1 ½ cups all-purpose flour
1 teaspoon baking soda
1 cup unsalted butter, softened
¾ cup brown sugar
¾ cup white sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups rolled oats
1 cup dried cherries
1 cup miniature semisweet chocolate chips
1 cup toffee baking bits

Steps:

  • Sift together the flour and baking soda; set aside. In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the egg and vanilla. Gradually stir in the sifted mixture, then mix in the oats, cherries, chocolate chips and toffee bits until evenly distributed. Divide the dough in to 3 portions and form them into logs, about 2 inches in diameter. wrap in waxed paper and refrigerate or freeze until firm.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line them with parchment paper. Slice dough logs into 3/4 inch thick slices. Place the cookies 2 inches apart onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

This was out of inspiration for something to do with my fresh sour cherries. Only got a few this year so wanted to make something really tasty! I think this did it. Very simple and can be adjusted to your needs if fresh sour cherries are not available, but I do not recommend using Bing or sweet red cherries for this. Use sour cherries in the can if you can find them. Enjoy! Refrigerate when completely cooled.

1 (9 inch) prepared pastry for a single-crust pie
4 cups fresh sour cherries, pitted
1 cup white sugar
4 tablespoons cornstarch, or more as needed
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup packed light brown sugar
⅔ cup all-purpose flour
⅔ cup rolled oats, or more to taste
1 tablespoon ground cinnamon
½ teaspoon salt
½ cup butter, cut into small cubes

Steps:

  • Line the bottom of an oven with aluminum foil to catch spills. Preheat the oven to 400 degrees F (200 degrees C). Line a 9-inch square baking dish with the pie crust.
  • Place cherries in a bowl. Let sit in the refrigerator for about 4 hours until juices start to come out. Gently press down on top of the cherries to release juice. Pour off 3/4 cup juice, reserving cherries in the bowl.
  • Pour juice into a small saucepan over medium heat. Mix sugar, cornstarch, and cinnamon together. Stir mixture into the juice before it starts to steam. Bring mixture to a boil, stirring constantly. Remove from heat and keep stirring until mixture starts to thicken, 3 to 5 minutes. Stir in vanilla and almond extracts.
  • Pour juice mixture into the bowl with the cherries; stir until combined. Pour mixture into the prepared crust.
  • Bake in the preheated oven for 40 minutes while preparing the crumb topping.
  • Mix brown sugar, flour, oats, cinnamon, and salt together in a large bowl. Cut in butter pieces with a fork until they're the size of small peas.
  • Remove cherry pie from the oven. Top with the crumb topping and bake for an additional 20 minutes. Remove from oven and cut a small hole in the center to help vent. Let cool, at least 1 hour. Serve warm.

2 Tablespoons cornstarch

  • Preheat oven to 350*F Spray a 9 x 13 casserole dish with cooking spray and set aside. In a medium bowl add oats, flour, butter, brown sugar and salt. Using a fork or pasty blender, combine ingredients together until they resemble coarse crumbs. Set aside. In a new bowl combine rhubarb and cherry pie filling. Set aside. In a sauce pan add white sugar, water and cornstarch. Mix well. Cook cornstarch mixture over medium heat until it is clear and thickened. Remove from stove and add vanilla. Stir well. Pour thickened mixture over rhubarb and cherry mixture. Mix well. Scoop out rhubarb mixture into prepared casserole dish. Top with crumbled oatmeal mixture.
