1 pound dried lima beans
6 cups water
1-1/2 cups chopped onions
1 teaspoon salt
1 cup ketchup
3/4 cup packed brown sugar
1/3 cup pancake syrup
1/4 teaspoon hot pepper sauce
4 bacon strips, cooked and crumbled

Steps:

  • Place beans in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding water. Return beans to the saucepan. Add 6 cups water, onions and salt; mix well. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 1-3/4 hours or until beans are tender., Drain and discard liquid. Stir in the ketchup, brown sugar, syrup, hot pepper sauce and bacon. Transfer to an ungreased 2-qt. baking dish or bean pot. Cover and bake at 350° for 30 minutes. Uncover and bake 30 minutes longer or until bubbly.

Slow simmered lima beans that are buttery and creamy just like you get at Cracker Barrel or other southern country restaurants. Homestyle with ham or bacon.

1/3 cup butter
3 cloves garlic (minced)
1 1/2 cup diced ham
2 pounds frozen lima beans
4 cups water
1/2 tsp salt

Steps:

  • Melt butter over medium heat in a pot of dutch oven.
  • Add the garlic and ham. Sauté for 5 minutes.
  • Add the rest of the ingredients. Bring to a boil and then lower the heat to a simmer.
  • Continue to let simmer with it just barley boiling for about 75 minutes or until the beans are soft and most of the water is absorbed into beans or evaporated. There should only be 1-2 cups water left and it should have thickened somewhat.
  • Serve

1/2 lb bacon or 1/2 lb salt pork, chopped,cooked crisp and drained
1 (14 1/2 ounce) can tomato soup
1 large onion, chopped
1 green bell pepper, chopped
1 cup packed brown sugar
1/4 cup ketchup
1 tablespoon dry mustard
1 tablespoon Worcestershire sauce

Steps:

  • Wash beans; sort.
  • Soak beans in water to cover in a large bowl 8-12 hours.
  • Transfer beans and soaking water to a large saucepan.
  • Heat to boil over medium-high heat.
  • Reduce heat to medium-low; simmer 1 hour.
  • Drain.
  • Heat oven to 350°F.

Steps:

  • Place the lima beans into a large container and cover with several inches of warm water; let stand 1 hour. Drain.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Add the ham hocks and return to a boil; cook at a boil for 1 minute. Drain and rinse.

1 ham bone with some meat
8 cups water, or more as needed
1 tablespoon olive oil
4 stalks celery, diced
1 onion, diced
½ pound diced cooked ham
4 carrots, peeled and sliced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried parsley

Steps:

  • Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.

You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.
