This is my favorite favorite chocolate dessert! Since you are only using very few ingredients, make sure they are of the best possible quality - it makes a difference, especially the chocolate you use. Serve with whipped cream for extra decadence.

¾ cup unsalted butter
14 ounces high quality dark chocolate (75 to 85% cocoa), chopped
7 large eggs, separated
⅞ cup sugar, divided
1 pinch salt
1 tablespoon confectioners' sugar for dusting

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Cut a square piece of parchment paper that is larger than the springform pan. Set it on the bottom of the springform pan and secure the ring on top; the paper will extend outside of the springform pan, which makes it easier to remove the torte after baking. Grease the sides of the springform pan.
  • Melt butter in a saucepan over medium heat. Remove from heat and stir in chocolate until melted. Allow to cool lightly.
  • Beat egg yolks and 1/2 the sugar in a bowl with an electric mixer until light and foamy, about 5 minutes. It is important to beat a lot of air into the egg yolks, so they almost triple in volume.
  • Fold lightly cooled chocolate mixture into the egg yolk mixture using a spatula.
  • Beat egg whites in a glass, metal, or ceramic bowl until foamy using the electric mixer on medium speed. Gradually add remaining sugar and salt, continuing to beat until stiff peaks form.
  • Stir 1/3 of the egg whites into the chocolate batter to thin it out. Then carefully fold in the remaining egg whites using a spatula. Immediately transfer batter into the prepared springform pan.
  • Bake in the preheated oven until torte is no longer glossy, 30 to 40 minutes. Be careful not to bake too long, otherwise it will get dry.
  • Cool on a wire rack until completely cool. Unmold carefully, since the torte breaks easily.

8 ounces semisweet chocolate, chopped
2 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 envelope unflavored gelatin
1/4 cup cold water
2 cups heavy whipping cream, whipped

Steps:

  • Set aside 1 tablespoon almonds for garnish. Chop remaining almonds; sprinkle into a greased 9-in. springform pan. In a microwave, melt chocolate; stir until smooth. Cool slightly. , In a large bowl, beat cream cheese and sugar until smooth. Meanwhile, in a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Cook and stir over low heat until gelatin is completely dissolved. Beat into cream cheese mixture. Beat in melted chocolate until smooth. Fold in whipped cream. , Pour into prepared pan. Steps:

  • Position rack in center of oven and preheat to 350°F. Butter and flour 9-inch-diameter springform pan with 2 3/4-inch-high sides. Shake out excess flour. Line bottom of pan with parchment paper; butter paper.
  • Combine 1/2 cup whole almonds and 2 tablespoons sugar in processor. Using on/off turns, grind nuts finely. Transfer mixture to large bowl. Combine remaining 1/2 cup whole almonds and vegetable oil in processor. Process until mixture is thick and pasty (consistency will be similar to that of peanut butter), scraping bowl frequently, about 3 minutes.
  • Stir butter and 1/2 cup whipping cream in heavy large saucepan over medium heat until butter melts and mixture simmers. Remove from heat. Add chocolate and whisk until smooth. Stir in both almond mixtures. Cool slightly.
  • Using electric mixer, beat egg whites in large bowl until soft peaks form. Gradually add 1/3 cup sugar and beat until stiff peaks form. Beat egg yolks in another large bowl until very pale and thick, about 5 minutes. Gradually beat chocolate mixture into egg yolks. Fold in egg whites in 3 additions.
  • Pour batter into prepared pan. Bake cake until sides crack and puff and tester inserted into center comes out with moist batter attached, about 35 minutes. Transfer cake to rack. Cool cake to room temperature, about 2 hours (center will fall slightly as cake cools.) (Can be prepared 4 days ahead. Cover and refrigerate.)
  • Beat chilled cream, amaretto and remaining 2 tablespoons sugar in large bowl until soft peaks form.
  • Run small sharp knife around pan sides to loosen cake. Release pan sides. Dust cake with powdered sugar. Sprinkle toasted almond slices around top edge of cake. Serve chilled or at room temperature with whipped cream.

