CHEESY CHICKEN AND BROCCOLI COBBLER
I believe I've achieved something wonderful here, in that it's remarkably quick to throw together and the end result is fantastic. It's tasty, filling and ... even has green things in it! The basic idea on this one is to toss together a bunch of raw ingredients, cover the bottom of a casserole pan, top with biscuit dough and bake. I wasn't really sure what would happen, but ... I did it and the end result was nothing short of phenomenal! Everything cooked properly. Some of the water came out of the chicken and broccoli, which mixed with the melted cheese creating something like a cheesy sauce, which clung to the chicken and biscuits as I broke them apart and ate it. It's not the most beautiful dish when it's done, but what it lacks in aesthetics, it makes up for in ease and just good old fashioned tastiness! If there is any downfall to it, it's the potentially wacky ingredients in the biscuit dough, but ... I personally tend to use these ingredients on a regular basis. These are the kinds of things you'd find in just about any long term low-carber's kitchen. The only truly wonky ingredient is the tapioca flour, but ... it goes GREAT lengths towards holding these biscuits together ... and I'm slowly but surely learning that it's just a great ingredient to have lying around. A little bit goes a long way. I've got a bag kicking around my freezer. It's been there for about a year, but ... it's close to time to re-up. This suggests it gets used, but ... also lasts a really long time! Without further adieu ... here's the recipe!

Steps:
- Pre-heat oven to 350 F (177 C).
- In a medium sized mixing bowl, combine the almond flour, coconut flour, tapioca flour, baking powder and salt. Cut in the chilled butter cubes, until the cubes are about the size of peas. Add the egg and stir in the almond milk until the dough pulls away from the side of the bowl. Dough should be somewhat wet, but dry enough to form shapes.
- Dust countertop or a piece of parchment paper with almond flour. Place the dough on the almond flour and roll into a log about 1 to 2 inches (3 to 4 cm) thick. Cut 16 biscuits from the log, by slicing every 3/4 of an inch (2 cm), or so. Set aside.
- In a large mixing bowl, combine chicken, broccoli, grated cheese, garlic, optional chili flakes and a bit of salt and pepper. Mix well and then pour into a pour into a deep 13" x 9" casserole pan (33cm x 23cm x 5cm). Cover the chicken mixture by tiling the 12 biscuits over the top of the chicken mixture.
- Place the pan in the oven and bake for about 28 minutes, or until the top is nice and golden. Remove from the oven and allow to rest for about 5 minutes. Serve!

CHICKEN CON BROCCOLI (OLIVE GARDEN STYLE)
My mother is a lover of Italian food,she really wanted this recipe after seeing the olive garden commercial.I finally found it online,printed it and attempted to try it.It is a great recipe,but unfortunatly,the steps did not include some important steps.So I dediced to pass along the easiest way to prepare this.I must say,this was a huge success.This serves 4 people,so you may double it to feed more of course 8) Good luck and enjoy it!

Steps:
- First, cook the Broccoli.
- In a medium saucepan, cook the chicken in the olive oil, letting each side brown.
- Leave remaining oil drippings in pan, setting the chicken aside for now.
- In salted walter, boil the pasta, not quite all the way, (it will be simmered later).
- Drain the pasta, and place it back into pot.
- In the remaining olive oil from chicken, over medium, brown the garlic.
- When caremelized, add the heavy cream & cornstarch and stir well.
- Stir once in a while, allowing the sauce to thicken.
- When prepared, add the sauce to the pasta combining fettuccini pasta.
- Chop the chicken into cubes, toss in into pasta, add broccoi.
- Combine well, add in salt and pepper and the cheese.
- Enjoy!
- Remember, this is 4 servings, you may double.

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

You don't need a wok to make this just a large skillet --- this recipe will feed 2-3 people but can be doubled easily and all amounts may be adjusted to taste --- if you prepare the chicken and broccoli florets ahead of time this recipe takes little time to prepare, I sometimes add in matchstick-size carrots also, the red pepper flakes may be adjusted to suit heat level, my family likes extreme spice so add in lots! :)

- In a large skillet heat about 1-1/2 tablespoons sesame oil over medium-high heat.
- Add in chopped garlic and dryed chili flakes; saute for about 1 minute.
- Add in broccoli florets and 4 tablespoons chicken broth; cover skillet and cook until the broccoli is just crisp-tender (about 2 minutes) transfer to a bowl.
- Add in 1 tablespoon more sesame oil to the skillet.

- Melt 1 stick butter in a large frying pan over medium heat. Add onion and garlic and saute until onion is translucent, about 5 minutes.

- Mix cumin, coriander, paprika, turmeric, black pepper, salt, and cayenne together in a small bowl for the spice blend.
- Coat chicken breasts generously on both sides with about 1/2 of the spice blend and refrigerate, 2 to 12 hours. Reserve remaining spice blend until needed.
- Cut broccoli florets off the stems. Slice the stems into strips, and then into 1/4-inch cubes, and reserve. Cut the florets into 1-inch pieces and set aside.
- Heat butter and olive oil in a deep skillet or saucepan over medium-high heat. Add the chicken breasts and brown well, about 3 minutes on each side. Transfer onto a plate and let cool enough to handle, about 10 minutes.
