HOW TO MAKE BUTTERMILK CHICKEN TENDERS



How To Make Buttermilk Chicken Tenders image

2 boneless skinless chicken breasts (4oz each)
2 cups all purpose flour
2 eggs
1 cup buttermilk
1 tablespoon season salt
1 tablespoon paprika
1 tablespoon parsley flakes
Vegetable oil (about 2 cups)

Steps:

  • Place chicken breasts in between 2 pieces of plastic wrap and pound to even thickness of about about 1/2″. Then cut into strips of about an inch thick. Place in a bowl with buttermilk and let sit in refrigerator for about an hour.
  • In a large bowl, combine flour, season salt, paprika and parsley flakes. In another bowl, beat two eggs.
  • In a deep frying pan, heat oil to about 350 degrees F (medium heat for about 5 minutes).
  • Remove chicken strips from buttermilk, dredge in flour mix, the eggs, then back through flour. Set aside on a paper plate until complete.
  • Carefully place coated chicken into pan with hot oil. Fry for about 3-4 minutes, then flip pieces over for another 3 minutes or until golden brown. Internal temp should be 165 degrees F on an instant read thermometer.
  • Carefully remove chicken from oil and drain on paper towels.

1 (2 to 3 pound) whole chicken, cut into pieces
½ cup honey, warmed slightly
½ cup prepared mustard
½ teaspoon ground nutmeg

Steps:

  • In a small bowl combine the warm honey, mustard and nutmeg and mix until well blended. Smear onto the chicken pieces, coating well. Refrigerated and let sit for 1/2 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven for 30 minutes, or until done and chicken juices run clear. You can also grill or broil for 30 minutes, turning chicken pieces after 15 minutes of cooking.

60 ounces chicken broth
6 chicken legs
2 large idaho potatoes (peeled and cubed)
4 large mushrooms (cut thin)
1 large onion (cut thin)
1/8 cup diced scallion
1/8 cup fresh cilantro
1 tablespoon chili oil
1 tablespoon salt
1 teaspoon red pepper
1 dash basil
1 dash oregano
1 dash black pepper

Steps:

  • Puree potatoes in blender with chicken broth.
  • Pour broth into large pot.
  • Place all remaining ingridients in pot.
  • Cook until boiling.
  • Let boil for five minutes.
  • Place heat on low for 1/5- 2 hours.
  • Enjoy.

1 -2 chicken, cut into pieces
1 lb margarine
1/2 cup dried parsley flakes
3 cloves garlic, pressed
1/2 teaspoon rosemary
1/4 teaspoon thyme
1/2 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon Tabasco sauce
1/2 teaspoon Worcestershire sauce
1 tablespoon minced onion

Steps:

  • Prepare the chicken as indicated then wash in cold water and dry with paper towels.
  • In medium size saucepan, melt the margarine over a medium low heat, adding all of the other ingredients.
  • The reason for using margarine instead of butter is to reduce the burning while cooking.
  • When the mixture has heated through, let the mixture set awhile to let the flavors “marry”.
  • Make sure your charcoal is gray-white before starting to grill.
  • One other implement is needed-- a bottle of water to douse the flames (and there will be flames).
  • Dip each piece of chicken into the sauce until covered than place on the grill about 10 inches from the coal.
  • You will have flame-ups, but don’t worry about it, that is normal-just keep dousing with water and you will have lots of smoke.
  • The smoke is the real secret to the great flavor.
  • Let the chicken cook for about 45 minutes, turning and dipping in the sauce about every 5 minutes or so.
  • This recipe requires constant attention- don’t walk away.
