Then sprinkle over salt and use your hands to coat. (Just do this as best you can. Some will stick, much will not!)
  • Bake: Place potatoes on rack and bake for 75 minutes or until you can pierce with a small knife with no resistance.
  • Cook bacon: Place bacon in a cold non-stick pan over medium heat. When the fat starts to melt, turn the heat up to high and cook bacon until golden. Drain on paper towels.
  • Heat butter and cream: Melt butter in a saucepan over medium heat. Then add cream and heat until hot, but don't let it boil. (You could also do this in a microwave)
  • Lower oven: Turn oven down to 200°C / 390°F (180°C fan).
  • Scoop out potato flesh: Allow potatoes to cool enough so you can handle them (or use a tea towel). Cut in half lengthwise and scoop out potato flesh, leaving 0.7cm (1/3") thick layer of potato still stuck to skin.
  • Mash potato: Place potato flesh in a bowl and mash while hot until smooth.
  • Add-ins: Add half the cheese (save the rest for topping), most of the bacon (save a bit for garnish), all the green onion, hot cream and butter, salt and pepper. Stir to combine.
  • Stuff and top with cheese: Fill potato skins with the mashed potato mixture. Top with remaining cheese.
  • Bake: Bake for 20 to 25 minutes until the cheese is melted, golden and bubbly.
  • Serve: Serve immediately, garnish with sour cream, reserved bacon and chives.

Full disclosure: You won't be able to stop eating these creamy, cheesy spuds. These crowd-pleasing potatoes are layered in a bundt pan to make an impressive dome shape.

4 tablespoons unsalted butter, at room temperature
2 1/2 pounds Yukon gold potatoes (about 8 medium)
1 cup heavy cream
2/3 cup grated Parmesan
1 clove garlic, grated
1 tablespoon chopped fresh rosemary
3 scallions, thinly sliced
Kosher salt and freshly ground black pepper
12 slices mild Cheddar, cut in half

Steps:

  • Preheat the oven to 400 degrees F. Generously butter a 12-cup bundt pan (use all the butter; it may seem like a lot, but the potatoes need it to stick to the sides of the pan and to crisp up).
  • Thinly slice the potatoes on a mandoline (they need to be thin enough to easily bend when folded). Starting on the bottom of the pan lay the potatoes in a slightly overlapping formation, sticking to the butter, until the entire pan is covered in one layer of potatoes.
  • Stir together the heavy cream, Parmesan, garlic, rosemary, scallions, 2 teaspoons salt and a few grinds of black pepper in a large bowl. Toss the remaining potatoes in the cream mixture until well coated.
  • Using a quarter of the potatoes, layer them in a circular formation, slightly overlapping in the bottom of the pan. Top with 8 pieces of the Cheddar in a slightly overlapping circle. Repeat two more times. Top with the remaining quarter of the potatoes so that all of the cheese is covered. Bake until the potatoes are a dark golden brown, crispy on top and a paring knife can easily be inserted and removed into the center of the dome, about 1 hour 20 minutes. Let rest for 10 minutes. Run a small offset spatula around the edges of the pan to help loosen the potatoes from the side. Invert onto a serving platter. Serve immediately.

I love twice baked potatoes, but I wanted to be able to serve them more easily so I decided to put them in muffin pans.

4 large baking potatoes, rinsed
1 1/2 cups cheddar cheese, shredded
1 medium onion, diced
1 1/2 cups sour cream
1/2 lb bacon, cooked drained and chopped
thyme
coriander seed, ground
olive oil
kosher salt

Steps:

  • Heat oven to 375 F.
  • Poke holes in rinsed potatoes, rub with olive oil and salt, place on baking sheet and cook 60-70 minutes.
  • While potatoes are cooking prepare the bacon as you normally would
  • Dice onions.
  • When potatoes are done cooking, remove from oven and allow to cool 15-20 minutes or until you can handle them comfortably.
  • Once potatoes have cooled cut them in half and scoop out the flesh into a large mixing bowl. (You can save half the skins to mix as well if you wish; be sure to coarsely chop the skins before placing them in the mixing bowl).
  • Turn oven back on to 350F.
  • Mix cheese, sour cream, bacon, and onions into the potatoes with a spoon or electric mixer.
  • Line muffin pan with cupcake/muffin liners and scoop mixture into liners.
  • Sprinkle with thyme and ground corriander.
  • Place muffin pan into 350F oven for 20-25 minutes or until tops of "muffins" are browned.
