These cheesy roasted Brussel sprouts with cauliflower are so easy to make and taste great. Crispy roasted vegetables with a creamy homemade cheese sauce!

1 1/2 pounds Brussels sprouts, trimmed and cut in half
1 pound cauliflower florets (about half medium head)
2 tablespoons olive oil
1 teaspoon kosher salt
3 cloves garlic, minced
2 tablespoons unsalted butter
2 tablespoon all purpose flour
1 cup milk (I use 2%)
1/8 teaspoon pepper
1/8 teaspoon dry mustard
1 1/2 cups shredded cheese (I used 1 cup Swiss and 1/2 cup mozzarella), divided

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the Brussels sprouts, cauliflower, olive oil, salt, and garlic together until the vegetables are evenly coated.
  • Spread them on a rimmed baking sheet, and roast for 15-18 minutes, or until they are fork tender.
  • While the vegetables are roasting, make the cheese sauce.
  • In a medium saucepan over medium heat, melt the butter.
  • Add the flour and cook, stirring, for about a minute until the flour is browned.
  • Slowly add the milk, whisking constantly so the sauce is smooth.
  • Whisk in the pepper and dry mustard, and bring the sauce to a simmer. It should be steaming with small bubbles along the edges, and starting to thicken.
  • Lower the heat to medium low and slowly whisk in 1 cup of the cheese, continuing to stir until it is completely melted.
  • Reduce the heat to low and keep the sauce warm until the vegetables are finished roasting.
  • Remove the vegetables from the oven and transfer them to a large casserole dish, or a 9x13 inch baking dish. (They will just fit in a 9x13 dish so if you have something a bit larger that will make it easier to stir in the cheese sauce, but a 9x13 dish will work.)
  • Pour the cheese sauce over top of the vegetables and stir gently to coat everything in the cheese sauce.
  • Sprinkle the remaining half cup of cheese over top of the vegetables and bake for another 10-15 minutes, or until the cheese is melted on top and the sauce is bubbling.

1 cup sour cream
1/2 pound sliced fresh mushrooms
1 medium onion, chopped
2 tablespoons butter
2 packages (10 ounces each) frozen brussels sprouts, thawed and drained
3/4 cup shredded cheddar cheese

Steps:

  • In a small bowl, beat cream cheese and sour cream until smooth; set aside. In a large skillet, saute mushrooms and onion in butter until tender. Stir in brussels sprouts. Remove from the heat; stir in cream cheese mixture. , Spoon into a greased shallow 2-qt. baking dish. Cover and bake at 350° for 25-30 minutes or until bubbly. Uncover; sprinkle with cheddar cheese. Bake 5 minutes longer or until cheese is melted.

Steps:

  • Heat oven to 350°F. In 3-quart saucepan, place Brussels sprouts; add enough water just to cover. Heat to boiling; boil 6 to 8 minutes or until crisp-tender. Drain and return to saucepan; set aside.
  • Meanwhile, in 10-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Remove bacon with slotted spoon; drain on paper towels and set aside. Drain all but 1 tablespoon bacon fat from skillet.
  • Add butter to bacon fat in skillet. Heat over medium-high heat until butter is melted. Add onion; cook 2 to 3 minutes, stirring frequently, until crisp-tender. Add flour, thyme and pepper; cook and stir until well blended. Gradually stir in half-and-half and bouillon granules. Heat to boiling, stirring constantly; boil and stir 1 minute. 2 pounds Brussels sprouts (trimmed and halved)
3 tablespoons unsalted butter
3 tablespoons minced shallots
½ cup half and half (or heavy cream)
¼ cup grated or shaved Parmesan
½ cup shredded sharp cheese

Steps:

  • Preheat the oven to 375°F. If the brussels sprouts are large, you may want to cut the halves into quarters.
  • Heat the butter in a large ovenproof skillet over medium heat, then sauté the shallots for 1 minute until they begin to soften. Add the Brussels sprouts and sauté for 5 minutes until the outsides start to soften and brown just a bit. Pour over the half and half or cream which will quickly start to simmer. Add the cheddar and the Parmesan and stir until the cheeses have started to melt.
  • Transfer the pan to the oven and bake for 15 minutes until the whole thing is bubbly and the top is browned (a last minute under the broiler is a-ok for a little extra browning - just watch it carefully).

2 (10 ounce) packages frozen brussels sprouts
2 tablespoons butter
1 (10.75 ounce) can condensed cream of mushroom soup
2 eggs, beaten
½ cup shredded Cheddar cheese
½ cup dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring water to boil in a medium saucepan. Place frozen brussels sprouts in the water, and return to boil. Reduce heat, and simmer 6 to 7 minutes, until tender; drain.

