COWBOY CAVIAR
Thank Oklahoma for this easy, bright and tangy salad. It's made with one of the state's staple crops, black-eyed peas -- or cowpeas as some in the "Sooner State" like to say. With bursts of corn, tomato and pepper, it's a salad that can be served cold or at room temperature, making it perfect for a picnic or tailgate party.

- Cover this almost completely with one tablespoon red caviar, leaving a touch of sour cream showing. Sprinkle with a little more chives and spoon one-half teaspoon black caviar down the center. Continue until all of the slices are used.

Up your snack game with this quick and colorful recipe for Texas caviar that can be a dip, salad topping, taco filling and more. My family has always gone for the rainbow version, sneaking in veggies of every color to round out the bowl. COWBOY CAVIAR
Had something similar at a New Year's Eve Party. Since I was hosting a Packers vs Cowboys gathering, decided to make some to go with our taco bowls. Maybe it should be called Packers Caviar? Nah, doesn't have the same ring! Serve with crackers, tortilla chips, crudités or as part of a taco salad or bowl!