2 tablespoons breadcrumbs
3/4 cup granulated sugar
3 large eggs, separated, plus 3 egg yolks
Grated zest of 1 orange
1 tablespoon dark rum
1/2 teaspoon salt
Confectioners' sugar, for garnish
Whipped cream, for garnish (optional)

Steps:

  • Preheat the oven to 350 degrees. Toast the almonds on a baking sheet until lightly golden, 6 to 7 minutes. Cool slightly, then pulse in a food processor until finely ground, but not pasty.
  • Melt 12 tablespoons butter and the chocolate in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Stir until the chocolate is smooth, then remove from the heat and cool slightly. Grease the bottom and sides of a 9-inch springform pan with butter and coat with the breadcrumbs, tapping out the excess.
  • Set aside 2 tablespoons granulated sugar. Combine the 6 egg yolks and the remaining sugar in a stand mixer and beat with the paddle attachment on medium-high until thick and pale, about 3 minutes. Add the orange zest, rum and salt, then beat in the melted chocolate until smooth. Mix in the ground almonds until just combined.
  • In a clean bowl, beat the 3 egg whites with a mixer until foamy. Gradually beat in the reserved 2 tablespoons granulated sugar on high speed until almost stiff. Stir one-third of the whites into the chocolate batter, then gently fold in the rest. Spread the batter in the prepared pan and bake until the top is firm and cracked (a toothpick inserted into the cake will be fudgy), 35 to 40 minutes. Cool on a rack 10 minutes, then run a knife around the edge of the pan and remove the ring. Serve warm or at room temperature. Garnish with confectioners' sugar and whipped cream, if desired.

  • Preheat oven to 350°F. Butter 9-inch-diameter springform pan with 2 3/4-inch- high sides. Combine chocolate, almonds and 1 cup sugar in processor. Process until all ingredients are very finely chopped and mixture appears grainy. Using electric mixer, beat yolks and vanilla in large bowl until pale yellow and thickened, about 3 minutes. Add chocolate mixture to yolk mixture and fold together (mixture will be very thick). Using mixer fitted with clean beaters, beat egg whites and cream of tartar in another large bowl to stiff peaks. Fold whites into batter in 3 additions.
  • Pour batter into cake pan. Bake until top is golden and tester inserted into center comes out clean, about 45 minutes. Transfer cake to rack and cool. (Can be made 1 day ahead. Cover and let stand at room temperature.) Run knife around pan sides to loosen cake. Release pan sides. Transfer cake to platter. Sift powdered sugar over cake. Top with chocolate curls, if desired. Serve with ice cream.

1 (12 ounce) bag bittersweet chocolate chips
1 teaspoon instant espresso powder
1/4 teaspoon table salt
1/3 cup almond liqueur or 1/3 cup cold brewed coffee
2 teaspoons almond extract
6 eggs
1/2 cup heavy cream
3/4 cup bittersweet chocolate chips, 4 oz
toasted sliced almonds
fresh strawberries

Steps:

  • Preheat oven to 325. Coat a 9 x 2 inch round cake pan with cooking spray. Line with parchment paper cut to fit into bottom of pan; coat with nonstick spray.
  • Bring water and sugar for the torte to a boil in a pan to dissolve sugar; remove from heat. Add butter, 1 bag of chocolate chips, espresso powder, and salt. Let sit 2 minutes, then stir until smooth. Whisk in liqueur and almond extract.
  • Whisk eggs until whites and yolks are mixed, then whisk into chocolate mixture.
  • Pour batter into prepared cake pan,and place cake pan inside a roasting pan. Add warm water to roasting pan halfway up the outside of the cake pan. Bake torte until puffed and soft to the touch, 40 to 45 minutes. Remove roasting pan from oven, then remove the cake pan to a cooling rack. Let cool 1 hour.
  • Run a paring knife around inside of the cake pan; invert onto a platter. Peel off parchment; cool completely or chill until ready to serve. Bring to room temperature before serving.
  • Before serving, heat cream for the ganache in a microwave safe measuring cup in a microwave on high until boiling, 1 to 2 minutes. Add 3/4 cup chocolate chips and let sit 2 minutes, then stir until smooth. Cool Ganache 2 to 3 minutes, then spread over top and down the sides of torte. Sprinkle top with almonds. Dip a knife into hot water and wipe dry for each slice. Serve cake with strawberries.
  • Chill any leftover cake.

