1 lb. fusilli, cooked
8 oz. ciligini, halved
2 pt. grape tomatoes, halved
1/4 c. thinly sliced basil, plus more for garnish
Balsamic glaze, for drizzling
For the Dressing
1/2 c. extra-virgin olive oil
3 tbsp. red wine vinegar
1 tsp. Italian seasoning
1 clove garlic, minced
kosher salt
Freshly ground black pepper

Steps:

  • In a large bowl, combine fusilli, ciligini, tomatoes and basil.
  • In a medium bowl, combine oil, vinegar, Italian seasoning and garlic. Season with salt and pepper and whisk until combined.
  • Pour dressing over pasta salad and toss to combine. Garnish with sliced basil, drizzle with balsamic glaze and serve.

1 (16 ounce) package fusilli pasta
1 cup fresh basil leaves
¼ cup grated Parmesan or Romano cheese
¼ cup pine nuts, toasted
2 cloves garlic
¼ cup olive oil
1 pint cherry tomatoes, halved
3 tablespoons grated Parmesan cheese
4 ounces fresh mozzarella cheese, cut into strips
salt and pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the fusilli, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain.
  • Place basil, 1/4 cup Parmesan cheese, pine nuts, and garlic into a blender or food processor; cover and chop to a coarse paste. Add the olive oil in a slow, steady stream. Continue processing until a soft paste has formed. Set pesto aside.
  • Combine the cooked pasta, tomatoes, 3 tablespoons Parmesan, mozzarella, and pesto in a large bowl. Season with salt and pepper. Cover bowl, refrigerate to chill for 45 minutes, and serve.

This is a great little side dish for a BBQ and much healthier than the typical mayo-based macaroni salad. Olive Oil is packed with mono-unsaturated (good fats) and can help to achieve balanced cholesterol levels. I usually serve this at room temperature, but I've also served it hot and topped it with grilled chicken for a quick weeknight dinner.

1 1/2 cups bite-size fresh mozzarella cheese balls, cut into quarters
1 cup cherry tomatoes, cut into quarters
1/3 cup Italian salad dressing (I like using the Good Seasons packet dressing)
1/4 cup olive oil
4 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1 lb whole wheat bow tie pasta (I use barilla plus)
3 tablespoons fresh basil, chopped
salt and pepper

Steps:

  • Toss the mozzarella and cherry tomatoes with the Italian dressing. Cover and refrigerate. If I'm making this for dinner, I usually get the cheese and tomatoes in the fridge to marinate a few hours before I plan to assemble the salad.
  • In a skillet on low heat, heat the olive oil, garlic and crushed red pepper. Cook on low for 5-10 minutes allowing the garlic to soften (but not brown) and infuse the oil.
  • Meanwhile, boil the pasta. Add the drained pasta to the skillet and toss to coat. Set the pasta mixture aside to cool.
  • Once the pasta is cooled, add the cheese and tomatoes along with the dressing marinade. Season the salad with salt and pepper and top with 3 tablespoons fresh basil.

9 oz rigatoni or penne pasta
2 c tomato sauce (i use prego - fresh mushroom)
1/2 c heavy cream
1/3 c finely grated romano cheese
1 clove garlic, finely minced
red pepper flakes (optional, to taste)
salt and freshly ground pepper, to taste
1 pt grape tomatoes, halved
12 oz fresh mozzarella, grated
fresh basil

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Cook pasta to al dente according to directions listed on package.
  • 3. While pasta is boiling, in a separate medium saucepan over medium low heat, heat tomato pasta sauce, heavy cream, Romano cheese, garlic, optional red pepper flakes and season with salt and pepper to taste. Cook, stirring frequently, until cheese melts.
  • 4. Drain cooked pasta well, return pasta to pot. Add in grilled diced chicken, grape tomatoes, half of the mozzarella and half of the basil ribbons, then pour warm sauce over mixture. Toss to evenly coat.
  • 5. Serve warm sprinkled with remaining fresh basil.

1 lb. rigatoni
1/4 c. olive oil
1/3 c. panko breadcrumbs
2/3 c. grated parmesan cheese
1 lb. skinless, boneless chicken breasts, cut into 1-inch chunks
Black pepper, to taste
2 pt. grape or cherry tomatoes
3 garlic cloves, thinly sliced
Pinch of red pepper flakes
8 oz. bocconcini (mini mozzarella balls), halved
1/2 c. fresh basil, torn

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente. Reserve 2 cups of the cooking water, then drain the pasta.
  • Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-low heat. Stir in the panko and cook, stirring, until golden, 1 to 2 minutes. Scrape into a bowl to cool, then stir in 1/3 cup parmesan and set aside.
  • Wipe out the skillet. Add 2 tablespoons olive oil and heat over medium-high heat. Add the chicken and season with salt and pepper. Cook, turning, until browned on all sides, about 3 minutes; remove to a plate.
  • Add the remaining 1 tablespoon olive oil to the skillet over medium-high heat. Add the tomatoes and cook until blistered, about 1 minute. Reduce the heat to medium, add the garlic and red pepper flakes and cook until the garlic just begins to turn golden, about 30 seconds. Add 1½ cups of the reserved cooking water and bring to a boil. Lower the heat and simmer until the liquid is reduced by half and the tomatoes begin to burst, about 3 minutes.
  • Return the chicken to the skillet and cook through, about 2 more minutes.
  • Add the pasta to the skillet and toss to coat, adding some of the remaining pasta water if needed. Remove from the heat; sprinkle with the remaining 1/3 cup parmesan. Add the mozzarella and basil, season with salt and pepper and toss well. Sprinkle with the panko mixture just before serving.

