1 lemon, juiced
1 ½ cups cherry tomatoes, halved
1 ½ cups broccoli florets, cut into small pieces
½ cup sharp Cheddar cheese, shredded
1 cup cooked ham, julienned
2 hard-boiled eggs, chopped

Steps:

  • Tear corner of Ready Pasta pouch to vent. Heat in the microwave for one minute; place on a plate and let cool down.
  • Mix olive oil with salt, pepper, and lemon juice and divide into plastic to-go containers.
  • Add equal amounts of remaining ingredients to each container, including tomatoes, broccoli, cheddar cheese, ham, eggs, and pasta. Mix together with olive oil-lemon juice mixture and enjoy!

This easy ham and cheese frittata, spiked with some healthy broccoli, works as a centerpiece of a brunch, easy leftovers for a quick lunch or dinner paired with a green salad.

12 large eggs
1/3 cups heavy cream
Kosher salt and freshly ground black pepper
1 1/2 cups frozen broccoli florets, thawed
1/2 cup chopped deli ham (about 2 1/2 ounces)
1/2 cup shredded mild Cheddar
1/2 cup shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 300 degrees F. Whisk the eggs, cream, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until smooth. Fold in the broccoli, ham, Cheddar and Monterey Jack until well combined.
  • Pour the mixture into an oven-safe, 10-inch nonstick skillet. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes. Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.

1 red onion
½ pound bacon
¾ cup raisins
¾ cup sliced almonds
1 cup mayonnaise

  • Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  • Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.

  • In a Dutch oven, cook pasta according to package directions, adding broccoli during the last 5 minutes of cooking; drain and set aside. , In same pan, combine remaining ingredients; cook and stir over medium heat until heated through and cream cheese is melted. 1 cup cheddar cheese, grated
1 onion, chopped
1/2 cup Miracle Whip
1 tablespoon fresh lemon juice
1/4 teaspoon ground black pepper

Steps:

  • Clean broccoli and cut into bite-size pieces.
  • Place broccoli in large bowl along with chopped ham, cheese and onion.
  • In small bowl, mix together Miracle Whip, lemon juice and pepper.
  • Add to broccoli mixture and stir to coat.
  • Refrigerate until ready to use.
  • Stir again before serving.

This is adapted from Kentaro Kobayashi's book Bento Love, which I find to be a great resource for lunchbox ideas. I especially turn to it when I need help with vegetable ideas, and this is one of my favorites from the book. The cheese is my own addition, cheddar just goes so well with broccoli and ham! Note- This is meant to be a side dish, if you want it to be your main (or only) lunch item, increase the quantities to match your appetite.

1 cup broccoli floret, cut into bite sized pieces
1 slice deli ham
1 teaspoon mayonnaise
1/2 teaspoon coarse grain mustard
1 tablespoon shredded cheddar cheese
pepper, to taste

Steps:

  • Bring a saucepan of salted water to a boil. Add the broccoli, and cook until not quite done. (I just barely blanch it, as the remaining heat will continue the cooking while it cools) Drain, and set aside to cool.
  • Cut the ham into 1/2 inch squares.
  • Mix the cooled broccoli, ham, mayo, mustard, cheese, and pepper to taste.
  • ** As this has mayo in it, be sure to pack your lunch with an ice pack to keep cool and safe until lunchtime!