½ teaspoon unsweetened cocoa powder for dusting, or as needed
2 (8 ounce) packages semi-sweet chocolate squares, coarsely chopped
½ cup butter
5 large eggs, separated
1 tablespoon vanilla extract
¼ cup white sugar
¼ cup chocolate chips
¼ cup crushed almonds
1 teaspoon confectioners' sugar for dusting, or as needed
½ teaspoon unsweetened cocoa powder for dusting, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Grease a 9-inch springform pan and dust with 1/2 teaspoon unsweetened cocoa powder.
  • Melt chopped chocolate squares and butter in a heavy saucepan over low heat, stirring until smooth, 5 to 10 minutes.
  • Whisk egg yolks and vanilla extract together in a large bowl.
  • Gradually whisk chocolate and butter mixture into egg yolk mixture until well blended.
  • Beat egg whites in a separate bowl with an electric mixer on high speed until soft peaks form. Gradually beat sugar into egg whites until sugar dissolves and egg whites hold stiff peaks.

8 ounces unsalted butter (2 sticks)
2 tablespoons vegetable oil
8 eggs, separated

1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Position oven rack 1/3 up from the bottom of the oven; preheat to 300°.
  • Butter a 10-inch Bundt pan; then sprinkle granulated sugar all over the pan; shake the pan to coat it thoroughly with sugar, and invert it over a piece of paper and tap to shake out excess.
  • Then sprinkle 1-2 teaspoons of sugar evenly in the bottom of the pan; set aside.
  • Coarsely chop the semisweet chocolate and place in the top of a large double boiler over hot water on medium heat.
  • Cut up the butter, and add it and the oil to the chocolate; cover and let cook until almost completely melted.
  • Then stir, or whisk, until completely melted and smooth; remove from the hot water.
  • In a bowl, stir the yolks a bit with a wire whisk just to mix.
  • Then gradually, in a few additions, whisk about half of the hot chocolate mixture into the yolks, and then, off the heat, add the yolks to the remaining hot chocolate mixture and mix together (the mixture will thicken a bit as the heat from the chocolate cooks the eggs).
  • Add in the sugar and vanilla; stir to mix; set aside.
  • In the large bowl of an electric mixer, add the salt to the egg whites; beat until the whites hold a point but are not stiff or dry.
  • Fold a few large spoonfuls of the whites into the chocolate mixture.
  • Then add the chocolate mixture to the whites and fold together gently only until incorporated.
  • Gently turn the mixture into the prepared pan.
  • Bake for 2 ¼ hours; during baking the cake will rise and then sink; it will sink more in the middle than on the edges; that is as it should be.
  • Remove from the oven and without waiting, cover the cake with an inverted serving plate.
  • Hold the pan and the plate firmly together, and turn them over.
  • The sugar coating in the pan forms a crust and the cake will slide out of the pan easily.
  • Serve while still hot; if desired, cover the top of the cake generously with powdered sugar, sprinkling it on through a fine strainer held over the cake; brush excess sugar off the plate.
  • *When cutting the cake it will crumble a bit as you cut through the bottom crisp crust; don't try to cut thin slices; do try to cut with a serrated knife.
  • *May top with chilled whipped cream.

1 cup blanched whole almond (or unblanched)
7 ounces good quality unsweetened chocolate, roughly chopped
1 cup sugar
1/8 teaspoon salt
7 large egg whites (1 cup)
1/4 teaspoon cream of tartar
powdered sugar (or unsweetened cocoa powder for dusting)
sweetened whipped cream, for serving

Steps:

  • Position a rack in the lower third of the oven and preheat to 350 degrees. Grease the sides of the springform pan and line the bottom with parchment paper.
  • Combine the almonds, chocolate, 1/2 cup of the sugar, and the salt in a food processor and pulse until the almonds and chocolate are very finely chopped but not completely pulverized. Set aside.
  • Use a mixer and large bowl to beat the egg whites with cream of tartar until soft, moist peaks are formed. Gradually add the remaining 1/2 cup sugar and continue to beat until egg whites are stiff but not dry. Add one third of the nut mixture to the egg whites and fold in with a large rubber spatula until nearly incorporated. Fold in half of the remaining nuts, then fold in the rest of the nuts.
  • Scrape the batter into the prepared pan and spread it evenly. Bake until the torte has risen and is golden brown on top and a toothpick inserted in the center of the cake comes out clean, or with just a little melted chocolate, approx 25-30 minutes.
  • Set the pan on a rack to cool for 10 minutes. Remove the sides of the pan and invert the cake onto the rack. Remove the bottom of the pan and then the parchment liner. Turn the cake right side up and cool completely. Cover or wrap tightly, and store for up to 3 days at room temperature.
  • To serve, transfer cake to a serving plate. Dust with powdered sugar or cocoa powder and serve slices with a dollop of whipped cream, if desired.
