Steps:
- Melt the butter in a large pan over medium-low heat. Once melted, add the marshmallows. Stir the mixture until the marshmallows are completely melted. Stir in the peanut butter and vanilla.
- Remove from heat, then immediately fold in the cereal. Make sure each piece of cereal is coated with the peanut butter/marshmallow mixture.
- Transfer mixture to 9 by 13-inch baking pan that has been lined with parchment paper and sprayed with nonstick spray. Gently press the mixture into the pan (lightly spray your hands with non-stick cooking spray to avoid the mixture sticking to your hands). Don't pack it in too hard.
- Put the chocolate chips in a medium-sized heatproof bowl. Microwave for 30-second intervals, stirring in between each interval. When they are almost melted, remove and stir until smooth. Pour the melted chocolate over the mixture and let cool to harden.
- Allow treats to set for about an hour at room temperature. Lift the Rice Krispie Treats out of the pan using the parchment paper. Cut into squares.
- Cover and store leftover treats at room temperature for up to 3 days. To store, place in layers between sheets of parchment or wax paper.

- Line a 13 x 9 inch baking pan with foil. Lightly spray the foil with vegetable spray.
- Mix sugar and corn syrup in 3 quart sauce pan until mixture boils.
- Remove from heat. Stir in peanut butter; mix well until melted.
- Add Rice Krispies, stirring until all are coated.
- Add 1 cup of mini chocolate chips and stir to distribute throughout. (Don't worry if they melt).
- Press into pan. Sprinkle remaining cup of chocolate chips over the top and press down slightly.
- Cool. Lift foil out of pan and cut into squares.
- I have found a pizza cutter works great for cutting them.

- In a large saucepan melt the butter, mini marshmallows and peanut butter together over low heat while stirring gently.
- Once melted, remove from the heat and stir in the Rice Krispies.

- To make the bottom layer: Heat a medium-sized saucepan under medium-low heat. Add honey and peanut butter, and mix well. Cook for about 2 minutes, stirring constantly until sugar dissolves. Remove the pan from heat and stir in the cereal, wheat germ or flax seeds, oats, and dark cocoa powder until well combined. Transfer the mixture into a square baking pan (8-by 8-inch or 9-by-9-inch) lined with parchment paper, press firmly. To make the middle layer: Add the peanut butter into a medium bowl. Process the coconut flakes in a food processor until finely ground. Transfer to the bowl with peanut butter, stir with a wooden spoon until well mixed. - Prepare a 9X13 baking dish by lining it with parchment paper, leaving some overhang on two sides. Grease the parchment paper and the remainder of the exposed sides of the pan with a neutral tasting oil (such as avocado or grape seed oil). Set the prepared pan aside. Also at this time measure all of your ingredients and have them ready, this recipe moves fast.
- To a medium sized sauce pot add the coconut oil, salt, honey (or agave nectar), and peanut butter in the sauce pot. Turn on the heat to medium low and stir just until everything is melted and well combined. Add the chocolate and stir until all the chocolate is melted and well combined. Remove from the heat.
- Once off the heat immediately stir in the rice crispy cereal until all the cereal is well coated.
- Transfer the mixture to the prepared baking dish. Use a spatula to evenly distribute the mixture into the pan so that it's in a smooth layer. Press gently, just so that everything is well compacted.
- Allow the pan to cool at room temp for 15 minutes. Then pop it in the freezer for 15 minutes, or just until everything is firm.
- Run a butter knife around the edges of the puffed rice treat to loosen it. Use the parchment paper tabs to help pull the entire thing out of the pan. Use a sharp knife to cut into squares.
- Enjoy immediately or store in an air tight container at room temp. If you kitchen is too hot you might want to pop them in the freezer to firm up for about 10 minutes, before eating them - however, you don't want to store them in the fridge otherwise the cereal might get soggy.

These chocolate peanut butter crispy bars are like modern-day scotcheroos! This recipe is easy to make with wholesome pantry ingredients, and it's naturally sweetened with honey instead of corn syrup. Keep in mind that these no-bake treats require 2 hours in the refrigerator to set. Recipe yields 16 small treats from one 8-inch square pan (or double the recipe to fill a 9 by 13-inch pan).

- Line an 8-inch square baking dish with a strip of parchment paper, cut to fit neatly across the base and up opposite sides. In a large mixing bowl, combine the brown rice crisps and 1 cup of the chopped pecans (reserve the rest for sprinkling on top). Set both aside.
- In a medium saucepan, combine the peanut butter and honey. Warm the mixture over medium-low heat, stirring often, until it's steaming or you catch a bubble or two forming on the bottom, about 5 minutes. (We don't want this mixture to come to a boil or the peanut butter could scorch.)
- Pour the warm mixture into the bowl of rice crisps. Using a rubber or silicone spatula, stir until the mixture is completely combined. Transfer it all to the lined baking dish. Press down with the spatula to spread it fairly evenly, then switch to a large, sturdy glass with a flat bottom (maybe a working jar or mason jar or what-have-you) and press down firmly all over, including the corners. You really want to pack it down (it's ok if you hear some crunching noises). Lastly, use your hands to ensure that it's evenly compacted.
- Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring after each one. Don't overdo it. The chocolate is done when it's about 90% melted-keep stirring off the heat and the pieces should completely dissolve. (Alternately, you can use melt it in a heat-proof bowl set over a saucepan of gently simmering water.)
- Pour the melted chocolate over the peanut butter-crispy mixture. Use a clean spatula to spread it evenly all over. Make some pretty chocolate swooshes if you'd like. Sprinkle the remaining pecans on top, followed by the salt.
- Place the baking dish in the refrigerator and chill for at least 2 hours, or up to a day. To slice, carefully grab both sides of the parchment paper and lift it out of the baking dish. Use a sharp chef's knife to make 4 even columns and 4 even rows-to minimize the risk of cracking the chocolate, carefully apply even pressure from above the knife to press straight down, rather than sawing from one edge across.
- These bars will keep well at room temperature for up to 1 week, or for several months in the freezer. Store in an air-tight container either way.

- Pour the rice cereal and chopped peanuts (if using) in a large bowl; set aside.
- In a heavy-bottomed saucepan combine the light corn syrup and white sugar; bring to a boil; continue to boil for 1 minute.

Set aside.In a one-quart saucepan add chocolate and butterscotch chips, and melt over low heat stirring constantly. Once melted, spread evenly over cereal mixture.Sprinkle chips on top for extra chocolatey goodness.Let stand until firm. Cut into small squares or desired size.