2 1/2 lbs Brussels sprouts
1/4 cup butter
1 onion, chopped
1/4 teaspoon dried thyme (rub between fingers to release flavor)
1 -2 tablespoon fresh minced garlic (optional or to taste)
1/4 cup flour
2 cups half-and-half cream (I use 1-3/4 cups half and half and 1/4 cup whipping cream, unwhipped)
1 1/2-2 cups gruyere cheese (or similar cheese like Swiss or Gouda, but it is better using the gruyere cheese)
seasoning salt (can use regular salt)
pepper
2 cups fresh breadcrumbs
1/2 cup gruyere cheese, shredded (can use Gouda also)
3 tablespoons butter, melted

Steps:

  • Set oven to 350 degrees.
  • Grease a baking dish large enough to hold the mixture (about an 8-cup).
  • To make the topping: stir together the bread crumbs and melted butter, add in the cheese, mix well until combined; set aside.
  • Wash and trim the sprouts and cut an "X" in the bottom.
  • Cook the sprouts in boiling water for about 7-8 minutes, or until fairly tender.
  • Drain and plunge into ice water or very cold water (squeeze out any excess water with hands).
  • Place into prepared baking dish.
  • In a saucepan, melt butter over medium heat.
  • Add in the thyme, fresh garlic (if using) and chopped onion; saute for 3-5 minutes until soft.
  • Add/whisk in flour, cook whisking for 5 minutes.
  • Add in half and half cream, seasoning salt and pepper; bring to a very light boil, and whisk continuously for about 6-7 minutes until mixture is smooth and thick.
  • Remove from the heat.
  • Add in the gruyere cheese; stir until melted.
  • Pour the creamed mixture over the sprouts in the dish.
  • Sprinkle with the topping mixture.
  • Bake for about 30 minutes, or until golden brown and bubbly.

5 slices bacon
3 tbsp butter
1 cup diced onion
2 pounds fresh Brussel Sprouts
1 10.5 ounce Campbell's Cream of Mushroom Soup
1/4 cup sour cream
1/4 cup milk
1 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp ground nutmeg
1/2 tsp kosher salt
1/2 tsp ground pepper
1/4 cup dry white wine (optional)
1 cup shredded cheddar cheese
1 cup shredded Colby Jack cheese

Steps:

  • Trim off the stem end of the Brussel Sprout and cut in half. Rinse and set aside.
  • Preheat oven to 375 degrees.
  • Cut the bacon into bite sized pieces and cook in a large skillet over medium heat until crispy.
  • Using a slotted spoon, remove the bacon from the pan and pour off all but two tablespoons fat.
  • Return the pan to the stovetop and add the onions. Cook the onions until softened slightly (don't overcook because they'll finish cooking in the oven), approximately 2-3 minutes.
  • Stir in the garlic and cook for 1 more minute.
  • Add the brussel sprouts to the pan and cook for 3-4 minutes. Give the sprouts a stir and cook for an additional 4-5 minutes. (You want to get some of them to have a golden brown sear for extra flavor.)
  • Add the wine to the pan, if using, and scrap up the brown bits with a wooden spoon to deglaze.
  • Remove the skillet from the heat and set aside.
  • In a medium bowl, whisk together the Campbell's Cream of Mushroom soup, sour cream, milk, garlic powder, nutmeg, cayenne, salt and pepper.
  • Pour the cream sauce mixture into the skillet and stir to coat the Brussel sprouts.
  • Stir in half the cheese and toss to combine.
  • Transfer the Brussel sprout mixture to a 2 quart baking dish coated with cooking spray.
  • Sprinkle the Brussel sprouts with the remaining cheese and the reserved bacon.
  • Bake the Brussel sprout casserole for 20 minutes or until the cheese is bubbling and melted.
  • Serve immediately.

1 1/2 cups sharp white cheddar cheese, grated

Steps:

  • Heat a large skillet and crisp-cook the bacon. Transfer it to a plate and set it aside. Pour off all but 2 tablespoons of bacon fat from the pan. Add the onion to the pan and saute over medium heat for 6 to 7 minutes; add the garlic for the last minute. Scrape the onions and garlic into a large, shallow casserole and spread them around evenly. Set aside.
  • Trim the Brussels sprouts, then cut them in half (or quarters, if very large) lengthwise. Bring a large soup pot of well-salted water to a rolling boil. Add the Brussels sprouts. Return to a boil and cook for 5 minutes. Drain immediately in a colander for 5 minutes. Transfer to the casserole, spreading the sprouts evenly in the dish. Set aside. Heat the oven to 375°F.
  • Combine the milk and chicken broth in a small saucepan. Bring to a simmer, then remove from the heat.
  • Meanwhile, melt the butter in a large saucepan. Add the flour and cook, stirring over medium heat, for about 1 minute, until the flour is light golden brown. Whisk in half of the hot milk and broth. Heat and whisk for a minute or so, until thick. Add the remaining liquid and cook for about 5 minutes, whisking frequently.
  • Whisk in the Parmesan cheese, mustard, salt, thyme, and pepper. Pour the sauce evenly over the Brussels sprouts. Mince the bacon and sprinkle it over the sauce. Sprinkle evenly with the Cheddar cheese and dust lightly with paprika, if desired.
  • Place the casserole on the center oven rack and bake for 30 minutes, until bubbly and golden brown. Cool for about 5 minutes before serving. Makes 10 servings.

Steps:

  • Preheat oven to 400°F, and butter a casserole dish. In a large skillet, cook bacon until starting to crisp. Remove with a slotted spoon, and reserve bacon fat. Place Brussels sprouts in pan, cut side down, and allow to caramelize slightly. Season with salt and pepper, add garlic, shallots and butter, and cook another 3 minutes until tender. Sprinkle with flour and stir to incorporate. Add cream, and bring to a boil. Reduce to a simmer, and cook until it starts to thicken, 3-5 minutes. Sprinkle with white cheddar, season with salt and pepper and a pinch of cayenne. Toss bacon and Brussels sprouts mixture together with cheese sauce, pour into baking dish and top with Parmesan and breadcrumbs. Bake for 30-40 minutes until golden and bubbly.
