This is a fabulous recipe which is very quick to put together and even quicker to eat! It's been in the recipe folder on my computer for a while so I can't remember where it originally came from. I have actually added a few salad leaves in the past so feel free to play around with it.

2 chicken breasts
1 teaspoon vegetable oil
3 tablespoons fresh mint leaves
3 tablespoons fresh coriander leaves
sea salt
fresh ground pepper
2 tablespoons salted peanuts
1 lime, quartered
2 tablespoons lime juice
2 tablespoons fish sauce
1 teaspoon sesame oil or 1 teaspoon vegetable oil
2 teaspoons sugar
4 small red shallots, sliced
1 small red chile, sliced
2 spring onions, finely sliced

Steps:

  • Heat the grill; Brush the chicken with vegetable oil and grill until cooked through; Let it rest for five minutes and then slice thinly.
  • For the dressing, whisk the lime juice, fish sauce, sesame oil, and sugar until the sugar dissolves; Add the sliced shallots, chilli and spring onions and toss together.
  • Tear the mint and coriander leaves and lightly toss with the chicken, salt and pepper.
  • At the last minute, add the dressing to the chicken and toss lightly; Arrange it on plates, scatter with peanuts and serve with lime wedges.

1 tablespoon sugar
1 1/2 teaspoons rice vinegar

1 1/2 tablespoons Vietnamese or Thai fish sauce (nuoc nam or nam pla)
1 1/2 tablespoons vegetable oil
1/2 medium onion, finely sliced
Freshly grated black pepper
7 to 8 ounces white cabbage, shredded
1 medium carrot, shredded, julienned, or grated
7 ounces cooked chicken breast, shredded, or cut into fine strips
1 bunch mint, plus extra for garnish, leaves roughly chopped

Steps:

  • In a medium bowl, stirring with spoon, combine the chile, garlic, sugar, vinegar, lime juice, fish sauce, oil, onion, and black pepper, set aside for 1/2 hour. In a large bowl combine cabbage, carrot, chicken breast, and mint, tossing with tongs. Pour cabbage mixture over the dressing, tossing with tongs, slowly and patiently so everything is coated. Add salt, to taste. Serve on a flat plate with mint for garnish.

Steps:

  • Using a fork, pull chicken meat from bone in shreds.

Steps:

  • Brush grill grates with oil. 1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed lemon juice
3 tablespoons canola oil
2 tablespoons soy sauce
1 tablespoon honey
12 mint leaves, roughly chopped, plus sprigs for garnish
1-inch piece ginger, peeled and finely grated
2 whole boneless, skinless chicken breasts
6 ounces sugar snap peas, trimmed
4 cups well-washed and -dried arugula leaves
1/4 pound pea shoots
Coarse salt and freshly ground pepper
1 small jicama, peeled and julienned
1 small ripe mango, peeled, pitted and julienned
6 lavash flatbreads

Steps:

  • In a blender, combine lime juice, lemon juice, oil, soy sauce, honey, mint, and ginger. Process dressing until smooth. Set aside.
  • Place chicken in a medium stockpot. Add enough water to cover by 1 inch. Bring to a boil. Lower heat, and simmer until cooked through, about 10 to 12 minutes. Transfer chicken to a medium bowl; allow to cool slightly. Shred chicken, and toss with all but 2 tablespoons of dressing. Set aside.
  • While the chicken is cooking, prepare an ice bath. Set aside. Bring a medium saucepan of salted water to a boil. Add snap peas, and cook for 30 seconds. Using a slotted spoon, transfer to ice bath to cool.
  • In a medium bowl, combine snap peas, arugula, and pea shoots. Toss with 2 tablespoons of dressing. Season with salt and pepper.
  • Add jicama and mango to chicken. Toss to combine. Season with salt and pepper. Cover each lavash with arugula mixture. Divide chicken salad between lavash. Roll up to enclose filling. Cut each lavash in half on the diagonal, and serve.

