A traditional South African recipe, perfect to bake with the kids- banana bread!

125 ml (1/2 cup) butter/margarine
125-250 ml (1/2 - 1 cup) sugar(your preference)
2 eggs
500 ml (2 cups) flour(cake or all-purpose or half wholewheat flour for a healthier version)
10 ml (2 teaspoons) baking powder
2.5 ml (1/4 teaspoon) salt
4-6 ripe bananas, mashed 400g (1 3/4 cup)
2.5ml (1/2 teaspoon) cinnamon
5 ml (1 teaspoon) vanilla essence(optional)
Crushed pecan nuts(optional)

Steps:

  • Preheat the oven to 180'C (350′ F).
  • Use a small bread pan, sprayed with non-stick spray.
  • Beat butter and sugar until creamy. Add essence.
  • Add eggs one by one and beat well.
  • Add dry ingredients.
  • Add bananas(and nuts/essence/cinnamon) and mix well.
  • Add to pan.
  • Bake for an hour or until baked through.
  • Serve with butter.

1/4 lb butter or 1/4 lb margarine
2 eggs, separated
1/2 cup white sugar
3 mashed bananas
1 teaspoon vanilla
1 tablespoon milk
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 teaspoon salt
3/4 cup chocolate chips (and/or nuts, or anything else you would like) (optional)

Steps:

  • cream butter.
  • beat in sugar.
  • mix in egg yolks.
  • mix in bananas, milk, vanilla.
  • mix dry ingredients (flour, spices, salt, soda, powder) in a separate bowl and then mix into butter/sugar/banana mixture beat egg whites until frothy, then fold into batter.
  • put batter into greased loaf pan (or an 8x10" pan will work also).
  • bake at 350º for about an hour (35 mins. for 8x10 pan) or until golden brown, and deliciously warm from the oven.

1 cup crushed bananas (about 4 bananas)
2 cups flour (500 ml)
2 teaspoon baking powder
¼ teaspoon salt
2 tablespoons milk

Steps:

  • Cream the butter and sugar.
  • Add the eggs (one at a time) and mix well.
  • Add the vanilla essence and crushed bananas.
  • Add the flour, baking powder and salt. Then, add the milk.
  • Bake at 180°C for about 1 hour.

2 eggs, lightly beaten
1/2 cup cold milk
3 tablespoons light brown sugar
1 cup flour
1 pinch baking soda
4 ripe bananas, sliced diagonally into 1/4-inch pieces
2 tablespoons confectioners' sugar
peanut oil, for frying

Steps:

  • Heat 3 inches of oil in a heavy saucepan or deep fryer to 375 degrees.
  • Mix the eggs, milk, brown sugar, flour, and baking soda together in a medium-sized bowl.
  • Add the banana slices a few at a time, coating them well with the batter.
  • With a long slotted spoon remove the banana slices a few at a time and place them into the oil.
  • Fry the bananas for 2 to 3 minutes, until lightly browned, turning them once. Drain them on paper towels and transfer them to a serving platter.
  • Repeat the process until all of the bananas have been fried.
  • Sprinkle them with the confectioners' sugar and serve warm.

2 tablespoons vegetable oil

1 tablespoon ground cardamom
½ teaspoon ground cloves
2 cups dark beer
1 ½ cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5-inch loaf pans.
  • In a large bowl, mix the brown sugar, banana, eggs, and vanilla. For moister bread, add oil, if desired.
  • In a separate bowl, sift together 3 cups flour, baking soda, salt, cinnamon, all spice, cardamom, and cloves. Alternately blend the flour mixture and beer into the banana mixture.