3 tablespoons olive oil
1 tablespoon minced onion
1 clove garlic minced

hot pepper flakes to taste

Steps:

  • In a large pot of boiling salted water cook pasta (short or long) until al dente.
  • In a large frying pan on medium heat, add oil, onion, garlic, spices and tomatoes, fry until soft and lightly browned.
  • Add cooked pasta, 1/2 ladle of pasta water and mozzarella, toss gently until completely combined on medium heat for 1-2 minutes until mozzarella starts to melt. Sprinkle with freshly grated Parmesan Cheese if desired. Serve immediately. Enjoy!

1 ½ cups cherry tomatoes (halved (heirloom tomatoes or Roma tomatoes would also work))
1 tablespoon olive oil
½ teaspoon kosher salt

¾ cup fresh basil leaves (loosely packed - more to use as a garnish at the end)
3 cloves of garlic (minced)
¼ teaspoon kosher salt

1 lb. store-bought pizza dough (thawed if frozen)
8 oz. fresh mozzarella, cut/torn into small pieces ((227 grams))

Steps:

  • Place the oven rack at the very top setting and preheat the oven to 450 F (232C) degrees.
  • Place tomatoes on a sheet pan. Drizzle with olive oil and sprinkle with salt and pepper. Give them a toss. Roast until tomatoes start to burst, 9-10 minutes. Set aside. Do not turn the oven off.
  • Place a sheet pan or a pizza stone on the top shelf in your oven.
  • While the tomatoes are roasting make the basil mixture. To do so, place basil, garlic, salt, and pepper in the bowl of a food processor. Pulse a few times to break it into smaller pieces. While the machine is running, drizzle it with olive oil. You may have to scrape the sides with a spatula a few times to turn it into a paste.
  • Roll the pizza dough into a 14.5-inch circle. Spread it evenly with the basil mixture leaving an inch on the sides. The basil sauce will be a very thin layer. Scatter the roasted tomatoes and mozzarella pieces on top. Lightly brush the sides with olive oil.
  • Using a pizza peel or the back of a sheet pan, carefully slide the pizza onto the preheated sheet pan or pizza stone. Bake 12-14 minutes or until the cheese is totally melted and the sides turned golden brown.
  • Remove from the oven and sprinkle it with fresh basil. Let it rest for a few minutes, cut into 8 slices, drizzle with the balsamic reduction (if using), and enjoy.

2 c. balsamic vinegar
3 whole ripe tomatoes, sliced thick
12 oz. mozzarella cheese, sliced thick
fresh basil leaves

Steps:

  • In a small saucepan, bring balsamic vinegar to a boil over medium-low heat. Cook for 10 to 20 minutes, or until balsamic has reduced to a thicker glaze. Remove from heat and transfer to a bowl or cruet. Allow to cool.
  • When you're ready to serve, arrange tomato and mozzarella slices on a platter. Arrange basil leaves between the slices. Drizzle olive oil over the top of the salad, getting a little bit on each slice. Do the same with the balsamic reduction, making designs if you want. Store extra balsamic reduction in fridge for a later use.

1 pound tomatoes (fresh, supremely ripe)
Optional: 1 small clove garlic
3 tablespoons extra virgin olive oil
3 sprigs basil (fresh)
8 ounces mozzarella cheese (fresh)

Steps:

  • Gather the ingredients.
  • Bring a large pot of water to a boil.
  • While the water comes to a boil, prepare the tomatoes: Halve the tomatoes crosswise, squeeze excess juice from the tomatoes into a bowl large enough to hold the pasta once it's cooked, chop the tomatoes, and add the chopped tomatoes to their juices in the bowl.
  • Peel and mince the garlic if you want to use it, and add it to the tomatoes. Pour in the olive oil to tomatoes and toss to combine.
  • Remove the leaves from the basil stems, stack them up, and cut them crosswise into ribbons .
  • Add three-quarters of the basil to the tomatoes; set aside the rest to use as a garnish.
  • Dice the mozzarella. Add half of the mozzarella to the tomatoes (it will melt a bit with the pasta) and reserve the rest to add at the end.
  • Add enough salt to the boiling water to make it taste as salty as the sea (about 1 tablespoon salt to 2 quarts of water). Seriously, you want the water seasoned enough so that the pasta gets a bit of seasoning as it cooks and brings it to the whole dish.
  • When the water boils, add the pasta and cook it until it's tender to the bite. Drain and quickly add the pasta to the bowl with the tomato mixture in it. Toss well to combine everything thoroughly-the heat from the pasta will melt the cheese a bit, the pasta will absorb a bit of the tomato juices, and the tossing will help emulsify the tomato juice and olive oil into a real sauce.
  • Divide the pasta between 4 to 6 servings bowls and top with the remaining mozzarella and garnish with the remaining basil.
  • Serve and enjoy.
