"Our town is dubbed the bratwurst capital of America," writes Jodi Gobrecht of Bucyrus, Ohio. "As a volunteer at our annual Bratwurst Festival, I could not have someone in my family who disliked bratwurst, so I developed this cheesy casserole for our son. It's the only way he will eat them."

1 pound uncooked bratwurst links, casings removed
1 medium onion, chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 package (32 ounces) frozen Tater Tots
2 cups sour cream
2 cups shredded cheddar cheese

Steps:

  • Crumble bratwurst into a large skillet; add onion. Cook over medium heat until meat is no longer pink; drain. Stir in the soup. , Transfer to a greased 13x9-in. baking dish. Top with Tater Tots and sour cream. Sprinkle with cheese. Bake, uncovered, at 350° for 35-40 minutes or until heated through and cheese is melted. Let stand for 5 minutes before serving.

1 package (1 1/4 lbs. uncooked bratwursts)
3 cups chicken broth
2 tbsp butter
1 16oz can sauerkraut, rinsed and drained
1 10oz can condensed cheddar cheese soup, undiluted
1/2 cup milk
1 package (32oz frozen Tater Tots)
2 cups shredded cheddar cheese
1/4 cup chopped green onions

Steps:

  • In a large saucepan combine the chicken broth and bratwursts, bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes, or until the bratwursts are cooked through. Drain and discard chicken broth. Place brats on a cutting board and cut into 1/4 inch pieces.
  • Pre-heat oven to 450 degrees F.
  • Place the saucepan back on the stove and brown the bratwursts in the butter over medium-high heat. Drain on paper towels.
  • Spoon the drained sauerkraut into a greased 9x13" casserole dish. Top with the bratwursts.
  • In a bowl, whisk together the cheddar cheese soup and milk until smooth. Pour over the brats.
  • Top with the tater tots. Bake for 20-25 minutes or until the potatoes are lightly browned and crisp.
  • Sprinkle with the cheese and onions, bake for an additional 5 minutes or until the cheese is melted. Enjoy!

2 -4 cups shredded cheddar cheese
2 cups milk
4 eggs
2 lbs frozen tater tots

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.
  • In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).
  • Top with frozen tater tots.
  • Bake in preheated oven for 45 minutes. Some ovens may take more or less time. Cool for 5 to 10 minutes before serving.

Butter, for the baking dish
1 tablespoon olive oil
1 pound spicy bulk breakfast sausage
1 medium onion, very finely diced
1 cup milk
1/2 cup half-and-half
1/4 teaspoon seasoned salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper, very finely diced
1 green bell pepper, very finely diced
2 cups grated Cheddar cheese
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • Line up the tater tots in a buttered 9-by-13-inch baking dish.
  • Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
  • In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

Steps:

  • Preheat oven to 350F. In a skillet heat and crumble sausage until browned and cooked through. Drain grease and sit sausage aside. In a 8x8 baking dish, whisk together the eggs, onion powder, and garlic powder. Stir in whole milk or cream. Whisk well so that there are no lumps of seasoning. Whisk in 3/4 of crumbled sausage and half of cheese into the baking dish. Pour in tater tots. Arrange tater tots in a semi single layer. Bake for 45 minutes. 1 pound pork sausage (jimmy dean)
1 1/2 cups whole milk or heavy cream
1 package frozen tater tots (approximately 24 oz)
2 cups cheddar cheese
1 1/2 tsp salt
1 tsp black pepper
1/4 tsp garlic powder

Steps:

  • Preheat oven to 375 and spray 9 x 13 pan with non stick cooking spray.
  • Brown the meat - Medium heat in a skillet, breaking sausage into small pieces. Drain any excess grease and set cooked meat aside.
  • Whisk together 8 eggs, a cup and a half of heavy cream (whole milk if you have to, but heavy cream is better) and all spices together.
  • Add frozen tater tots in the bottom of the dish until a full layer is formed.
  • On top of tater tots, add the precooked sausage, two cups of cheddar cheese, and finally pour on whisked egg mixture.
  • Cover casserole dish with foil. (This helps the edges not cook too quickly and burn.)
  • Bake tater tot casserole for 40 minutes to start, remove foil from dish, and then bake for another 15-20 until center egg is fully cooked if necessary. Note that some ovens cook faster and check at the 40-45 minute mark for cooked egg.
  • Serve hot with sour cream, tomatoes, salsa or crunchy bacon.

1 lb light pork sausage (Jimmy Dean is what we use)
2 (10 1/2 ounce) cans cream of mushroom soup (We also sometimes substitute cream of chicken, too)
1 -2 cup cheddar cheese (however much you desire, we love cheese!)
frozen tater tots (we like to cover the top by lining them up)

Steps:

  • Cook sausage and drain.
  • Add soup and stir.
  • Put soup mixture on bottom of 9x9 pan.
  • Place tater tots on top. I like to cover it fairly well.
  • Sprinkle cheese over top.
  • Bake at 350 for 30 minutes. You can optionally broil the top for a couple of minutes for a little extra crisp.

  • Preheat the oven to 425°. In a large cast-iron skillet, heat 2 tablespoons of the olive oil. Add the onion and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the spinach and garlic and cook, stirring, until fragrant, about 2 minutes. Stir in the milk, cream and nutmeg and cook until thickened and almost all of the liquid has evaporated, 8 to 10 minutes. Add both cheeses and season with salt and pepper; stir until well blended and the cheese is melted. Scrape into a large bowl and let cool slightly. Add the eggs and mix well. Wipe out the skillet.
  • In the skillet, heat the remaining 1 tablespoon of olive oil. Add the sausage and cook over moderate heat, stirring occasionally and breaking up the meat, until browned, about 5 minutes. Remove the skillet from the heat. Spread the spinach mixture over the sausage. Arrange the Tater Tots in concentric circles on top and spray with canola oil cooking spray. Bake for about 40 minutes, until the tots are golden, cooked through and crispy. Serve immediately.
