BROCCOLI CHEESE BITES
These cheesy, deep fried broccoli snacks are so tasty, and great for parties. Everyone loves them.

Steps:
- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- Place broccoli in a medium saucepan with 1 cup boiling water. Return to a boil. Cook covered until firm but tender, about 5 minutes.
- In a medium saucepan over low heat, melt the Cheddar cheese. Mix in the broccoli. Allow the mixture to cool and thicken approximately 15 minutes.
- In a medium bowl, mix the bread crumbs, salt and pepper. Spread the mixture onto a large piece of wax paper.
- Form the broccoli cheese mixture into balls and roll in the bread crumb mixture until thoroughly coated.
- Deep fry the balls until golden brown, about 5 minutes. Drain on paper towels.

BROILED CHEESE TOAST
Growing up, it seemed my parents would be quite creative when preparing weekend breakfast. We always had plenty on the table, even when we had to scrimp to make ends meet. When we did not have a loaf of bread, my mom would use leftover hamburger or hot dog rolls, or whatever she was able to find which would toast under the broiler. Along with our favorite weekend broiled cinnamon toast, we often would have this along with our bacon, eggs and grits. Broiled Cheese toast is a favorite childhood memory for me. - Place bread on cookie sheet.
- Spread with your desired amount of butter.
- Place cheese on top of butter.
- Sprinkle with sugar.
- Place under broiler; be sure to watch closely so sugar does not burn).
- Broil until tops are bubbly and just beginning to toast.

CHEESE BUNS
If you have trouble shaping buns you may wish to do it this way- to add the cheese roll dough out as you do for cinnamon rolls, sprinkle with cheese. Roll up, slice into 1 inch pieces, place on grease cookie sheet. Let rise for 1 hour.

Steps:
- Mix first amount of water and sugar together, sprinkle on yeast. Let stand 10 minutes, stir.
- In the bowl of your standing mixer, place water,sugar,lard, salt and vinegar. Mix until lard has melted. Add proofed yeast and continue mixing.
- Add the flour 1 cup at a time, to form a soft, smooth dough.Add the grated cheese, just to blend. The dough should stick just slightly to your fingers when touched, but not overly sticky. Knead for 5-7 minutes, roll in a ball, place in slightly oiled bowl turning dough to coat. Cover with a clean T- towel and let rise in a warm place for 2 hours. Knead down, let rise 1 hour. Shape into buns, dough will be sticky so grease your hands first.
- Places on greased cookie sheet.Let rise for 1 hour. Bake at 350 for 15 to 20 minutes, until golden brown.

CHEESE BUNS
This is from my husband's "Grannie" passed on to my mother-in-law, now to me. Use day or two old French bread or any other crunchy crusted bread. My husband LOVES them on English Muffins. I also tried this on Frito's "scoops"...oooooh, yummy!!

- Finely chop green pepper (in food processor is GREAT).
- Drain green pepper VERY well.
- Drain black olives VERY well.
- Mix all together.
- Let stand, covered, in refridgerator for 3 or more hours.
- Pre-heat oven 400 degrees.
- Spread cheese mixture on bread or muffins within 1/4" from edges or scoop with Frito's scoops.
- Place on cookie sheet.
- Bake 10-15 minutes, till bubbly.
- Remove, cool slightly-- cheese IS HOT!
- ENJOY!

BACON CHEESE & TOMATO - BROILED OPEN FACE SANDWICH
One of my favorites. I have two rules for this sandwich. Always use Pepperidge Farm Original White Bread and make two per person as one is never enough.

- Pre-heat broiler.
- Place bread on a broiler safe pan. Top each slice of bread with a slice of cheese then a slice of tomato. Depending on how big your tomato slice is you may want to put on two but keep it a single layer of tomato. Cut each slice of bacon into 2 pieces. Then lay 3 of the pieces on each sandwich. Broil until bacon is crisp and cheese melted. Bread and cheese may get a little burnt. That makes it better!
- Note: Originally I put raw bacon on the sandwich and cooked it all the way under the broiler. Now I cut the strips in half and partiality cook in micro-wave and then put on sandwich and broil to finish cooking.

BROCCOLI CHEESE BAKE
This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
- Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
- Bake in preheated oven for 30 minutes.
