THREE CAN CASSEROLE
It does not get much simpler than this. By using canned ingredients, the Green Bean Casserole can also be made in an RV Kitchen, or even in a camp site Dutch Oven.

Steps:
- Drain the green beans, put everything into a casserole dish and bake covered in a 350°F oven for 35 minutes.
- Add salt and or pepper to taste (optional).

So easy and good. Nice comfort food for weekdays. I must admit though, I did not use canned chicken the first time I made this. I used fresh, skinless, boneless chicken breasts that I sauteed in olive oil -- thus ruining the whole "can" thang. I'm sure canned chicken would be just fine, but I had fresh chicken on hand rather than canned. A bit of soy sauce or maybe a can of peas or mixed "Chinese" veggies could liven it up a bit. Experiment!

- Mix together chicken, soups, mushrooms, chow mein noodles and milk.
- Spoon into baking dish (9 x 13-- pretty sure).
- Bake for 20 minutes at 350 degrees.
- Sprinkle with onion rings and bake 10-15 more minutes longer until brown and bubbly.

CAN OPENER ENCHILADAS
This is a recipe I adapted from a Better Homes and Garden cookbook. You can have this from thought to mouth in 30 minutes.

Steps:
- In a microwave-safe bowl combine soup, corn, green onion and chili powder.
- Microwave on high, uncovered, for 4 minutes, stirring half way through.
- Stir in chicken, sour cream, and milk.
- Spread about 1 1/4 cups of chicken mixture in the bottom of a.
- 12x7-1/2x2-inch microwave-safe baking dish. Set aside.
- MIcrowave tortillas on high for 1 minute or till softened.
- Spread about 1/4 cup chicken mixture on each tortilla.
- Top each with 1 tablespoon cheese.
- Roll tortillas up. Place, seam side down, in baking dish.
- Cook, uncovered, on high for 6-8 minutes or till heated through.
- Top with remaining cheese. Cook on high 1 minute more or until cheese melts.
- Garnish with green pepper rings and ripe olives, if desired.

5 CAN CASSEROLE
I adopted this recipe from the Recipezaar account in February 2005. The next time I try it, I am going to try a smaller can of milk and try adding a 10 ounce package of frozen mixed vegetable. If I like it that way, they will become an optional ingredient. I have added can sizes, since the original recipe did not specify sizes. The casserole was soupy, which was not bad, but I want to see how it is with the smaller amount of milk.
