cooking rice is very typical in Catalonia and Valencia.Black rice is very popular and, of coursem the name comes from the black colour of the rice. This recipe is from Catalonia (it's my mum recipes).

1 onion
1 green pepper
1 tomato
inks sacks from cuttlefish
1 garlic
parsley
water (2 parts for 1 part of rice)

Steps:

  • In a saucepan fry the garlic cloves, when taking the color removed. There throw, then the onion very thin and when it is softened a little, green pepper small cut. When the pepper is also a little softener, it pulled the cuttlefish. After a few minutes, you throw a bit of grated tomato and garlic (or garlic) and chopped parsley in a mortar.
  • Meanwhile, boil water on throws the sacks of ink. We must ensure that the water take a very black color.
  • When the sauce is well done, you throw the rice, give it a few tombs and pour the boiling water

Fluffy rices won't really work very well. I like to use raw (turbinado) sugar in this, but white or brown will also work.

4 -6 cups water
1 cup coconut milk
1/4-1/2 cup raw sugar
1/2 teaspoon salt (to taste)
sweetened flaked coconut (garnish)

Steps:

  • Rinse and drain rice, place in a large saucepan.
  • Add water to cover rice. Remove any rice grains that float to the top.
  • Bring to a boil over high heat, then lower heat to just keep a simmer.
  • Simmer about 45 minutes, uncovered, stirring occasionally, until rice is tender. Add more water if needed, or pour some off. You want the water level to be just below the level of the rice.
  • Add coconut milk, sugar, and salt, and continue cooking until a pudding consistency is reached.
  • Sprinkle shredded coconut over top, if desired. Serve warm.

Steps:

  • Preheat oven to 350°F. Cook rice in a medium saucepan of boiling salted water until tender, 35-40 minutes. Drain well, spread out on a plate or a rimmed baking sheet, and let cool.
  • Meanwhile, spread out walnuts on another rimmed baking sheet. Toast in oven, tossing once, until fragrant, 8-10 minutes. Let cool; chop.
  • Whisk lemon juice, vinegar, and agave in a small bowl. Whisking constantly, gradually drizzle in oil. Season vinaigrette with salt.

1 tablespoon extra-virgin olive oil
1 medium onion, finely diced
1 1/2 cups black rice
1/2 cup dry white wine
Kosher salt and freshly ground pepper
3/4 cup grated parmesan cheese
1/4 cup fresh basil leaves, thinly sliced

Steps:

  • Bring the broth to a simmer in a saucepan over medium-high heat; cover and keep warm.
  • Meanwhile, heat the olive oil in a large saucepan over medium heat. Add the onion and cook until soft, about 4 minutes. Add the rice and cook, stirring, 1 minute. Reduce the heat to medium low. Stir in the wine until the liquid is absorbed, about 3 minutes.
  • Ladle in 3/4 cup hot broth and cook, stirring constantly, until the liquid is absorbed, 6 to 7 minutes. Repeat with the remaining broth, adding 3/4 cup at a time, until the rice is tender but somewhat chewy, about 50 minutes.
  • Stir in 3/4 teaspoon salt, pepper to taste and 1/2 cup parmesan. Divide among bowls. Top with the remaining 1/4 cup parmesan and the basil.
