CHICKEN QUESADILLA RECIPE
This chicken quesadilla recipe is one of my favorites. It's a great way to use up leftover chicken and one of my favorite easy dinner recipes.

Steps:
- Add the oil to a frying pan and heat to medium. Fry the onions until they are soft. Remove them and set aside. If the chicken needs to be cooked, slice it thinly and fry until cooked through.
- Heat the oven to 350ºF.
- Lay each tortilla shell flat. Sprinkle 1/3 cup of the cheese over half of each tortilla, making sure the filling is all to one side of the tortilla. Top the cheese with 1/6 of the chicken, onions, peppers, chilies and chopped tomatoes. Fold the tortilla over the filling.
- Place the tortillas on an ungreased cookie sheet. Bake for 5 minutes or just until the cheese is melted.
- Serve whole or cut each quesadilla into wedges or strips, beginning the cuts from the center of the folded side.
- Top with any or all of sour cream, guacamole, salsa, chopped green onions and fresh cilantro.

MARGARITA CHICKEN QUESADILLAS
Margarita mix makes the chicken in these baked quesadillas fantastic! Cut into quarters to serve.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir margarita mix, lemon juice, lime juice, and garlic powder together in a large bowl.
- Heat vegetable oil in a large skillet over medium heat. Cook and stir chicken in the hot oil until no longer pink in the center and juices run clear, 5 to 7 minutes. Drain excess oil from chicken. Pour margarita mixture into the skillet with chicken; simmer until most of margarita mixture is evaporated, 15 to 20 minutes. Transfer and drain chicken to a paper towel-lined plate.
- Layer 4 tortillas with chicken, Cheddar cheese, and Monterey Jack cheese; top with remaining 4 tortillas. Place the prepared quesadillas, 1 or 2 at a time, on a large baking sheet.
- Bake quesadillas in the preheated oven until cheese is melted, about 15 minutes. Repeat with remaining quesadillas; cut into quarters to serve.

This is a great recipe for parties. I freeze the leftovers; they reheat quite well. The zesty chicken and cooked peppers are a succulent delight when mixed with the melted cheeses. Cut the quesadillas into wedges and serve with sour cream and salsa.

- Preheat the broiler. Grease a baking sheet.
- Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.

I guess this really isn't a recipe... I woke up one morning and was looking for something fast and easy to cook for lunch. I took out left over chicken (can be grilled or pan-fryed) and got to work. This turned out be a wonderful fast treat.

- Preheat the oven to 350 degrees.
- Cook the Chicken Breasts (grill or pan fry).
- Add all desired ingredients into a blender and blend on low until finely chopped and blended.
- On a slightly greased cookie sheet or pie dish, lay one tortilla down, and cover with chicken mixture from blender.
- Then place another tortilla on top and put in the oven for 5-10 minutes or until cheese is completely melted.

- Heat 1 tablespoon of the olive oil in a skillet over high heat. Sprinkle the chicken with salt, pepper and taco seasoning. Add the chicken to the skillet and saute over medium-high heat until done, about 4 minute per side. Remove from the skillet and dice into cubes. Set aside.
- Add the remaining 1 tablespoon olive oil to the skillet over high heat. Throw in the onions and peppers and cook until the peppers have a few dark brown/black areas, 3 to 4 minutes. Remove and set aside.
- Sizzle 1/2 tablespoon of the butter in a separate skillet or griddle over medium heat and lay a flour tortilla in the skillet. Then build the quesadillas by laying grated cheese on the bottom tortilla, and then arranging the chicken and cooked peppers. Top with a little more grated cheese and top with a second tortilla.
- When the tortilla is golden on the first side, carefully flip the quesadilla to the other side, adding another 1/2 tablespoon butter to the skillet at the same time. Continue cooking until the second side is golden. Repeat with the remaining tortillas and fillings.
- Cut each quesadilla into wedges and serve with Pico de Gallo.
- Dice up equal quantities of tomatoes and onions. Roughly chop the cilantro.
- Now, slice 1 or 2 jalapenos in half. With a spoon, scrape out the seeds. (If you like things spicy, leave in some of the white membranes.) Dice the jalapenos very finely; you want a hint of heat and jalapeno flavor, but you don't want to cause any fires. Now dump the four ingredients into a bowl.
- Slice the lime in half and squeeze the juice from half the lime into the bowl. Sprinkle with salt, and stir together until combined. Be sure to taste the pico de gallo and adjust the seasonings, adding salt or more diced jalapeno if needed.
ULTIMATE CHICKEN QUESADILLA

- 1. Spray large skillet with cooking spray; heat over medium heat. Add chicken and undrained tomatoes; cook 10 minutes or until chicken pieces are no longer pink in centers and liquid has evaporated, stirring frequently.
- 2. Spread chicken mixture evenly onto bottom half of each tortilla to within 1 inch of edge. Sprinkle 1/2 cup cheese over chicken mixture on each tortilla. Fold each tortilla in half to cover filling.
- 3. Clean skillet. Spray with additional cooking spray; heat over medium-high heat. Cook quesadillas 3 minutes on each side or until golden brown on both sides. Cut into wedges to serve.
GRILLED CHICKEN QUESADILLAS
So tasty and so easy! Authentic Mexican appetizer or snack... also great to make for company because it is so simple! Another favorite with company and fun to make with your kids! For variations you can add jalapeno peppers, use steak instead of chicken, or use anything else you may want to experiment with. You can even substitute the insides with pepperoni, mozzerella cheese, green peppers, onions, mushrooms.... Flatten as above and serve pizza sauce for dipping! Think I might try to make pizza quesadillas for my next appetizer now!

- Preheat panini grill.
- Sprinkle Chicken breasts with Natures Season and coat with oil. Brown both sides of chicken on panini press of flat grill.
- Slice chicken into small cubes and put in bowl.
- Spray bottom of one flour tortilla and put sprayed side down on large plate.
- Sprinkle generously with shredded mexican cheeses all the way to the edges.
- Top with diced chicken breasts.
- Top with sliced green onions.
- Top with cilantro.
- For added kick you can add jalapeno peppers if desired.
- Top with second flour tortilla.
- Spray top of shell with Pam.
- Carefully move whole quesadilla onto heated grill.
- Flatten.
- When cheese starts oozing out of sides take off carefully and put into plate.
- Cut into 8 equal triangles with pizza cutter.
- Serve on plate with taco sauce, guacamole, and sour cream.
- Watch them disappear!

- Heat 2 tablespoons butter in a saucepan over medium heat; cook and stir chicken, 1 packet sazon seasoning, and 1 teaspoon garlic salt, shredding chicken as it cooks until no longer pink in the center and juices run clear, 8 to 10 minutes.

- Heat a skillet over low heat.
- Spread a small amount of butter evenly over one side of tortilla and place tortilla buttered side down in the skillet.