1 large cucumber, peeled
2 limes
1 tablespoon white vinegar (rice or wine)
1/2 tablespoon superfine sugar
1 ounce mint leaf
1 small chili pepper, finely sliced

Steps:

  • Finely slice half of the cucumber into a large bowl. Cut the skin off the lime, then cut out the segments. Add these to the bowl and squeeze any juice out of the bit left in the middle. Add the vinegar and sugar, cover and leave in the fridge.
  • When ready to serve, slice and add the remaining cucumber, the mint and the chili and toss together. Season with salt and a touch more vinegar if you like.

zest and juice 3 limes
3 tbsp fish sauce
3 tbsp soft light brown sugar
2 hot red chillies , thinly sliced (see tip, below)
1 tbsp extra virgin olive oil
2 garlic cloves , crushed
1 tsp turmeric
handful coriander stems, finely chopped
8 chicken leg or thigh pieces, skin on
bunch spring onion , shredded lengthways
½ cucumber , halved, deseeded and cut into long strips
200g baby tomato , halved
handful coriander
handful Thai basil leaves
2 ripe avocados , sliced
handful toasted cashews or peanuts

Steps:

  • Whisk together the lime zest and juice, fish sauce, sugar and chillies until the sugar dissolves. Pour 1/3 of this mix into a bowl, add the oil and set aside (this will be the dressing). Put the remainder into a large food bag with 1 tsp salt, the garlic, turmeric and coriander stems. Slash each piece of chicken down to the bone a few times, then add to the marinade and squish it around well in the bag. Chill for at least 2 hrs, or ideally up to 24 hrs.
  • Heat oven to 180C/160C fan/gas 4 (if barbecuing, get the coals ready). Lift the chicken from the marinade and into a roasting tin. Roast for 30 mins until cooked through but not yet completely tender.
  • If you're barbecuing, transfer the chicken from its tin to a hot barbecue for 10 mins more, turning once crisp (otherwise continue roasting in the oven). Spread the spring onions, cucumber and tomatoes over a platter, add the chicken, then finish with the herbs, avocados, nuts and dressing.

1 clove garlic, crushed

4 tablespoon(s) clear honey
4 tablespoon(s) lime juice
12 - boneless chicken thighs
- salt and pepper
- salad, to serve along with meal
SAUCE
1/2 cup(s) low fat unsweetened thick yogurt
1 tablespoon(s) finely chopped mint
2 teaspoon(s) grated lime rind

Steps:

  • Combine the mint, honey and lime juice in a bowl and season with salt and pepper to taste. Use toothpicks to keep the chicken thighs in neat shapes and add the chicken to the marinade, turning to coat evenly.
  • Leave the chicken to marinate for at least 30 minutes, longer if possible. Cook the chicken on a preheat moderately hot grill or broiler, turning frequently and basting with marinade.
  • The chicken is cooked if the juices run clear when the chicken is pierced with a skewer. Meanwhile, mix together the sauce ingredients. Remove the toothpicks and serve the chicken with a salad and the sauce for dipping or pouring.

1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 chicken wings, bony tips removed and discarded

Steps:

  • 1. Stir together the zest, lemon juice, lemon oil, 1 tablespoon of the mint, half the garlic, the paprika, cumin, salt, and pepper with a fork, in a large bowl. Add the chicken and turn to coat. Let stand at room temperature for 30 minutes, turning occasionally.
  • 2. Preheat the broiler. Place the chicken on the broiler pan and broil 4 to 5 inches from the heat, turning once, for about 5 minutes on each side, or until golden brown and just cooked through.
  • 3. Transfer the chicken to a platter, garnish with the lemon wedges, sprinkle with the remaining 1 tablespoon mint and garlic, and serve.
  • To make 1 cup lemon oil, put a cup of extra virgin olive oil, olive oil, grapeseed oil, or vegetable oil in a jar with 3 tablespoons of finely grated lemon zest. Cover tightly and refrigerate for at least 3 weeks, shaking occasionally. Pour through a strainer and transfer to a jar. Discard the zest and refrigerate the oil.

1 tbsp rapeseed oil

1 garlic clove , finely grated
2 skinless chicken breast fillets (300g)
160g fine beans , trimmed and halved
2 peaches (200g), each cut into 8 thick wedges
1 red onion , cut into wedges
1 large Little Gem lettuce (165g), roughly shredded
½ x 60g pack rocket
1 small avocado , stoned and sliced
240g cooked new potatoes

Steps:

  • Mix the lime zest and juice, oil and mint, then put half in a bowl with the garlic. Thickly slice the chicken at a slight angle, add to the garlic mixture and toss together with plenty of black pepper.
  • Cook the beans in a pan of water for 3-4 mins until just tender. Meanwhile, griddle the chicken and onion for a few mins each side until cooked and tender. Transfer to a plate, then quickly griddle the peaches. If you don't have a griddle pan, use a non-stick frying pan with a drop of oil.
  • Toss the warm beans and onion in the remaining mint mixture, and pile onto a platter or into individual shallow bowls with the lettuce and rocket. Top with the avocado, peaches and chicken and scatter over the mint. Serve with the potatoes while still warm.
