Blueberry Cream Cheese Squares image

Blueberry bars with a cream cheese and whipped topping filling, sandwiched between two crunchy graham cracker layers.

1 (14 oz) box graham crackers
3/4 cup butter, melted
3 cups blueberries
2 cups granulated sugar, divided
2/3 cup water
1/2 cup cornstarch
1 tbsp lemon zest
16 oz cream cheese, softened
1 (8 oz) tub Cool Whip, thawed

Steps:

  • Preheat oven to 350 degrees F.
  • In a food processor or zipped top bag (using a rolling pin), crush graham crackers until very fine. You will need to do in batches. In a large bowl, combine graham crackers with melted butter. Spray a 9 x 13 baking dish with cooking spray and press half of the graham cracker into the bottom of the form, forming the crust. Bake for 15 minutes and let cool completely.
  • In a medium sized saucepan, over medium heat, cook together blueberries, 1/2 cup sugar, water, cornstarch and lemon zest, stirring constantly, until thickened. Set aside and let cool completely.
  • In another bowl, beat together cream cheese and the rest of the sugar until fluffy and sugar is completely dissolved. With a rubber spatula, slowly fold in Cool Whip.
  • Assemble dessert by placing half the cream cheese mixture inside the cooled crust. Spread slowly and evenly until crust is completely covered. Continue with cooled blueberry mixture over the cream cheese layer and top with remaining cream cheese mixture and then remaining graham cracker crumb mixture. Press crumbs softly into the cream cheese mixture.
  • Let sit overnight in the refrigerator before slicing into squares. Serve cold.

1/2 cup sugar
1/2 cup water
3 cups blueberries, rinsed and drained
1 (13 1/2 ounce) package graham cracker crumbs
3/4 cup butter, melted
2 (8 ounce) packages cream cheese
1 1/2 cups sugar
2 teaspoons vanilla extract
1 (9 ounce) package frozen whipped topping, thawed

Steps:

  • Combine cornstarch, sugar, water and blueberries in saucepan. Cook over medium heat, stirring until thickened; cool. Combine cracker crumbs into bottom of foil-lined 13 x 9 x 2 inch pan. Mash cream cheese until soft; beat in sugar and vanilla gradually. Fold in whipped topping; drop by spoonfuls over crumb mixture. Spread gently with spatula. Spread blueberry filling evenly over cheese mixture; spread with remaining cheese mixture. Sprinkle with remaining crumb mixture; chill overnight. Use foil to remove dessert from pan. Place dessert on platter; cut into squares. Yield: 15 servings.

2 1/2 cups flour, divided

1 teaspoon salt

1/4 cup water
8 ounces bar cream cheese, softened
2 teaspoons lemon zest, divided
2 cups fresh blueberries
2 tablespoons unsalted butter

Steps:

  • Preheat oven to 375 degrees. Grease and flour a 13x9x2" pan.
  • In a large bowl, cream together 1/2 cup softened butter and 1 1/4 cup sugar.
  • Add eggs one at a time, mixing well after each addition.
  • In a medium bowl, sift together 2 cups flour, baking powder, and salt.
  • In a measuring cup, mix milk and water.
  • Alternately add flour mixture with milk mixture, ending with milk.
  • Beat in softened cream cheese and 1 t. lemon zest.
  • In a small bowl, sprinkle 1/4 cup flour over blueberries and toss gently. Fold into batter and pour into pan.

1 pkg. (6 oz.) JELL-O Lemon Flavor Gelatin
1-1/2 cups cold water
1-1/2 cups graham cracker crumbs
1/2 cup sugar, divided
1/2 cup butter or margarine, melted
2 cups blueberries
1 can (11 oz.) mandarin oranges, drained
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 tub (12 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 1 hour 15 min. or until slightly thickened.
  • Meanwhile, mix crumbs, 1/4 cup sugar and butter in 13x9-inch dish. Press onto bottom of dish. Refrigerate until ready to use.

1 cup granulated sugar
1/4 cup MINUTE Tapioca
1 Tbsp. lemon juice
1/8 tsp. ground cinnamon
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup butter, softened
1-1/2 cups flour
3/4 cup powdered sugar
1 Tbsp. water

Steps:

  • Heat oven to 400ºF.
  • Toss blueberries with granulated sugar, tapioca, lemon juice and cinnamon until evenly coated. Let stand 15 min.
  • Meanwhile, beat cream cheese and butter in large bowl with mixer until blended. Gradually add flour, mixing on low speed after each addition just until blended. Shape into 2 balls. Place 1 ball on large lightly floured sheet of waxed paper; flatten slightly. Cover with second floured sheet of waxed paper. Roll out dough to 9-1/2-inch square. Discard top sheet of waxed paper.
  • Spray 9-inch square pan with cooking spray; invert over rolled-out dough. Flip dough and pan together. (Pan will be on bottom.) Remove second waxed paper sheet; gently press dough onto bottom and 1 inch up side of pan. Spread blueberry mixture onto bottom of crust.
  • Repeat rolling out of remaining dough ball to make second square. Remove top sheet of waxed paper; carefully flip dough over blueberries. Discard waxed paper. Tuck edges of dough down sides of pan to enclose blueberry filling. Cut several slits in top crust to vent steam.
  • Bake 30 to 35 min. or until golden brown. Cool 15 min.
  • Mix powdered sugar and water until blended; drizzle over dessert. Cool 30 min. before cutting into squares.
