This recipe for a Pail Full of Bran Muffins is made with bran flakes cereal. Keep the batter in the fridge for up to 2 weeks, and bake muffins as you want them.

5 1/2 cups bran cereal flakes
3 cups buttermilk
1 cup oil
3 eggs
1 cup white sugar
1 cup brown sugar
1 tsp vanilla
1 cup raisins
3 cups all purpose flour
3 tsp baking soda
3 tsp baking powder
1 1/2 tsp salt

Steps:

  • Preheat your oven to 350 degrees.
  • Line a muffin tin with paper liners. Set aside.
  • In a large mixing bowl combine the buttermilk and bran flakes. Let sit for at least 15 minutes, stirring a few times.
  • In a separate bowl whisk together the oil and eggs.
  • Stir in both sugars and vanilla.
  • Then stir in the bran mixture and raisins. Mix well.
  • In a separate bowl, whisk together the flour, baking soda, baking powder and salt.
  • Combine the bran mix with the flour mix.
  • Fill muffin cups about 2/3 full.
  • Bake for 25 minutes.
  • Let the muffins cool in the pan for 5 minutes, then remove them and place on a cooling rack.

½ cup (56 g) soy flour
1 cup (40 g) bran flake cereal
1 teaspoon baking powder
1 teaspoon baking soda
¾ teaspoon ground cinnamon
1/8 teaspoon ground cloves
½ cup raisins
2/3 cup (160 ml) soy milk
½ cup (120 ml) egg substitute or 2 large eggs, slightly beaten
¼ cup (60 ml) soy oil
½ cup (110 g) brown sugar

Steps:

  • 1. Preheat oven to 400°F (200°C ). Lightly coat muffin pans with non-stick spray or line with paper baking cups.
  • 2. Combine whole wheat flour, soy flour, flake cereal, baking powder, baking soda, cinnamon, cloves, and raisins in a mixing bowl. Set aside.
  • 3. Place milk, eggs, oil, and sugar into the Vitamix container and secure lid.
  • 4. Select Variable 1.
  • 5. Turn machine on and slowly increase speed to Variable 4 or 5.
  • 6. Blend for 10 seconds.
  • 7. Pour wet mixture into the dry ingredients and mix gently by hand to combine.
  • 8. Fill muffin pan 2/3 full. Bake for 15-20 minutes or until golden brown.

Steps:

  • Preheat oven to 425 F and prepare muffin pans.
  • Measure the wheat bran into a large bowl and cover with boiling water. Stir and let sit.
  • In another bowl, whisk together flour, baking soda, baking powder and salt. Set aside.
  • In a large bowl, cream butter and sugar. Add eggs, one at a time, mixing well after each addition. Whisk in the molasses and buttermilk.
  • Add flour mixture and stir gently until almost combined. Stir in wheat bran mixture and mix gently just until incorporated.
  • Scoop into prepared muffin cups and bake at 425 F for 5 minutes. Reduce oven temperature to 375 F and bake for another 18-20 minutes, until muffin tops spring back lightly when touched.

12 paper baking cups or cooking spray to grease pan
1 1/4 cups Fiber One™ cereal or 2 cups bran cereal flakes
1 1/3 cups milk
1/2 cup raisins, if desired
1/2 teaspoon vanilla
1/4 cup vegetable oil
1 large egg
1 1/4 cups all-purpose flour
1/2 cup packed brown sugar
3 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon, if desired

Steps:

  • Heat the oven to 400°F. Place a paper baking cup in each of 12 regular-size muffin cups, or spray just the bottoms of the cups with cooking spray.
  • Place cereal in a resealable food-storage plastic bag; seal the bag. Roll over cereal with a rolling pin or bottle, or press with bottom of small saucepan, to crush cereal into fine crumbs.
  • In a medium bowl, stir the crushed cereal, milk, raisins and vanilla until well mixed. Let stand about 5 minutes or until cereal has softened. Beat in the oil and egg with a fork.
  • In another medium bowl, stir the flour, brown sugar, baking powder, salt and cinnamon until well mixed. Stir flour mixture into cereal mixture just until flour is moistened (batter will be lumpy). Spoon the batter into the cups, dividing batter evenly.
  • Bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean. If muffins were baked in paper baking cups, immediately remove from pan to a cooling rack. If muffins were baked in a sprayed pan, leave in pan about 5 minutes, then remove from pan to a cooling rack. Serve warm if desired.

2 cups flour
1 cup natural bran (not cereal)
2 teaspoons natural bran (not cereal)

1 cup raisins

Steps:

  • Preheat over to 400.
  • Spray muffin tins with cooking spray.
  • Beat eggs, add oil and milk.
  • Mix together.
  • Mix dry ingredients together separately and mix well.
  • Add to wet ingredients and mix again.
  • Mix in raisins.
  • Pour enough mix into muffin tins to fill about 2/3 of the way full.
  • Bake at 400 for 15 minutes or until tops of muffins are nice and brown and starting to crack a bit.
  • Keep mix in fridge for up to 6 weeks in an ice cream pail with lid.
  • Recipes doubles easily and will fill and ice cream pail nicely.
  • The longer the mix is in the fridge the darker the batter and more powerful the bran will be.
  • Great warm with butter and honey.

  • Bake until a cake tester inserted in centres comes out clean, about 15 minutes. Cool muffins in pan for 5 minutes. Remove from pan and cool on a rack. May be frozen for up to 1 month.

2 cups brown sugar
1 cup white sugar
1 cup oil
1/2 cup molasses
4 eggs
1 quart buttermilk

4 cups all-bran cereal
1/2 cup wheat germ

Steps:

  • Mix boiling water and bram and let stand.
  • Cream oil, sugars and eggs.
  • Add buttermilk, bran and molasses.
  • Mix dry ingredients together.
  • Fold dry ingredients into wet ingredients.
  • Pour into ice cream pail and store in fridge for at least 24 hours prior to using.
  • Bake at 400 for 20-25 minutes.
  • Do not stir mix each time you use it. It will darken slightly on the surface.

Steps:

  • 1. Sift together the bread flour, baking soda, baking powder and milk powder.
  • 2. Add the rest of the dry ingredients to the above and blend well by hand.
  • 3. In a separate bowl; whisk together the eggs and oil until blended.
  • 4. Add the water to the egg mixture and whisk together.
  • 5. Make a well in the centre of the dry ingredients and add the wet ingredients. Fold together just until blended. DO NOT OVERMIX!!!!!
  • 6. Let the mix rest for approx. 10 to 20 min. so the bran has time to soak up the liquid.
  • 7. Grease top of 3 muffin pans. Paper line the muffin cups.
  • 8. Once mix has rested, deposit batter with piping bag evenly over 3 doz. Muffins.
  • 9. Bake muffins at 400F for approx. 20 min.; until the muffin springs back when touched.
  • 10. Remove muffins from tins directly after baking to prevent “sweating”.

2 cups boiling water

1 quart Buttermilk
3 tbsps baking soda

  • Soak 2 cups Kellogs All Bran in 2 cups boiling water and set aside. Cream well sugar and crisco oil, then add eggs, Natural Bran and buttermilk. Add flour, baking soda and salt.   • In a separate bowl whisk together the buttermilk, oil, egg, and vanilla. Pour the wet ingredients into the dry and stir to blend well. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours or up to 12 hours. The batter will become very thick.
