1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 cups semisweet chocolate chips
1 cup coarsely chopped nuts, if desired

Steps:

  • Heat oven to 375°F. In small bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.
  • Beat in egg and vanilla until smooth. Stir in flour mixture just until blended (dough will be stiff). Stir in chocolate chips and nuts.
  • Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 8 to 10 minutes or until light brown (centers will be soft). Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store covered in airtight container.

200g softened butter
300g soft brown sugar
2 tsp vanilla extract
2 eggs
300g self raising flour
80g cocoa powder
1 tsp baking powder
300g choc chips

Steps:

  • preheat oven to 180 c/ gas 4
  • cream butter and sugar until light and fluffy, then beat in vanilla extract and eggs
  • in a separate bowl sift flour, cocoa and baking powder together
  • add flour mix to the creamed mix in stages( a third at a time) mix well. fold in choc chips until just combined.
  • spoon a tablespoon of the mixture on to a baking tray and just let it drop off the spoon, repeat until you have used up all the cookie mixture.
  • bake in preheated oven for 12 minutes, when you remove the cookies from the oven they will still be soft, leave to cool completely on the baking tray, where they will continue to cook slightly,when completely cold move to a cooling rack. then enjoy Mmmmmmmm.

125 g golden caster sugar
1 large free-range egg
½ teaspoon vanilla extract
200 g self-raising flour
1 pinch of fine sea salt
100 g quality chocolate, (use a mixture of milk and dark, if you like)

Steps:

  • Preheat the oven to 170ºC/325ºF/gas 3. Line two baking sheets with greaseproof paper.
  • Beat the butter and sugar in a large bowl until pale and creamy. Crack in the egg, add the vanilla and mix well. Sift in and fold through the flour and salt. Roughly chop and stir in the chocolate.
  • Roll tablespoons of the dough into balls and place onto the lined trays. Cover and chill in the fridge for 15 minutes.
  • Flatten the balls slightly with your fingers, then place in the hot oven for 10 to 12 minutes, or until lightly golden (make sure you don't overdo them - the chewier the better). Leave to cool completely, then serve with a glass of cold milk.

3/4 cup packed dark brown sugar
3/4 cup sugar
2 large eggs

Steps:

  • Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
  • Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.

  • For a Rocky Road Bar:
  • Lightly butter a 9 by 13-inch baking pan. Make the batter as per cookie recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Spread batter in prepared pan. Bake until the edges are light brown and the batter sets, about 45 minutes. Cool slightly and cover surface with 4 cups marshmallows and 1 cup chocolate chips. Broil at least 8 inches from the heat until marshmallows turn golden brown, about 2 minutes. (Keep an eye on the marshmallows, and turn the pan frequently--they go from golden to char in a wink.) This is one of my favorite chocolate chip cookie recipes. I first tried them in my college public speaking class where students had to give a demonstration speech. A student demonstrated this cookie recipe and blew our minds because of the secret ingredient. Well, the secret is that they have chickpeas in them. You can't taste them but it provides a nice fluffiness and lends itself to a more filling cookie along with oats. Now the chickpeas don't replace any of the other typical ingredients in a cookie it simply adds more fiber and protein. When I make these cookies, I tell everybody to try them before I tell them what's the special ingredient is, everyone seems to be pretty blown away when they find out there are chickpeas in them. You can tell the texture is a bit different, but you can't really tell why. These chocolate chip cookies really are more like an oatmeal cookie meets chocolate chip cookie with some chickpeas just thrown in there.

  • Scoop with a tablespoon and a half (1 inch) ice cream scoop onto a baking sheet, spacing the cookies about 1 inch apart.

These healthy chocolate chip cookies are thick, chewy, and contain no butter! This low sugar, easy recipe satisfies any sweet tooth!

1/3 cup melted coconut oil* (cooled to room temperature (measure when it is liquid!))
1/4 cup unsweetened applesauce
1/4 cup dark brown sugar
3 tablespoons granulated sugar
1 tablespoon pure vanilla extract
1 large egg (at room temperature)
1 ¼ cups white whole wheat flour or regular whole wheat flour**
1/2 teaspoon baking soda***
1/2 teaspoon ground cinnamon
¼ teaspoon kosher salt
1/2 cup dark chocolate chips (plus additional for baking)

Steps:

  • In a large bowl, whisk together the coconut oil, applesauce, brown sugar, granulated sugar, and vanilla extract. Then, whisk in the egg, stopping as soon as it is blended.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Add the dry ingredients to the wet ingredients. With a rubber spatula, stir to combine, stopping as soon as the dry ingredients disappear. The dough will seem very stiff and dry at first. Use the spatula to gently push and "smush" the dough and stir and fold as needed. It will come together.
  • Fold in the chocolate chips. Chill the dough for at least 1 hour, or press plastic over the top and chill for up to 2 days.
  • When ready to bake, preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • With a cookie scoop or spoon, portion the dough, then use your hands to roll into balls that are 1 ½-inches in diameter (you should have 18 total). Arrange on the baking sheet, leaving at least one inch between each. Place any uncooked dough balls that do not fit on the sheet in the refrigerator to continue chilling while the first batch bakes.
  • Bake for the cookies for 8 to 9 minutes, until very lightly browned around the edges and feel dry on the sides and top when lightly touched. They will still appear underdone in the centers. Do not over bake or the cookies will be dry. The cookies will not spread much as they bake.
  • Place the baking sheet on a wire rack and let the cookies cool on the sheet for 2 minutes. Carefully remove the cookies to the rack to finish cooling completely. The cookies will be fragile at first but will firm up and their texture will improve as they cool. Repeat with the remaining dough balls, cooling the sheet completely between batches. Enjoy!

I coach young kids in running and to encourage a young girl I told her I would make her cookies. She wanted a cookie with sprinkles, M&Ms®, and chocolate chips and this is what I came up with. The kids loved them so much I make them whenever they set a personal record.

¾ cup butter, at room temperature
¾ cup light brown sugar
½ cup white sugar
1 large egg
1 large egg yolk
2 teaspoons pure vanilla bean paste
2 ¼ cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
½ teaspoon salt
½ cup mini candy-coated milk chocolate (such as M&M's®)
½ cup chocolate chips
¼ cup multicolored candy sprinkles

Steps:

  • Cream together butter, brown sugar, and white sugar in a large bowl with an electric mixer until fluffy. Add egg, egg yolk, and vanilla paste; beat until well incorporated.
  • Add flour, cornstarch, baking soda, and salt and mix until a dough has formed. Stir in mini M&Ms, chocolate chips, and sprinkles. Cover dough and refrigerate for 6 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Drop cookie dough by rounded tablespoon onto the baking sheet using a cookie scoop. If desired press in extra sprinkles and/or mini M&Ms on top of the cookie dough.
  • Bake in the preheated oven until cookies are starting to brown at the edges, 12 to 14 minutes. Transfer to a wire rack and allow to cool.
