- Preheat oven to 425 degrees. Generously butter a rimmed baking sheet.
- Halve squash crosswise. Scoop out seeds; discard. Slice a small piece off bottom of each squash half just enough to level.
- Set squash halves, scooped sides down, on prepared sheet. Bake until golden, 20 to 25 minutes. Turn squash; prick insides all over with a fork. Divide 2 tablespoons butter and sugar among halves; season with salt and pepper. Continue to bake until flesh is easily pierced with the tip of a paring knife, 25 to 30 minutes. Serve warm.

- Preheat oven to 450˚F.
- Cover 1 half-size cookie sheet with aluminum foil (non-stick foil is my favorite) or a silicone baking mat.
- Pour 1 tablespoon of olive oil onto sheet. Dump sliced squash onto covered sheet and "stir-it-up" with your hands to coat all the squash with oil.
- Arrange sliced yellow squash on prepared cookie sheet so they generally are not overlapping.
- Season with salt and pepper. Sprinkle with Parmesan cheese.
- Bake for 15-20 minutes until cheese is browned.

- Grease a baking sheet and a baking dish.
- Halve the squash lengthwise and clean.
- Transfer the squash, cut side down, to the baking sheet, and bake the squash until it is tender, about 45 minutes.
- Don't turn off the oven.
- While the squash cooks, melt the butter, and stir in the remaining ingredients.
- Keep the mixture warm until it is needed.
- Arrange the squash, cut sides up, in the baking dish.
- Spoon the butter and seasonings equally over the sections.

- Place an oven rack in the center position of the oven. Preheat the oven to 425°F. Line a baking sheet with foil (lightly misted with nonstick cooking spray) OR parchment paper.
- Wash and dry the squash, and then cut each one into 1/4-inch thick slices. Arrange the squash rounds on the prepared pan, with little to no space between them. Lightly sprinkle the squash with garlic salt and freshly ground black pepper. Use a small spoon to spread a thin layer of Parmesan cheese on each slice of squash.
- Bake for 15 to 20 minutes, or until the Parmesan melts and turns a light golden brown. (Watch these closely the first time you make them and pull them out of the oven early if the Parmesan is golden before 15 minutes. - Pre-heat oven to 400 degrees.
- Cut yellow squash in half lengthwise.
- With a spoon, scrape flesh and seeds of squash into a large bowl, making boats.
- In a pan sauté onion and garlic over medium heat with a dash of olive oil.
- Add the squash that was removed from the boats and season with kosher salt and pepper.

I'm always on the lookout for interesting recipes for my catering business, and for myself, family, and friends. I've got some Summer squash in the garden, and this is a perfect recipe to put together for one... or for a crowd. The ingredients are simple, and the taste amazing... I just love the nice crunch the panko...

- 1. PREP/PREPARE
- 2. Gather your ingredients.
- 3. Wash, and cut the squash into 1/4-inch (.6 cm) rounds.
- 4. Chef's Tip: If the skins on the squash are a bit thick, you might peel them first.
- 5. Toss the squash rounds with the olive oil, and allow them to sit for 10 minutes.
- 6. In a separate bowl, add the Parmesan cheese, panko breadcrumbs, paprika and salt and pepper (to taste), and thoroughly combine.
- 7. Place a rack in the lower position, and preheat the oven to 355f (180c).
- 8. Add the squash to a small ovenproof baking dish.
- 9. Add the breadcrumb/Parmesan mix to the top.
- 10. Cover with foil.
- 11. Place in the preheated oven for 20 minutes.
- 12. Remove the foil and continue to bake until the top of the squash begins to brown, about an additional 5 - 7 minutes.
- 13. PLATE/PRESENT
- 14. Serve with your favorite protein, or just relish on their own. Enjoy

- 1. Cut tips off squash. Cut each onto 3 or 4 pieces. Put into pan with enough boiling water to cover. Cook until tender. Drain squash and mash. - Grab whatever you can find at the farmer’s market or store! You really can’t go wrong. You want it to feel solid and not mushy.
