Steps:
- If using fresh broccoli cook broccoli to desired tenderness. Sauté celery and onion in a bit of butter if desired. If using cooked rice, prepare rice. This can all be done ahead of time.
- Mix all ingredients and pour into a greased 2 quart casserole with a lid (or cover with foil).
- Sprinkle additional cheese on top.
- Bake covered at 350ºF for 45 minutes if using uncooked minute rice, if using cooked rice bake until warm through and cheese is bubbly.

This recipe was the 'birthday dinner' recipe that my husband requested from his mom when he was young. After she passed away, he thought the recipe was lost forever... Until I found it tucked away in one of her old cookbooks and made it for a surprise birthday present last year!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a saucepan bring 1 cup water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Saute onions in bacon drippings over medium heat.
- In a 9x13 inch baking dish combine cooked rice, bacon, onions, broccoli, soup, milk and cheese sauce.
- Bake in preheated oven for 30 minutes, or until golden brown.

- Heat oven to 350°F.
- Melt 1 Tbsp. butter in large skillet on medium heat. Add onions; cook and stir 3 to 5 min. or until crisp-tender. Add rice, soup, broccoli and CHEEZ WHIZ; mix lightly.
- Spoon into 1-1/2-qt. casserole sprayed with cooking spray. Melt remaining butter. Add to bread cubes in medium bowl; mix lightly. Sprinkle over casserole.

This recipe was given to me by my husband's Aunt Julia. It has been in the family for years. We serve it at all the family gatherings The children love it and are disappointed if someone doesn't make it. I double this to take to potlucks and always get asked for the recipe. This make be refrigerated or frozen before cooking.

- Preheat oven to 350 degrees.
- Cook rice, set aside.
- While rice is cooking -- Place broccoli, butter, onion and salt and pepper in bowl. Microwave for 10 minute stir then microwave for 5 more minutes.
- Microwave cheese wiz to melt.
- Grease 9 x 13 baking pan.
- Mix rice, cream of mushroom soup, cheese wiz and broccoli mixture together. Spread in pan.
- Cover and bake 45 minutes. Uncover and bake 15 more minutes.
- (note: you must use a shallow baking pan, I tried to bake in a deep casserole dish and it didn't solidify right).

- Cook onion in butter in large skillet until soft. Add remaining ingredients and cook just until cheese is melted. Put in 2 quart casserole dish. Bake at 350 (uncovered) for 1 hour. To make ahead and freeze: Mix all ingredients together (start with your rice cooked, not raw) and spoon into two or even three smaller casserole dishes, cover, label and freeze. If you thaw overnight, just cook the one hour. If cooking from frozen state, add ten minutes or so, check for doneness. Many thanks to Tornado Ali, for her wonderful tips for freezing this.

- Preheat the oven to 400 degrees. Spread the broccoli florets out on a baking sheet and toss them evenly with the olive oil. Give them a generous sprinkling of salt and pepper. Roast in the preheated oven for 18-20 minutes or until starting to brown on the tips.
- While the broccoli roasts, make the cheese sauce. Melt the butter in a saucepan over medium heat. Stir in the flour and whisk together until smooth. Cook until bubbly, about 2 minutes. Slowly add the milk, whisking constantly to combine. The mixture may be a little lumpy at first, but just keep whisking. As the mixture cooks it will become smooth and thick. Remove the mixture from heat and stir in cheese until melted.
- To assemble, place the broccoli in the bottom of a greased casserole dish. Pour the cheese mixture over top and stir to coat. In a small bowl crush the Ritz crackers and stir them with the melted butter. Spread the mixture evenly over top of the broccoli. Bake for 15-20 minutes or until crackers are golden.
