Was in the mood for something really quick and easy but flavorful and this is what I came up with. I hope you other blue cheese lovers like it too!

1/2 tablespoon butter
1 slice cooked bacon, crumbled
2 eggs
1 tablespoon light cream or 1 tablespoon milk
2 tablespoons blue cheese, crumbled
salt and pepper, to taste

Steps:

  • Melt butter in frying pan over medium heat. Add bacon and heat until sizzling. Meanwhile, whisk eggs and cream together in a small bowl. Pour over bacon.
  • Allow to cook until firm enough to flip. Cook until the underside is firm.
  • Sprinkle 1 1/2 Tbls. of blue cheese over half the omelette and fold the other half of the omelette over the top. Sprinkle remaining blue cheese over the top and sprinkle with salt and pepper.

This omelet is filled with toasted walnuts and sliced apple along with the Blue Cheese. MIL loves Blue Cheese so I wanted to post this recipe. Yields one man size omelet or cut in half for two smaller appetites.

2 tablespoons chopped walnuts
1 small sweet apple, peeled and sliced
4 tablespoons butter, divided
3 extra large eggs
1 tablespoon water
1 teaspoon salt
fresh ground pepper, to taste
1/8 teaspoon cinnamon
2 ounces good quality blue cheese

Steps:

  • Toast the walnuts in a preheated 300-degree oven for 15 minutes; set aside.
  • In a heavy skillet over medium heat, saute the apple slices in 2 tablespoons of butter until they begin to brown.
  • Remove from heat and reserve.
  • In a bowl, whisk together the eggs, water, salt, pepper and cinnamon.
  • Melt the remaining 2 tablespoons butter in a pan over medium-high heat.
  • When butter begins to foam, tilt pan to cover entire surface.
  • Quickly pour in the egg mixture and lift the edges of the omelet with a fork the moment the omelet begins to set, tilting the pan to allow the liquid egg to run under the omelet.
  • Work all the way around the pan, tilting in all directions to ensure an even thickness.
  • When only a little liquid egg remains on the surface of the omelet, distribute the cheese in a line down the center of the omelet.
  • Top the cheese with the walnuts and apples.
  • Using the fork, flip one-half of the omelet over the filling and slide the omelet out of the pan onto a warm plate.
  • Allow the omelet to rest for about 2 minutes for the cheese to melt and the flavors to blend.

1 tablespoon butter
2 eggs
2 teaspoons water
freshly ground black pepper
1 tablespoon butter
1/2 small green apple, cored and thinly sliced
1/4 cup crumbled blue cheese
1 teaspoon snipped fresh chives

Steps:

  • To make filling, melt butter in a small skillet and cook apple over a low heat for 2-3 minutes or until just heated through.
  • Remove pan from heat; set aside and keep warm.
  • To make omelet, melt butter in a small skillet.
  • Place eggs, water and black pepper to taste in a small bowl and whisk to combine.
  • Pour egg mixture into pan and cook over medium heat, continually drawing in the edge of the omelet with a fork during cooking, until no liquid remains, and the omelet is lightly set.
  • Top half of the omelet with apple slices, cheese, and chives and fold in half.
  • Slip onto a plate and serve immediately.

1 organic large egg
1 teaspoon whole milk or water
1 tablespoon cheddar cheese, shredded (you can use other types of cheese)
1 teaspoon butter or oil

Steps:

  • Whisk the egg and milk in a bowl with a fork until thoroughly combined.
  • Melt butter in a 6 or 8-inch omelette pan over medium heat (approximately 30 seconds) making sure it coats the bottom of the pan. As soon as the butter stops bubbling (and before it starts to brown) slowly pour in the egg mixture.
  • Pour in the egg mixture tilting the pan to spread it evenly. Let the egg firm up a little, and after about ten-seconds shake the pan a bit and use a spatula to gently direct the mixture away from the sides and into the middle. Allow the remaining liquid to then flow into the space left at the sides of the pan.
  • Continue to cook for another minute or so until the egg mixture holds together. Do not let the underside of the eggs brown.
  • Sprinkle the top with the shredded cheese and with a spatula; gently fold the omelette in a half moon shape.
  • Continue to cook another 30 seconds or until the omelette is thoroughly cooked through.
  • Cool, cut into bite size pieces and serve.

1 tablespoon milk, or as needed
salt and freshly ground white pepper to taste
2 tablespoons butter
¼ cup shredded Emmentaler cheese

Steps:

  • Beat eggs in a bowl with a whisk. Add milk and season with salt and white pepper. Whisk for a few minutes until egg mixture is foamy; beating in air makes the omelette fluffy.
  • Melt butter in a small, nonstick skillet over medium-low heat. Pour in egg mixture and twirl skillet so bottom is evenly covered with egg. Cook for 1 minute until egg starts to set. Lift edges with a spatula and tilt the skillet so uncooked egg mixture can run towards the bottom of the skillet to set. Repeat until no visible liquid egg remains.
  • Carefully flip omelette and cook for another 30 seconds to 1 minute. Sprinkle Emmentaler cheese in one line in the middle of the omelette and fold omelette in half. Cook for 20 seconds, then slide omelette onto plate.

After countless omelettes turning into scrambled eggs...I finally mastered this egg thing. This is simple, yet delicious!

2 eggs
salt
pepper
1 tablespoon butter
1 tablespoon water
2 slices deluxe American cheese (Kraft)

Steps:

  • Melt butter in 10" non-stick pan.
  • Whip eggs and water well with fork or whip. Add salt and pepper.
  • Stir.
  • Once butter melted, add egg mixture.
  • In first 30 seconds make a few slits with spatula to allow eggs to cook in center.
  • Over MED-HI heat tilt pan back & forth so runny part of eggs cook.
  • Pan should be nice & slippery for this!
  • When almost done, tear cheese slices & place over eggs.
  • Allow cheese to melt slightly.
  • Fold half egg over the other.
  • Give about 30 seconds to set.
  • Slip egg onto plate.
  • Enjoy!

1 tablespoon butter
3 Buffalo wings, meat removed and cut into small pieces
1 teaspoon Buffalo wing sauce (such as Frank's RedHot®)
¼ cup crumbled blue cheese

Steps:

  • Whisk eggs together in a bowl. Whisk in water, salt, and pepper.
  • Melt butter in a large skillet over medium-high heat. Cook and stir chicken pieces in the hot butter until heated through, 1 to 2 minutes. Mix in Buffalo wing sauce; cook and stir for 30 seconds.
  • Pour eggs into the skillet. Swirl eggs with a fork several times, working clockwise from the outside in, until slightly scrambled. Flatten eggs out into an even circle. Reduce heat and cook until set, 1 to 2 minutes. Sprinkle blue cheese over eggs; cook for 1 minute. Fold omelet in half and cook for 1 minute.
