6 tablespoons butter
1 ⅛ cups all-purpose flour
½ cup rolled oats
6 tablespoons packed brown sugar
⅛ teaspoon salt
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter or margarine in a large saucepan. Remove pan from heat; stir in oats, flour, brown sugar, and salt until a dry, crumbly dough forms. Press about 2/3 of the dough into the bottom of 9 inch square pan, making a firm even layer.
  • Spread cherry pie filling in the crust, and sprinkle with remaining crumb mixture.
  • Bake for 40 to 45 minutes, until top is lightly browned. Serve warm or at room temperature.

Use summer cherries to make this easy oat-topped crumble. Perfect with a scoop of vanilla ice cream, it makes a superb summertime dessert

1kg fresh cherries , pitted
50g golden caster sugar
1 lemon , juiced
½ tsp vanilla extract
150g plain flour
100g cold butter
½ tsp salt
70g soft brown sugar
100g rolled oats
40g flaked almonds
ice cream , to serve

Steps:

  • Tip the cherries into a medium-sized ovenproof dish (around 28cm) and mix with the sugar, lemon and vanilla. Set aside.
  • Heat the oven to 200C/180C fan/gas 4. Tip the flour and butter into a mixing bowl and rub together with your fingertips to create a fine, breadcrumb-like mixture. Stir through the salt, brown sugar, oats and most of the almonds. Tip over the cherry mixture, then top with the remaining almonds.
  • Bake the crumble in the centre of the oven for 30-35 mins or until the topping is golden brown. Serve warm with vanilla ice cream.

4 cups fresh sweet cherries , pitted
3/4 cup water
3/4 cup sugar
2 1/2 tablespoons cornstarch
For the Crumble Topping
4 tablespoons butter
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup walnuts or pecans, finely chopped

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F. Lightly spray 4 (7- to 8-ounce) ramekins or 5 to 6 (5- or 6-ounce) ramekins or custard cups with cooking spray. Alternatively, lightly butter bottoms and sides.
  • Combine cherries, water, sugar, and cornstarch in a medium saucepan and stir to blend. Place pan over medium heat and bring to a simmer.
  • Reduce heat and continue simmering, uncovered, for 10 minutes, stirring frequently.
  • Divide cherry mixture among ramekins.
  • Combine topping ingredients in a medium bowl.
  • Sprinkle topping evenly over each filled ramekin.
  • Put ramekins in oven with a baking sheet on rack below to catch drips. Bake for 25 to 30 minutes, or until topping is browned and filling is bubbly.

1 tablespoon fresh lemon juice
1/2 teaspoon salt, plus a pinch

1/4 teaspoon pure almond extract
3/4 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 cup sliced almonds
6 tablespoons cold unsalted butter, cut into small cubes
Cooking spray
12 ounces semisweet chocolate, chopped
1 stick unsalted butter
3/4 cup packed light brown sugar
3/4 cup granulated sugar
4 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
1 cup all-purpose flour
1/2 cup almond flour
3/4 teaspoon salt

Steps:

  • Make the filling: Combine the cherries, granulated sugar, lemon juice and a pinch of salt to a boil in a small saucepan over medium heat; bring to a boil. Reduce the heat to a simmer; cook, stirring, until the juices are reduced, about 10 minutes. Mix the cornstarch with the water in a small bowl, then stir into the pan and cook until thickened, 1 to 2 minutes. Remove from the heat and stir in both extracts. Spread on a plate to cool.
  • Meanwhile, make the topping: Combine the oats, flour, brown sugar, almonds and remaining 1/2 teaspoon salt in a bowl. Work in the butter with your fingers until the mixture is crumbly. Chill until ready to use.
  • Make the brownies: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on all sides; coat with cooking spray. Melt the chocolate and butter in a saucepan over medium heat, stirring. Remove from the heat; whisk in both sugars. Whisk in the eggs and both extracts. Whisk both flours and the salt in a bowl, then whisk into the batter.
  • Spread the batter in the prepared pan. Top with the cherry filling, then the crumb topping. Bake until a toothpick inserted into the center comes out mostly clean, 45 to 55 minutes. Let cool slightly in the pan, about 20 minutes. Carefully lift out of the pan using the foil overhang and transfer the brownies to a rack to cool completely. Cut into pieces.

1 lb sour cherry, pitted (to pit the cherries, squeeze them between your fingers)
1/4 cup granulated sugar
3/4 cup all-purpose flour
1/4 cup butter
1/2 cup packed demerara sugar
1 pinch ground ginger
1 pinch ground cinnamon

Steps:

  • Pre-heat oven to 350*F.
  • Toss cherries with granulated sugar and place in an ovenproof dish.

200g plain flour
50g ground hazelnut
140g cold butter , cubed
50g caster sugar
3 tbsp raspberry jam or bramble jelly
500g cherry , stoned
50g hazelnut , roughly chopped
2 tbsp demerara sugar

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Tip the flour and hazelnuts into a food processor, then add the butter. Process to fine crumbs, add the sugar, then mix briefly. Remove 3 rounded tbsp of the mixture and put in a separate bowl. Add 1-2 tbsp cold water to the food processor, then pulse to form a firm dough. Tip out onto a lightly floured surface and knead briefly. If the dough is soft, wrap in cling film and chill for 20 mins.
  • Roll out the dough and stamp out rounds using a 10-12cm cutter. You should get 12 rounds in total from the dough - you will need to gather and re-roll the trimmings. Use to line 12 x 7-8 cm tartlet tins or the 12 holes of a muffin tin.
  • Warm the jelly in a pan until it melts a little, then stir in the cherries. Divide between the pastry cases. Stir the chopped hazelnuts and sugar into the reserved pastry mix, then sprinkle over the cherries. Bake for 25-30 mins until the pastry and crumble are lightly browned and the cherries cooked. Leave to cool for 10 mins in the tins, then carefully remove - you may need to loosen the edges of the pies with a small, sharp pointed knife, then invert them onto plates and quickly flip the right way up. Serve warm or cold.

180g salted butter , softened, plus extra for the tin
220g golden caster sugar
3 large eggs , lightly beaten
250g self-raising flour
½ tsp baking powder
50g ground almonds
80g soured cream
300g fresh cherries , stoned and halved
45g plain flour
35g cold salted butter , cubed
20g golden caster sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter the base of a deep 20cm loose-bottomed cake tin and line with baking parchment.
  • To make the crumble topping, put the flour and butter in a bowl and rub together with your fingertips until you have a coarse, crumbly texture. Stir through the sugar, then transfer to the fridge.
  • Beat the butter and sugar with an electric whisk for 5 mins until light and fluffy. Gradually whisk in the eggs, beating well after each addition. Fold in the flour, baking powder, ground almonds and soured cream, then most of the cherries, reserving a handful to garnish. Spoon the mixture into the prepared tin and smooth over the top with a spatula. Dot with the reserved cherries, then bake in the centre of the oven for 30 mins.
  • Scatter over the crumble topping, then return the cake to the oven and bake for a further 30-50 mins until a skewer inserted in the middle comes out clean. Remove from the oven and leave to cool in the tin.
  • Slice the cake into thick wedges and serve with custard or ice cream, if you like. Store in a tin or airtight container for up to three days.
