2 cans (15-1/2 ounces each) black-eyed peas, rinsed and drained
2 medium tomatoes, chopped
1 cup chopped green pepper
1/2 cup chopped red onion
4 green onions, sliced
1 garlic clove, minced
1 cup Italian salad dressing
1/4 cup sour cream
1/4 cup minced fresh parsley
Tortilla chips

Steps:

  • In a bowl, combine the first six ingredients. Combine the salad dressing, sour cream and parsley. Add to the pea mixture; toss to coat. Cover and refrigerate for at least 4 hours. Serve with tortilla chips.

1/3 c. White Wine (or Regular) Vinegar
2 tbsp. (to 3 Tablespoons) Sugar
1 tsp. Celery Seed
1/2 tsp. Dry Mustard
1/2 tsp. Salt
Freshly Ground Pepper, to taste

3 stalks Celery Finely Chopped
3 stalks Green Onions, Sliced
1 whole Red Bell Pepper, chopped
1 whole Cucumber, Peeled, Seeded, And Chopped
1 whole Jalapeno (optional), Seeded And Chopped
1 c. (or More If Desired) Chopped Cilantro
2 cans Black-eyed Peas, Drained

Steps:

  • Mix together dressing ingredients. Set aside.Combine all vegetables (except cilantro) with black eyed peas. Pour dressing over the top and gently stir together. Add cilantro and stir gently.Cover and refrigerate for at least an hour. Serve with tortilla chips.

1 cup olive oil
1 cup granulated sugar
1/2 cup cider vinegar
1 (14 ounce) can black-eyed peas, drained
1 (6 ounce) can white shoepeg corn, drained
1 (14 ounce) can black beans, drained
1 (4 ounce) jar pimientos, drained
1 (14 ounce) can canned jalapeno slices, drained & chopped
1 cup celery, choppped
1 small red onion, chopped

Steps:

  • Combine olive oil, granulated sugar and cider vinegar in a small saucepan. Simmer until all sugar is dissolved.
  • In a large bowl, combine the remaining ingredients.
  • Pour liquid mixture over bean mixture.
  • Refrigerate for 24 hours.

½ lime , zest and juice
2 tsp rapeseed oil
1 red onion , halved and sliced
1 garlic clove , finely grated

1 tsp mild chilli powder
½ tsp ground cinnamon
400g can black-eyed beans in water
2 tsp cocoa
1 tsp vegetable bouillon
1 tbsp tomato purée

Steps:

  • Tip all the salsa ingredients into a bowl and stir together.
  • For the mole, heat the oil in a non-stick pan, add the onion and garlic and fry stirring frequently until softened. Tip in the spices, stir then add the contents of the can of beans with the cocoa, bouillon and tomato purée. Cook, stirring frequently to make quite a thick sauce.
  • Spoon into shallow bowls, top with the salsa and serve.

1/3 cup white vinegar
1 teaspoon brown mustard
2 1/2 tablespoons sugar

4 stalks celery, finely chopped (leaves and bottom cut off)
3 green onions, sliced
1 red bell pepper, seeded and chopped
1 cucumber, peeled, seeded, and chopped
1 jalapeno (optional)
cilantro, chopped (to taste)
2 (12 ounce) cans black-eyed peas, drained and rinsed
8 ounces canned white corn, drained and rinsed

Steps:

  • 1. In a large bowl (because this makes a lot!), combine oil, vinegar, mustard, sugar, celery seed, salt, and pepper. Mix until well combined.
  • 2. Add celery, green onions, bell pepper, cucumber, jalapeno, and cilantro. Mix into dressing until well covered.
  • 3. Add the corn and peas (make sure the cans are drained and rinsed). Mix well.
  • 4. Cover and refrigerate for at least an hour, but it tastes better if you let it sit a little longer.
  • I will use this as a topping for grilled chicken, or you can eat it like a dip (by serving it with corn-chips). I've even added twisty pasta to it and made it into a pasta salad. Enjoy!
