Steps:
- Heat oven to 350 degrees. Line two baking sheets with parchment paper, and set aside.
- In the bowl of a food processor, blend 3 1/2 ounces almonds (about 1 cup) with a cup sugar until almonds are finely ground. Transfer almond mixture to a medium bowl. Stir in flour, orange zest, and crushed anise seeds.
- Using an electric mixer, whisk egg whites, salt, and remaining 1/4 cup sugar to soft glossy peaks. Fold egg-white mixture into dry ingredients until just blended.
- Spoon level tablespoons of batter 2 inches apart on prepared baking sheets. Using remaining 3/4 ounce almonds, arrange 3 sliced almonds on each cookie. Sift confectioners' sugar over cookies. Bake until cookies are lightly browned along edges, about 12 minutes. Cool slightly before removing from sheets with a spatula.
ITALIAN ALMOND-ORANGE COOKIES
Steps:
- In a medium bowl, mix egg whites, sugar, orange zest and honey with a whisk until smooth.
- Add the almond flour and baking powder and mix with a wooden spoon or rubber spatula until moist and all of the dry ingredients are absorbed into the wet and combined.
- Cover and refrigerate for one hour and as long as 24 hours. I made my dough the night before then baked the next morning.
- When ready to bake, preheat oven to 325 degrees F with two racks in top two positions.
- Cover two cookie sheets with parchment paper.
- Place the powdered sugar in a small bowl.
- Roll the dough on your counter with your hands into a fat log and cut it into two equal pieces.
- Roll each piece out into logs and cut in half then each piece in half again. Then cut each piece into three. This will give you 24 pieces.
- Roll each piece into a ball then roll in the powdered sugar then onto the cookie sheets, 12 per tray.
- Bake both together for 15-17 minutes, rotating the pans half way through.
- The cookies are done when they start to crackle and flatten out and are slightly browned on the bottom. The centers will be very soft so don't go by the feel of the cookie and don't lift off the cookie sheet yet.
- As they cool on the cookie sheet, they stiffen up and have a crisp outside and a chewy center.
- Store at room temperature in an air-tight container.

Steps:
- Place an oven rack in the center of the oven and preheat to 350 degrees F.
- Butter the bottom and sides of a 9-by-13-inch glass or ceramic baking dish. Line the bottom with an 8-by-20-inch piece of parchment paper, allowing the excess paper to hang over the sides.
- For the crust: Whisk the all-purpose flour, almond flour, baking powder, salt and baking soda in a medium bowl.
- Beat the sugar and butter using an electric hand mixer until combined in a large bowl. Beat in the egg, cream and vanilla until smooth. Add the dry ingredients and beat until the mixture forms into clumps. Press the clumps together to form a dough. Knead the dough for 30 seconds and wrap in plastic. Refrigerate for 1 hour.
- For the filling: Place 1/4 cup water, the figs, orange juice, vanilla extract and orange zest in a food processor. Blend until the figs are finely ground, about 2 minutes. Add the almond butter and blend until incorporated. Add the almonds and pulse until combined.
- Remove the plastic from the dough and cut in half. Roll out 1 piece of dough into an 8-by-12-inch rectangle on a well-floured work surface. Cut the dough in half lengthwise and then in half crosswise to make 4 equal-size pieces of dough. Transfer the dough pieces to the prepared baking dish using a spatula, and arrange in a single layer. Pinch the edges of the dough together to seal. Spoon the filling onto the dough. Spread the filling evenly over the dough using damp hands. Smooth the top of the filling using a rubber spatula. Roll out the remaining dough into an 8-by-12-inch rectangle. Cut into 4 equal pieces and place on top of the filling, pinching the edges of the dough together to seal. Bake until golden, 25 to 30 minutes. Place the baking dish on a wire rack to cool completely, about 1 hour.
- Using the excess parchment paper as handles, remove and place on a cutting board. Cut the cookie into twenty-four 1 1/2-inch-square pieces and serve.
GLAZED ALMOND COOKIES
Elegant little tea cookies with an almond pressed into the top. I like to cut the whole almonds in half to put on top of the cookies.

ALMOND ORANGE MACAROONS
These are some of the most delicious cookies I have ever tasted. I like to peel the orange zest with my Microplane zester, which gives me a nice, powdery zest, but you can use a potato peeler and cut strips as well, since it will all get mixed up with the sugar in the food processor.

Steps:
- Place the oven rack in the lowest position possible in your oven.
- Preheat the oven to 300°F.
- Line two baking sheets with parchment paper.
- Place the sugar, confectioners' sugar, orange zest and salt in the bowl of a food processor together with the steel knife.
- Grind the zest very find with the sugar.
- This will usually take 3 20-second whirls of the processor.
- Scrape the work bowl with a spatula in between whirls and stir up the sugar mixture.
- Scatter the diced almond paste evenly over the sugar mixture and give the processor about two more 10 seconds whirls.
- The texture should be like coarse meal.
- Again, scrape the work bowl in between whirls.
- Add the egg whites and mix with about two 5 second whirls.
- Don't forget to scrape the bowl at half-time.
- Remove the steel knife and set aside.
- Working directly from the food processor bowl, scoop up the dough in rounded 1/2 teaspoonfuls and drop onto the parchment lined baking sheets.
- Space the cookies about 2 inches apart, these babies really spread as they bake.
- Bake the cookies, one sheet at a time, until lightly browned and crackly on top, about 20-25 minutes.
- Remove the cookies together with the parchment paper to a wire rack to cool.
- To remove the cooled cookies from the paper, loosen them carefully around the edges with a spatula, using short strokes.
- These are not brittle cookies, and you should get the hang of it soon enough.
- You can layer the macaroons between sheets of wax paper in an airtight Tupperware, and store them in a cool, dry spot.

CHEWY ALMOND COOKIES
My children and grandchildren adore these old-fashioned cookies, and they make a good unfrosted choice for a holiday cookie plate. But they're wonderful year-round, too—I even keep unbaked dough in my freezer so I can whip up a batch whenever my family comes for a visit. —Betty Speth, Vincennes, Indiana
