This easy recipe for tilapia only takes a few minutes to prepare, uses few ingredients, and is flavorful. Use fresh minced garlic instead of garlic powder to make it healthier.

4 (4 ounce) fillets tilapia
¼ teaspoon seafood seasoning (such as Old Bay®)
2 teaspoons butter
1 clove garlic, minced
1 lemon, sliced
1 (16 ounce) package frozen cauliflower with broccoli and red pepper
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees F). Lightly grease a 9x13-inch baking dish.
  • Place tilapia fillets in the bottom of the baking dish and season with seafood seasoning. Melt butter with garlic in a small bowl in the microwave, about 30 seconds on medium; pour over fish. Top each fillet with a slice or two of lemon. Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper. Cover the dish with aluminum foil.
  • Bake in the preheated oven until vegetables are tender and fish flakes easily with a fork, 25 to 30 minutes.

Steps:

  • Place tilapia in an ungreased 13x9-in. baking dish. In a small bowl, combine the butter, lemon juice, garlic powder and salt; pour over the fillets. Sprinkle with capers, oregano and paprika., Bake, uncovered, at 425° until fish just begins to flake easily with a fork, 10-15 minutes.

My friend got this recipe off of Epicurious where it is touted as Tori Amos' favorite recipe. It is certainly popular with our husbands. It has a spicy sweetness to it. We live in too small of a town to find banana leaves so it is parchment paper for us. Coconut rice.makes a nice accompaniment.

2 garlic cloves, peeled and finely chopped (or grated)
2 green onions, finely chopped (green part only)

2 tablespoons grapeseed oil (or safflower)
1 dash toasted sesame oil
1 dash soy sauce
1 dash fish sauce
4 teaspoons dark maple syrup
4 (4 ounce) fresh tilapia fillets (or other firm-fleshed whitefish)
4 large banana leaves (or unbleached parchment paper)

Steps:

  • Preheat oven to 400°F
  • Combine all topping ingredients in a bowl.
  • Season with salt and pepper to taste.
  • Place a fillet on each banana leaf and divide topping evenly among them, spreading it over the top.
  • Fold each banana leaf over to form a packet around each fillet and seal the edge of each packet with a small piece of aluminum foil, crimping it tightly. Place on a baking sheet and bake 25 to 30 minutes.

¾ tablespoon salt
1 large egg, lightly beaten
1 tablespoon milk
4 (4 ounce) tilapia fillets, halved
2 tablespoons canola oil

Steps:

  • Combine panko, parsley, and salt on a dinner plate. Mix egg and milk together in a bowl.
  • Dip fillets into the milk mixture and shake off excess. Lightly dredge in panko mixture.

1 teaspoon minced garlic
1 cup all-purpose flour
2 large eggs
1 cup Italian-seasoned dry bread crumbs
3 tablespoons grated Parmesan cheese
4 each tilapia fillets

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place butter and garlic into an 8x8-inch microwave-safe baking pan and microwave until butter is melted, about 30 seconds.
  • Place flour in a bowl. Beat eggs together in another bowl. Mix bread crumbs and Parmesan cheese together in a third bowl.
  • Dip fillets in flour until lightly coated, then into beaten eggs, then into bread crumb mixture. Lay in the baking dish with the garlic-butter mixture.

5 tilapia fillets
1 1/2 cups breadcrumbs
1/2 cup parmesan cheese (grated)
1 tablespoon fresh parsley (chopped)
1 tablespoon all purpose Greek seasoning
2 tablespoons olive oil
1 egg
2 tablespoons milk
salt
pepper
4 grape tomatoes

Steps:

  • heat olive oil in medium to large pan (around medium heat, depending on gas/electric).
  • combine breadcrumbs, cheese, parsley, greek seasoning, salt, pepper into shallow dish.
  • mix milk and egg in another shallow dish.
  • put fish in milk and egg mix; then dip in breadcrumbs.
  • cook roughly 3-4 mins on each side.
  • towards the end of the fish being done; quarter grape tomatoes; sprinkle a bit more of the Greek seasoning if necessary.
  • Serve and enjoy!

Steps:

  • Coat bottom of a 13x9" baking dish with half of the olive oil.
  • Cut mushrooms into halves and place in dish.
  • Cut onions into rings and spread them over mushrooms.
  • Give the contents of pan a good sprinkle of cajun seasoning.
  • Top with the fillets in a single layer (some overlap won't hurt).
  • Drizzle them with remaining oil and give the whole thing another shake of cajun spice.
  • Bake in 400 degree oven 15-20 minutes or until bubbly.
  • I usually use a little more olive oil because the juice is great for dipping.

1/4 cup onion, chopped
1/4 cup sweet red pepper, chopped
3 tablespoons butter
3 tablespoons flour
salt and pepper
1 teaspoon fresh tarragon
1 teaspoon fresh basil
1/4 cup milk
1 cup mozzarella cheese, shredded

Steps:

  • Saute the celery, onions and bell pepper in butter until the vegetables soften.
  • Add flour, salt, pepper, tarragon, basil, and milk, stirring until blended.
  • Cook sauce until it thickens, stirring constantly.
  • Lower the heat and add cheese, stirring until the cheese just melts. Do NOT boil the cheese or it will get stringy.
  • Rinse the tilapia fillets in cold salted water, then drain and pat dry.
