- Put the cauliflower, potato and onion in a large saucepan with the butter and half of the oil. Gently heat the contents until they start to sizzle, then cover with a lid and sweat over a low heat for about 10 minutes, stirring occasionally. The vegetables should be softened but not coloured.
- Pour in the stock and bring to the boil, then pour in the milk and return gently to a boil. This way, there will be no scum forming from the milk. Season to taste then simmer, uncovered, for 10-15 minutes until the vegetables are soft. Pour in half the cream.
- Blend everything in a food processor or blender, in batches. For an extra creamy texture, push the purée through a sieve with the back of a ladle. Stir in the rest of the cream. (If preparing ahead cool, cover and chill for up to a day.)
- To serve, pick over the mushrooms. Wild mushrooms can be gritty so wash them quickly in a bowl of cold water then drain well and pat dry. Trim the stalks and chop or slice the mushrooms neatly. Heat the remaining oil in a frying pan and, when very hot, stir fry the mushrooms quickly until nicely browned, seasoning with salt and freshly ground black pepper as you cook them.
- Reheat the soup until piping hot. Check for seasoning and ladle into warmed bowls. Spoon the mushrooms into the centre and sprinkle lightly with the chives. Italy's elegant, mildly citrussy whites, such as Vernaccia di San Gimignano, or a Chardonnay would suit this rich soup.

- Place cauliflower chunks in a food processor in batches and process into rice-sized pieces.
- Melt butter in a small frying pan over medium-high heat. Saute mushrooms until softened and browned, about 5 minutes. Set aside.

- Wash and trim mushrooms and slice them in food processor.
- Heat oil in large nonstick pot or skillet; add mushrooms and cook over medium-high heat.
- Chop whole onions finely in food processor by pulsing and add to mushrooms; continue to saute until onions soften.
- Bring water for pasta to boil in covered pot.
- Wash, trim and quarter tomatoes; wash, dry and coarsely chop parsley; chop tomatoes and parsley finely in food processor by pulsing; add to onions and mushrooms; reduce heat to simmer.
- Chop cauliflower in food processor by pulsing; add to pot with hot pepper flakes; cover and continue cooking about 5 minutes, until vegetables are soft.
- Cook the pasta.
- In food processor, blend yogurt and ricotta. Coarsely grate Parmigiano and stir into yogurt mixture.
- Add the peas to the vegetables and cook 2 minutes longer.
- Remove from heat; stir in yogurt mixture; season with pepper and salt, if desired.
- Drain pasta and stir in.

- Preheat oven to 450 degrees with racks in upper and lower thirds. Brush cauliflower on both sides with 4 tablespoons oil; spread in a single layer on a rimmed baking sheet. Toss mushrooms with 3 tablespoons oil; spread on a second sheet. Toss bread with remaining 1 tablespoon oil. Season all with salt and pepper.
- Place cauliflower on top rack; roast 10 minutes. Add mushrooms on bottom rack; roast 15 minutes more. Flip cauliflower and mushrooms. Sprinkle bread over mushrooms; roast 10 minutes more. - To “rice” your cauliflower, place cauliflower florets in a food processor and pulse gently until it becomes the texture of rice. Optionally, if you don’t have a food processor, you can toss the florets into a blender and pulse on the chop setting. If you are more of a traditionalist in the kitchen, you can always just use a trusty old box grater (just watch your fingers).
