1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons ranch salad dressing mix
1/4 teaspoon crushed red pepper flakes
8 flour tortillas (8 inches), room temperature
16 cooked bacon strips
2 to 3 cups shredded lettuce
2 cups chopped seeded tomato
Green and sweet red pepper strips, optional

Steps:

  • Mix first 4 ingredients; spread onto tortillas. Top with remaining ingredients and roll up.

I love wraps, but am allergic to mayonnaise, so I designed this wrap to be glued together with melted cheese instead.

1 pound thick sliced bacon, cut into 1 inch pieces
4 (12 inch) flour tortillas
1 cup shredded Cheddar cheese
½ head iceberg lettuce, shredded
1 tomato, diced

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
  • Place 1 tortilla on a microwave-safe plate. Sprinkle tortilla with 1/4 cup cheese. Cook in microwave 1 to 2 minutes, or until cheese is melted. Immediately top with 1/4 of the bacon, lettuce, and tomato. Fold sides of tortilla over, then roll up. Repeat with remaining ingredients. Cut each wrap in half before serving.

Here, hot sauce-spiked mayonnaise adds spice; avocado adds creaminess; and chopping the tomatoes into a salsa with jalapeño, lime juice and cilantro makes everything juicy and bright. You can serve these for brunch, lunch or a light, fast dinner.

1 pound thick-cut bacon
1 pint cherry tomatoes, quartered (mixed colors are pretty here)
1 small jalapeño, seeded or not, finely chopped
2 tablespoons cilantro, chopped
1 1/2 teaspoons fresh lime juice, plus more to taste
Kosher salt, to taste
1/2 cup mayonnaise
1 1/2 teaspoons Cholula or other hot sauce, or to taste, plus more for serving
8 (6-inch) corn or flour tortillas
Romaine lettuce leaves, torn into bite-size pieces
1 avocado, sliced (optional)

Steps:

  • Heat oven to 400 degrees. Lay bacon in an even layer on a rimmed baking sheet, and bake until browned and crisp, 15 to 20 minutes. Transfer to a paper towel-lined plate and let cool.
  • While bacon is cooking, toss together tomatoes, jalapeño, cilantro, lime juice and a large pinch of salt in a medium bowl. Taste and add more lime juice and salt, if needed.
  • In a small bowl, whisk together mayonnaise and hot sauce.
  • Lay a clean kitchen towel in a medium bowl. Using the open flame from a stovetop gas burner (or in a skillet placed on an electric burner), warm and lightly char tortillas, 30 seconds to 1 minute per side. Transfer warmed tortillas to a towel-lined bowl, and cover with towel to keep warm while you finish remaining tortillas.
  • Serve, letting people make their own tacos by layering bacon, salsa, lettuce, spicy mayonnaise and avocado, if using, on tortillas. Top with more hot sauce, if desired.

This is a bit different from the recipe already on Zaar for BLT quesadillas. this one is a bit fancier, came from the Hartford Courant food section 7/19/2007 - haven't tried it yet but plan to soon. I am not a fan of goat cheese so will try some substitute! I highly recommend microwaving the bacon using Recipe #173076. Cooking time for quesadillas does not include cooking time for bacon.

4 large flour tortillas (9 inch)
8 ounces soft fresh goat cheese (or other soft, spreadable cheese)
1 teaspoon cumin
1 lb tomatoes, stemmed & sliced 1/4-inch thick
2 teaspoons balsamic vinegar
8 pieces bacon, cooked until crisp and well drained then cut into 1-inch pieces
2 cups Baby Spinach
olive oil, for grilling

Steps:

  • Place a tortilla on a clean workspace.
  • Mix the cheese & cumin in a mixing bowl until well blended.
  • Using a table knife or small rubber spatula, spread a fourth of the cheese mixture on the tortilla, going almost to the edges.
  • Then arrange a fourth of the tomatoes on one half of the tortilla.
  • Drizzle the tomatoes with 1/2 tsp balsamic vinegar on each tortilla.
  • Lay a fourth of the bacon pieces over the tomatoes, then top with a fourth of the spinach.
  • Fold the tortilla in half and press down gently to secure the filling.
  • Repeat to make three more quesadillas.
  • Heat up your grill (to medium-low), brush the grate with olive oil (while it is still cool or prior to putting on the heat). I would recommend brushing the outside of the tortilla with the olive oil also. (you can also cook them in a skillet at medium heat).
  • When grill is hot, add the quesadillas in a single layer.
  • Using a spatula, press down on the quesadillas, and cook until grill marks appear (or it is lightly browned in a skillet), about two minutes.
  • Carefully turn the quesadillas over and cook until grill marks appear (or lightly browned if using skillet), about 2 minutes more.
  • Remove and cover loosely with foil to keep warm until all quesadillas are cooked.
  • Cut each tortilla into 3 wedges and arrange on a dinner or salad plate.
