SUPER EASY LAZY STUFFED CABBAGE CASSEROLE
Tastes like the real thing without all the work. Took the idea from recipe & comments from recipe # 72409 and made some changes and came up with this dish. It was a surprisingly good and a super easy one dish meal.

Steps:
- Preheat oven to 350.
- Spray 13 x 9 pan with Pam.
- Mix Tomato soup, 1/2 soup can of water and diced tomatoes together in a bowl until blended.
- Place a layer of chopped cabbage on bottom of pan (about 1/2).
- Put 1/2 of chopped onions over cabbage.
- Crumble 1/2 of raw Ground Sirloin over onions and cabbage.
- Season with Salt, Pepper and Garlic Powder.
- Sprinkle 1/2 of Uncooked rice over this layer.
- Pour 1/2 of Tomato mixture over this layer.
- Repeat layers, ending with Rice and tomato mixture on top.
- Cover with foil.
- Bake for 1 hour covered, uncover and bake until liquid is reduced to your personal taste.
- We like ours with some juice.
- Served with fresh baked bread and butter, great comfort food on a cold (for Florida) night.

POLISH STUFFED CABBAGE
Stuffed cabbage rolls. I am 100 percent Polish, and this is my mom's recipe. Use regular rice, not instant.

- Place the head of cabbage in a large pot over high heat and add water to cover. Boil cabbage for 15 minutes, or until it is pliable and soft. Drain and allow to cool completely. Remove the hard outer vein from the leaves.
- In a separate large bowl, combine the beef, rice, garlic powder and the egg, mixing well. Place a small amount, about the size of your palm, into the center of a cabbage leaf and fold leaf over, tucking in the sides of the leaf to keep meat mixture inside.
- Pile up the filled leaves in a large pot, putting the larger leaves on the bottom. Add the tomato juice, vinegar and sugar and enough water to cover. Simmer over medium low heat for about 60 minutes. (Note: Keep an eye on them, making sure the bottom of leaves do not burn.)

- Place first 8 ingredients in a 5- or 6-qt. slow cooker. Add cabbage. Cook, covered, on low until lentils are tender, 6-8 hours., Stir in mushrooms and salt. Cook, covered, on low until mushrooms are tender, 15-20 minutes. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

HUNGARIAN STUFFED CABBAGE

- To make filling: Combine ground meats, onion, rice [uncooked], egg, salt, pepper and paprika.
- Cabbage: Fill large pot with enough water to cover cabbage. Bring water to a boil. Trim any damaged outer leaves from cabbage. Stick a large fork into core of cabbage, and place in boiling water, holding onto fork. With a small sharp knife, loosen and remove outer leaves as they become soft and pliable. Chop remaining cabbage, that is too small to roll, set aside.
- Alternatively, cabbage can be placed in a large bowl and covered with boiling water for about 5 minutes-this process can be repeated if necessary.
- Rolls: cut off thick edge of the stem. Put about 2 tablespoons of filling on a leaf, fold sides in and roll from thick end of leaf.
- Assembly: Place1/2 tomato paste. if using on bottom of pan, or cover bottom of pan with some tomatoes or tomato juice. Place rolls, seam side down in the pot. Add sauerkraut , tomatoes and remaining chopped cabbage. Repeat layering process, leaving layer of tomatoes and sauerkraut on top. If using paste, fill pot with water til rolls are covered. If using tomatoes or juice, water may be added too.
- Bring pot to boiling, cover tightly and simmer gently for 11/2-2hours or til cabbage is tender.
- Measure out 1 cup of cooking liquid. Mix 2 tablespoons of melted shortening or oil and 2 tablespoons of flour in saucepan. Gradually add the cooking liquid. Bring to boiling, stirring constantly, until sauce thickens and bubbles for 1 minute. Pour over cabbage in pot; simmer 5 minutes.
- Best served the next day. Great with mashed potatoes and seeded rye bread.
- Can be prepared in slow cooker on low for 6-8hours.
- Canned tomatoes or tomato juice can be substituted for paste.

- Cook barley according to package directions.
- Pull off and discard any wilted or coarse outer cabbage leaves.
- Cut out core to a depth of about 3 inches.
- Parboil cabbage in a large kettle of salted boiling water for about 15 mins, or until leaves are soft enough to be pliable.
- Carefully cut out the tough part of the rib from each leaf.
- Saute onion in shortening until soft. Add mushrooms and lemon juice; saute 3 minutes
- Season with paprika, salt and pepper. Add cooked barley and parsley and mix well.
- Spoon 1 or more large spoonfuls of stuffing onto each leaf, the exact amount depending on the leaf's size.
- Roll up and fold in edges to securely enclose stuffing. Secure with toothpicks or tie with string.
- Place in a kettle. Cover with bouillon and cook slowly, covered, about 1 1/2 hours, or until leaves are tender.
- Remove stuffed leaves and keep warm. Stir flour into drippings and cook, stirring, until smooth.
- Add sour cream and dill and heat through. Pour sauce over stuffed leaves.

- Steam cabbage head 8 minutes; cool slightly. Remove 16 leaves from cabbage head; discard remaining cabbage. - Cut the core from the cabbage. Bring a very large amount of water to a boil in a deep stockpot and carefully drop the whole head of cabbage into the boiling water. Parboil for 10 to 15 minutes, until leaves are soft and pliable. Remove head of cabbage from water with a two-pronged fork inserted into the coring hole, with a wide spatula for supporting the bottom. Drain and let cool.
- When cabbage has cooled, carefully separate the leaves and stack them together. With a small, sharp knife cut and remove an inverted "V" out from the thick part of the ribs, so the leaves will lie flat.
- Melt the butter in a nonstick pan and saute the onions until wilted Add the mushrooms and barley and cook for 3 minutes. Add lemon juice through parsley and cook for 1 minute, then set aside to cool.
- Spoon about 1 tablespoon of the filling onto the center of each cabbage leaf; smaller leaves take less, larger leaves take more. Fold the sides of each leaf over the filling first, then roll up from the cut stem side to enclose the filling, like making a loose burrito. Do not over-fill, or roll too tightly, or they will burst from the expansion while cooking!
- Place the rolls seam-side-down in one layer in a large skillet or saute pan with deep sides. Slowly pour the hot stock around the rolls, cover, and simmer over very low heat for 1 hour and 15 minutes.
- Remove the rolls and place them in one layer on a serving platter and keep them warm while preparing the sauce.
- Pour the remaining cooking liquid into a cup; there should be about 1/3 cup. Strain the liquid, wipe out the skillet, and return the strained liquid to it. Stir in the sour cream and the dill. Cook over very low heat, stirring, for 2 minutes. Spoon the sauce over the cabbage rolls and serve at once.
