BEST BREAKFAST CASSEROLE
This is my family's favorite breakfast recipe, always served on holiday mornings. It's great when complemented with fruit and resurrection cinnamon rolls. You can assemble this casserole, cover it with plastic wrap, and refrigerate it overnight before baking, if desired.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir sausage and water in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray. Spread crescent roll dough out into prepared baking dish to cover the inside of the dish completely. Prick dough all over with a fork.
- Bake in the preheated oven until slightly set, about 5 minutes.
- Beat eggs, milk, salt, and black pepper together in a bowl.
- Spray a large skillet with cooking spray and place skillet over medium heat. Cook and stir egg mixture in hot skillet until eggs are set, 3 to 5 minutes. Break up eggs into small pieces using a wooden spoon. Spread eggs evenly over crescent roll dough, spread sausage over eggs, and top with Cheddar cheese.
- Bake in the preheated oven until crust is browned and casserole is hot, about 25 minutes.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease an 11x8 inch baking dish.
- Brown sausage in a large skillet; drain fat.
- Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
- Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.

BREAKFAST CASSEROLE
Steps:
- Cube the bread and place it in a lightly greased 8-by-11-by-2 inch casserole.
- Fry the sausage until it is almost browned completely and drain on some paper towels. Mix the half-and-half, dry mustard, salt, pepper, hot sauce and eggs together. Layer the sausage over the bread and top with a generous layer of potatoes. If you are using mushrooms, layer them in before the potatoes. Sprinkle the cheeses on the top. Pour the beaten egg mixture over the casserole. Cover and refrigerate 1 hour to overnight.
- Preheat the oven to 350 degrees F.
- Bake the casserole until it is set and does not jiggle in the middle, 30 minutes.

BEST BREAKFAST CASSEROLE EVER!
So quick and easy to make. A hit with everyone and makes great leftovers. I found this online somewhere years ago. I wanted something that didn't have to sit over night and I don't like the soggy bread in most casseroles. Once I found this, I never looked back. You can spice it up with veggies or whatever you want but below is the basic recipe I found.

Steps:
- spray 9x13 baking dish with pam.
- preheat oven to 350 degrees F.
- roll out 1 can of crescent rolls on bottom of pan.
- cook sausage in skillet, drain and spread over crescent rolls in pan.
- beat all eggs with a touch of milk.
- add 4 cups of cheese to egg mixture - this gets hard to stir, I find a wooden spoon works best.
- pour egg/cheese mixture over sausage.
- bake in oven uncovered for 30-45 minutes depending on your oven, it can look done and the middle might be runny so check with a toothpick.

I liked the idea of American Breakfast Casseroles, I just wanted to add everything that is typically in a "Full English Breakfast"! This is always a hit with friends on Christmas morning. Overnight time not included in preparation time.

This dish makes a very hearty breakfast, and easily feeds a large family or group. Fortunately, it is also easy to halve this recipe. I usually serve this with a fruit salad or compote.

- Line a prepared 9 x 13 baking dish with frozen hash browns. Top evenly with cooked sausage (or bacon), onion, and green bell pepper.
- In a separate dish, mix together eggs, milk, salt, pepper, and dry mustard. Pour this over meat and hash browns.
- Top everything evenly with the grated cheddar cheese.
- Refrigerate overnight.

This recipe is from Southern Living Magazine but tweaked a bit by me. It's great for an early-morning breakfast or brunch for a crowd, because you can do most of the work ahead of time and just throw it in the oven the morning you want to serve it.

- Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
- Place bread cubes in a lightly greased 9" X 13" baking pan.
- Sprinkle bread evenly with cheese, and top with sausage (or ham).
- Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
- Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
- Let stand at room temperature 30 minutes.
- Bake at 350 degrees for 45-50 minutes, or until set.
- Let stand 5 minutes before serving.

- Place sausage and bacon in two large, deep skillets. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- Butter one side of six slices of the bread. Placed slices butter side up in the bottom of a 9x13 inch baking pan.
- In a large bowl, stir together cooked sausage and bacon with onion and cheese. Place half of his mixture on top of buttered bread. Then add another six slices of bread (no butter). Add remaining meat/cheese mixture. Beat together milk and eggs; pour over top of casserole. Cover with foil and refrigerate overnight.
- The next morning: preheat oven to 425 degrees F (220 degrees C).
- Bake, covered, in preheated oven for 45 to 60 minutes.

- Melt butter.
- Blend in flour and pepper.
- Gradually add milk and stir until thickened.
- Add cheese; mix and set aside.
- Fry bacon and onions until browned.
- Add eggs and scramble just until set.

- Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
- Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
