BANANA NUT BARS
My sister gave me this recipe, which is always in demand with family, friends and co-workers. It's amazing how fast these tempting bars vanish when I serve them! The cream cheese frosting is heavenly.

- In a small saucepan, bring butter and water to a boil. Remove from the heat; set aside. In a large bowl, beat the sugars, bananas, buttermilk, eggs and vanilla until blended. Combine flour and baking soda; gradually add to sugar mixture. Beat in butter mixture until blended. Stir in nuts., Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For frosting, in a large bowl, beat cream cheese and butter until light and fluffy. Beat in vanilla. Gradually add confectioners' sugar until smooth. Spread over bars. Store in the refrigerator.

Steps:
- In a saucepan, bring butter and water to a boil.
- Remove from heat; set aside.
- In a mixing bowl, combine the flour, sugars, baking soda, eggs, bananas, buttermilk, and vanilla.
- Beat until blended.
- Carefully add butter mixture; mix well.
- Stir in nuts.
- Pour into greased 15x10x1 inch baking pan.
- Bake at 350 degrees for 18-22 minutes or until a toothpick inserted near the center comes out clean.
- Cool on a wire rack.
- For frosting, in a mixing bowl, beat cream cheese and butter until light and fluffy.
- Beat in vanilla.
- Gradually add confectioners' sugar.
- Spread over bars.
- Store in fridge.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
- Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour, baking powder, salt, baking soda and spices. Combine bananas and milk. Add the dry ingredients to creamed mixture alternately with banana mixture. Stir in nuts. , Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For glaze, in a small bowl, cream butter and sugar until light and fluffy. - Spray 13x9-inch pan with cooking spray. In large microwavable bowl, microwave margarine uncovered on High 30 to 45 seconds or until melted. Add marshmallows; toss until coated. Microwave uncovered on High 1 minute 15 seconds to 1 minute 45 seconds, stirring every 30 seconds, until mixture can be stirred smooth.
- Stir in cereal and sunflower nuts until well blended. Press evenly in pan.
- In small microwavable bowl, microwave chocolate chips and oil uncovered on High 45 to 60 seconds, stirring very 15 seconds, until melted and smooth. Drizzle over bars.
- Cool 1 hour or until glaze is set. For bars, cut into 6 rows by 4 rows. Store loosely covered.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the shortening and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, baking soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Let bars cool in the pan on a wire rack.
- To make the frosting: In a medium bowl, mix together the melted butter, 1 teaspoon vanilla, confectioners' sugar, 1/2 banana, 1/2 teaspoon of salt and 1/4 teaspoon lemon juice using an electric mixer. Beat until smooth. Spread over cooled bars and then cut into squares.

- In large bowl, mix granulated sugar, bananas, oil, and eggs with spoon.

- Preheat the oven to 350F/177C. Line the bottom and sides of a brownie pan; mine is about 13x7-inches (33x17-cm) in size.
- In a large mixing bowl, beat together the softened butter, sugar and vanilla for 2 to 3 minutes, until the mixture is creamy. Add the eggs and mix again for 1 minute. Peel the bananas and crush them using a large fork or food processor. Add the banana puree to the batter and fold it in.
- In a separate bowl, combine the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg and salt. Sift the dry ingredients into the batter and fold gently just until the flour is incorporated, then fold in the pecans. Transfer the batter into the prepared pan and spread it evenly to the edges using an off-set spatula.
- Bake the banana nut bars for 30 to 35 minutes, until golden brown on top and a toothpick inserted into the center comes out clean. Remove the bread from the oven and cool completely on a wire rack.
