CHEESY MEATBALL BISCUIT BOMBS
Wrap refrigerated biscuits around purchased meatballs for a super-easy, crowd-pleasing appetizer.

Steps:
- Heat oven to 375°F. Separate dough into 10 biscuits. Separate each biscuit into 2 layers. Press each biscuit layer into 3-inch round.
- Place 1 meatball half, cut side up, and 1 string cheese piece in center of each dough round. Wrap dough around meatball and cheese, pressing edges to seal. In ungreased 8- or 9-inch round cake pan, place seam side down in single layer.
- Sprinkle evenly with Parmesan cheese, Italian seasoning and garlic powder.
- Bake 20 to 25 minutes or until golden brown and biscuits are no longer doughy in center. Serve warm biscuits with warm marinara sauce for dipping.

MEATBALL BUBBLE BISCUITS
These little biscuits have meatballs and cheese inside. Dip them in marinara sauce for a yummy snack. They would even be great as a side with soup. The layer type biscuits work best for this appetizer. I found this recipe in a Pillsbury cookbook. *****UPDATE*****Since posting, I have begun using my own homemade meatballs for this recipe (usually prepared the day before and refrigerated until needed). I had purchased a bag of ready-made meatballs that weren't the best quality and was really unhappy with the results for the appetizer. Just thought I would pass on the info...

MEATBALL-STUFFED BISCUITS

- For the meatballs: Combine the breadcrumbs and milk in a large bowl and let sit for 5 minutes. Add the pork, Parmesan, salt, fennel seeds, garlic, onion, paprika, crushed red pepper, egg, parsley and a few turns of black pepper and mix to combine. It's easiest to do this with your hands. Form into 16 balls, each about 1 1/2 inches in diameter.
- Heat a thin layer of oil in a skillet over medium-high heat and cook the meatballs in batches, turning occasionally, until browned on all sides, about 8 minutes. Set aside to cool slightly.
- For the biscuits: Preheat the oven to 375 degrees F.
- Flatten each biscuit with your palm, add a half piece of mozzarella and top with a meatball. Pinch the edges of the dough around each meatball to seal. Place seam-side down in a 9-inch square baking dish. Bake until lightly browned, about 30 minutes.
- Meanwhile, heat the butter and oil in a small saucepan over medium-low heat. Add the garlic and crushed red pepper and cook for 2 minutes.
- When the biscuits have baked for 30 minutes, brush them with the butter mixture, sprinkle with the parsley, Parmesan and some flaky salt and continue to bake until golden and cooked through, 5 to 10 more minutes. Let cool slightly and serve with warm marinara for dipping.
STUFFED MEATBALLS
Steps:
- Preheat the oven to 350 degrees F.
- Combine the ground meat with the eggs and mix well. Add the meat mixture and breadcrumbs to the bowl of a small stand mixer fitted with a paddle attachment and mix until well combined. Add the Parmesan, parsley, garlic powder, salt and pepper and mix on medium speed for 3 minutes (do not over mix). Scoop out 18 meatballs using an ice-cream scoop (or form the meatballs to ice-cream-scoop size). Mix the mozzarella, capicola, provolone, ham and salami in a mixing bowl. Stuff each meatball by making a hole in the middle and placing 1 tablespoon of the meat-and-cheese mixture in the center. Seal the meatballs well by pinching them back together. Bake, covered with foil, 45 minutes.
BISCUIT-WRAPPED MEATBALLS

- Heat oven to 450°F.
- If meatballs are frozen, heat them briefly 1 to 2 minutes in the microwave so they're just thawed. They don't need to be hot all the way through, since they'll be going in the oven.
- In medium bowl, stir together Bisquick™ mix and milk until it forms a dough. On surface lightly sprinkled with Bisquick™ mix, roll dough 1/4 inch thick. Use 3-inch round cutter to cut 12 circles. Wrap meatballs in dough circles; brush bottoms with melted butter, then arrange evenly in ungreased 8-inch square baking dish or 9 1/2-inch round pie plate. Brush tops and sides with remaining butter; sprinkle evenly with cheese.
- Bake at least 12 minutes until tops are slightly browned and dough is cooked through.
- Serve with tomato sauce for dipping.

- Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
- Mix ground beef, eggs, Parmesan cheese, parsley, bread crumbs, garlic, onion powder, salt, black pepper, oregano, and basil in a large bowl until thoroughly combined. Form meat mix into 2-inch meatballs.
- Wrap half a bacon slice around a meatball; turn the meatball around 45 degrees and wrap a second half-slice of bacon around the meatball so the meat is enclosed by bacon. Repeat, forming 12 meatballs and wrapping each one in 2 half-slices of bacon. Place wrapped meatballs onto the prepared baking sheet with seam sides down.

- Preheat oven to 375°. Coat metal muffin pan with nonstick spray. In medium mixing bowl, combine beef, onion, green pepper if desired, cereal, salt, pepper and egg. Set aside., In small bowl, stir together ketchup, brown sugar and mustard until smooth. Pour half of ketchup mixture into meat and mix until thoroughly combined. Form meat mixture into six balls and place in muffin cups. Spoon remaining ketchup mix over meatballs. Bake for 30 minutes. Remove from pan with spoon and serve.
