BROILED GARLIC-HERB SALMON
Ok, I hate to give up this recipe because everyone loves it so much, and I do own and use it for my business and my clients love it. It is a broiled salmon, easy enough for a beginner and delicious if done right. This salmon goes great with red potatoes and some steamed veggies.

- Brush olive oil over the top of each portion. Then salt and pepper generously.

Steps:
- In a mini food processor, combine garlic, rosemary, thyme, wine, oil, Dijon mustard, and 1 tablespoon of whole-grain mustard. Grind the mustard sauce until combined, about 30 seconds. Transfer to a small bowl. Add remaining 1 tablespoon of whole-grain mustard to the sauce and stir to combine. Set aside mustard sauce.
- Preheat the broiler. Line a heavy rimmed baking sheet with foil. Spray the foil with nonstick spray. Arrange the salmon fillets on the baking sheet and sprinkle them with salt and pepper. Broil for 2 minutes. Spoon the mustard sauce over the fillets. Continue broiling until the fillets are just cooked through and golden brown, about 5 minutes longer.
- Transfer the fillets to plates and serve with lemon wedges.
CHEF JOHN'S SALMON
I love the combination of tarragon and Italian parsley, but I've used herbs like basil and thyme, which worked wonderfully as well. As far as the fish goes, a center-cut salmon filet is a perfect thickness for this, but other similarly shaped seafood will work.

Steps:
- Ensure the grates on the outdoor grill are very clean and preheat to medium.
- Season each of the salmon filets with salt then allow them to come to room temperature while the grill is preheating.
- Meanwhile, melt the butter in a small saucepan and add garlic. Allow the garlic to cook in the butter for approximately 1 minute until the garlic softens just a bit. Remove the pan from the heat, stir in your choice of herb then allow the garlic herb butter to cool until you are finished grilling the salmon.
- Once the grill has preheated, blot any moisture from the surface of the salmon with paper towels. Brush the grates with oil, place the salmon flesh side down on the grill and close the lid of the grill. Allow the salmon to sear on the first side for approximately 2-3 minutes. Usually, the salmon will release itself from sticking to the grill when it is ready to be turned.
- Flip the salmon and cook on the remaining side until it is cooked to desired doneness-this will vary depending on the thickness of your salmon filets. Once the salmon flakes when pressed gently, it's done.
- Remove salmon from the grill and brush each filet generously with garlic herb butter. Season with a little coarse salt and fresh cracked pepper then serve with a few lemon wedges for squeezing.

Steps:
- Mix all the Marinade ingredients in a bowl, stir to mix well.
- Marinate the salmon with the Marinade for 20 minutes.
- Heat up a gas grill to medium heat, at 350°F (176°C). Remove the marinated salmon from the Marinade and place it on top of the gas grill. Place the salmon, skin side down at a 45 degree angle to form beautiful char marks. Grill the salmon for 4 minutes, uninterrupted. Turn the salmon over and grill for another 4 minutes, uninterrupted. Baste with the remaining Marinade mixture while grilling.
- Depending on the type of salmon cuts you use, you might need to grill it for longer (or shorter) time. The salmon is cooked when white stuff starts to seep out from the inside. If the salmon is not cooked yet but already charred, move the salmon to the indirect heat side of the gas grill. Cover the lid and cook for 1-2 minutes or until the inside is completely cooked through. Remove from the grill and serve immediately with lemon wedges, dill sauce, or sweet chili sauce.

- Presoak the cedar planks for at least 30 minutes, but preferably for at least 4 hours or overnight. Preheat your grill when ready to prepare the dish. If you're using a Traeger grill, set it first to 'smoke' and preheat for 10 minutes. If using a conventional grill, preheat the grill to 450F.
- Prepare the butter topping: melt the butter in a large bowl. Finely mince the garlic and capers, then add to the melted butter along with the fresh dill, lemon zest, salt and a bit of ground black pepper. Stir all the ingredients together, then place the bowl into the refrigerator to chill for at least 10 to 15 minutes. The butter needs to thicken into a spread.
- Prepare the salmon: the fish can be grilled with the skin on or off. Use a very sharp knife to remove the skin; watch my video recipe to see how it's done. The salmon can be prepared as a whole piece or cut into serving size pieces. Season the salmon all over lightly with salt before arranging on the pre-soaked cedar planks.
- Wash the asparagus and cut off the hard ends. Place the asparagus on a flat sheet pan or tray and drizzle with olive oil. Season with salt and lemon zest.
